MEXICAN You don’t need to speak Spanish to love Mexican food. This sector has been growing for decades and has climbed to No. 3 in takeout and delivery. We love our nachos, chips and salsa, burritos, tacos, gorditas, enchiladas, fajitas, soups and chilies and everything holy moly guacamole! And, you’ll find these dishes on menus in Mexican restaurants and nonMexican restaurants alike. While it’s fun to dine in Mexican restaurants, many with colorful decors and Mexican music, takeout and delivery can be just as fun in terms of tasting very flavorful and often spicy and fresh food. Mexican has also branched out to breakfast with the popularity of breakfast burritos and egg and sausage tacos, to mention a few. And let’s not forget desserts such as yummy tres leches cake, churros, flan and puddings. The good news about Mexican food is it travels well. Tortillas are very forgiving and many dishes have a mix of ingredients that can be combined. That said you want your menu items to arrive at their destination as close to how they arrive at the table. Replicating sizzling fajitas as a take out item is problematic and as such may not present as well as other items in your takeout menu. You want not include this on your to-go menu. As with all foods, keep cool things cool and hot things hot.
