Possibly the best of Malvern's cuisine... A little over two years ago Matt Foley (aged 18) started work at Pepper & Oz as head pot washer. Since then he's been to music college and trained under Malvern's finest... We interview the new Chef at Pepper & Oz, Matt Foley, who at 21 takes over the reins. He explains how his training under Malvern's top chefs has led to his new menus combining the best of his learning to date:

Q: You're very young to take over the kitchen in such a renowned restaurant, how did it feel to be given the responsibility? Matt: I felt a mixture of being flattered, excited and terrified in one emotional cocktail, but having worked for many of Malvern's top chef's I felt ready for the challenge. Q: So what exactly have you learnt from each? Matt: Each is passionate about what they do and the main points I've learnt from each are summarised below.

Matt has worked under the following chefs, whose influence he describes: "This is my kitchen and my food.
