Opportunity Knocks ast year around this time, at a holiday party in New York, billionaire investor and philanthropist Ronald O. Perelman surprised attendees by announcing donations of $25,000 apiece to several small charitable organizations. The surprise wasn’t in the amount; it was in the direction. Perelman— the nation’s twenty-sixth largest donor, according to the Chronicle of Philanthropy, having given $63.5 million to worthy causes in 2008—usually makes headlines for large contributions to large organizations.

His sentiment was obvious: The big contributions would continue, he promised, but there are many opportunities to make an impact through a greater number of smaller contributions to smaller organizations, where the cash infusion will have proportionately greater effect.

The uncertain economy has affected everyone to some degree, but charities really have felt the pinch, especially on the local level. If you’ve looked at the social calendar for the next several months, you’ve probably noticed some superficial evidence—the charity gala season isn’t quite as busy as it was in past years. Many nonprofits are scaling back to focus on the core components of their operations, and some formal affairs have been deemed “not essential.”

To be sure, galas are not the reason why charitable organizations exist, but they are useful—and, yes, enjoyable—ways to generate contributions and raise awareness for a good cause. Right now, however, these organizations are facing bigger challenges than deciding themes and menus.

And this is where opportunity lies for each of us.

Our personal circumstances permit us to support worthy causes, and, believe me, there are plenty of them out there. And while it’s entirely possible that the prevailing conditions may preclude grand gestures right now, it is an excellent time to take a page from Perelman’s handbook and find a few local organizations that will most benefit from your direct assistance—whether it’s through your financial means, your leadership talents, your business connections, or your time.

If you don’t yet have a favorite cause, let me direct your attention to the annual Palm Beach Charity Register, from the editors of this magazine. It is available this month on select newsstands or through our website (palmbeachillustrated.com), and it offers excellent insight into the local organizations that are working to improve the community.

I’ve said it before, but I’ll say it again: It is profoundly rewarding to see the direct effects of one’s own generosity, and that may be more true today than ever before.

Creative Process ince we introduced “The Muses,” our annual celebration of Palm Beach women who inspire, three years ago, the feature has taken on a life of its own. At parties and luncheons, I am constantly asked about how our subjects are chosen, and what it takes to become a Muse.

The answer is simple: A Muse need possess the qualities we admire—strength, personal achievement, commitment to family and community, an original sense of style, and beauty that wells up from within. This year’s Muses—Tracy Smith, Darcie Kassewitz, Mary Freitas and Tiffany Cloutier—have all these qualities, and then some.

Conveying each lady’s individuality onto the printed page is no easy task. It is a months-long process that begins with detailed conceptualization by our creative team, and a lot of logistical back and forth with our community partners—in this case, Neiman Marcus, Palm Beach. Every aspect of the shoot, from the set design to the wardrobe styling, is meticulously planned and skillfully executed. But all the effort is worth it when we see our subjects shine. To see the results for yourself, turn to page 72.

Vision and planning, of course, goes into all of our editorial content. In “Motion Pictures” (page 56), we have conceptualized a cinematic production full of energy and movement. Photographer Rob Adamo captures, in lights and motion, the mood of fashion from the fall and resort collections. It was fun to produce, and that comes across on the pages.

Victoria Amory, our go-to person for all things entertaining, has conceived an original Thanksgiving celebration. In “A Place at the Table,” she combines holiday traditions with a sense of place that is unmistakably Palm Beach. No musician has ever dominated a musical genre like B.B. King. The 84-year-old blues guitarist and singer/songwriter began recording in the late 1940s, and hasn’t slowed down since. Throughout his storied career, he has released more than 50 albums, won 15 Grammy Awards and is still on the road performing close to 175 concerts a year. King, most notably known for his crossover hit “The Thrill Is Gone,” is opening a B.B. King’s Blues Club at CityPlace in downtown West Palm Beach this month.

■ WHEN YOU’RE NOT TOURING, WHERE IS HOME? Las Vegas is my home, but the road is also home to me. I’ve been traveling these roads all my life by bus. Of course, today I have all the comforts onboard, which we didn’t have when I started touring.

■ HOW DO YOU ENTERTAIN YOURSELF WHILE ON THE ROAD? I have a complete entertainment system on the bus, which enables me to do everything I enjoy. I work on my own music, as well as listen to all genres of music. Documentaries of nature, animals, reptiles and insects fascinate me, and I can spend hours watching them. It’s a learning process, and it is relaxing. I like to say a day without learning something new is a wasted day.

■ HOW DID YOU DECIDE ON WEST PALM BEACH AS THE NEXT B.B. KING’S BLUES CLUB LOCATION? The CEO of our clubs does the scouting on the locations. He has a knack for picking out just the right places to open the Blues Clubs. West Palm Beach is an area that has all types of people [and] a large tourist crowd because of the variety of attractions available. We will have all kinds of music at the club, offering something for everyone—not to mention we’ll have good food.

“My girlfriend Laurie referred me to you.

She called you her ‘resort doctor’ - the doctor of last resort. Do you think you could help me lose weight?”

In addition to my medical history forms, Sharon typed up a three-page description of what she’s tried in the past – a sure sign of ‘doctor fatigue’. I offered some hope, “Yes, I help many people to lose weight when other things haven’t worked. Perhaps we should go through what you’ve tried before.”

“What haven’t I tried you mean. I’ve done Weight Watchers and Jenny Craig of course. They were of no help and I even gained weight on Nutrisystem. I did those Medifast shakes for awhile but got bored, especially when my scale showed the same number each week. A diet clinic gave me appetite suppressants and I did lose 20 lbs, but then plateaued. I’m only 5’2”. I shouldn’t be weighing 170 lbs!”

“Anything else?”

“About five years ago I had a stomach stapling surgery. I lost weight for a little while, but …”

I interrupted, “Two-to-three years after the operation you started gaining the weight back.”

“Yes! How’d you know?”

“It’s pretty common, actually. 50% of all patients regain weight within 24 months of surgery and half of all bariatric surgery patients are still obese five years after having their operations. (Magro DO, et al. Longterm weight regain after gastric bypass: a 5-year prospective study. Obes Surg. 2008 Jun;18(6):648-51.) Because it is so lucrative, however, (bariatric surgery costs over $25,000, much of it not covered by insurance), you don’t hear about the poor long-term effectiveness of the operation.”

“So there’s no hope for me then?”

“I didn’t say that. There are causes for your weight gain besides eating too much. I see in your diet diary, you eat like a bird. A bird, not a vulture! So there obviously is something else preventing you from losing weight. Your metabolism must be running incredibly slow.”

“Wasn’t I already tested for that? The TSH test, isn’t that what they call it?”

“Unfortunately, the TSH test isn’t perfect. Doctors that rely too much upon it often miss a condition called CENTRAL HYPOTHYROIDISM. Partly in response to all the dieting you’ve done, your body is lowering its own metabolism to survive the famine.”

“So if I eat less, my body burns less calories to compensate, and that’s the reason why I don’t lose any weight?”

“Exactly! Now, besides dieting, there are other causes of Central Hypothyroidism. Gene variants in the thyroid hormone receptor or deiodinase enzymes, environmental pollutants, some medications, and even aging itself can all cause the TSH to be inaccurate. Let’s finish our physical exam.

“I see you have a delayed return phase of your ankle jerk reflex.

That’s a pretty good indicator of low thyroid function.”

“I can’t believe you’re finding all this. Most doctors stop at my neck and don’t examine me at all.”

Surely the St. Regis Punta Mita was designed with photographers in mind; everywhere the eye looks, there is a picture.

A night spent lingering over fine cuisine in a grove of softly lit palms is a precious experience.

During the day, if laying in the sun beside your private pool is not what you are in the mood for, maybe you’d prefer to be on one of the Jack Nicklaus signature golf courses. Or how about a cruise to the tiny Las Marietas Islands? “Everyone thinks you have to go to the Galapagos to see the bluefooted booby,” says guide Jose Moreno. He points to a volcanic rock on which stands a dignified sea bird with bright blue, slightly undignified feet. After snorkeling, beach-

ing and guacamole snacking, Moreno proudly regales us with the bay’s riches: porpoises, marlins and manta rays, sea turtles, humpback whales, 85 species of birds, 115 of fish. “There are pumas, jaguars and wild boars,” he says, pointing to mountains above the bay. “We drive to a dense tropical forest and take nature walks.”

The last morning dawns like the others—perfect temperature, perfect breeze, perfect ambience. A SHOW OF ELEGANCE Spending a weekend, Rolls-Royce-style, at the annual Pebble Beach Concours d’Elegance.

In life, there is nothing quite so decadent as being greeted at an airport by a man in a Rolls-Royce. Especially if the Rolls-Royce in question is a $400,000 midnight blue Phantom Coupé.

Whereas the big, four-door Phantom sedan may hint at corporate transportation, or, heaven forbid, hotel limousine, the two-door Coupé gently whispers, “This is yours, all yours.”

As you stroll nonchalantly toward this rolling piece of sculpture parked curbside, crowds parting like Moses commanding the Red Sea, it’s impossible not to sport a Julia Roberts-like grin at your sheer good fortune. As the saying goes, “Life is good.”

And it gets better. We’re gently wafting away from San Francisco International, heading south to the Monterey Peninsula.

I love this new Ghost. It looks much less ostentatious than the massive Phantom se-

Its more compact dimensions should also make it more of a driver’s car too.

the passionate Rolls enthusiast Michael Fux. The ponytailed, Miami-based sexagenarian, who made gazillions selling his memory foam mattress empire, has more than 100 cars in his collection, including a much-photographed all-yellow Phantom Drophead.

His latest purchase took a team of RollsRoyce artisans more than three months to create and reportedly cost more than $700,000. Its array of bespoke features includes a red carbon fiber dash, an all-white leather interior (including leather-covered floors), 10 coats of Sherwin-Williams and a crystal Flying Lady on the hood. “What can I say, I love creating cars that are unique. I challenged Rolls-Royce to build this car and they delivered,� Fux says.

After a Saturday spent wafting our blue Phantom CoupÊ down the spectacular Pacific Coast Highway to Big Sur, Sunday morning sees us at Pebble Beach perusing 200 of the world’s finest classics lined up on the famous fairway.

And celebs are everywhere. TV funnyman and consummate car guy Jay Leno is walking between the priceless Packards and Duesenbergs, while Jerry Seinfeld is over there polishing his Porsche racecar watched by the “Governator,� Arnold Schwarzenegger.

As for the fabled Best in Show award, it eventually goes to a massive, meticulously restored silver convertible built in 1937 by the now defunct German company Horsch. It’s probably worth more than $3 million Who knows, maybe in 70 years’ time we might just see a Phantom CoupÊ take Best in Show. It would certainly get my vote. ◆

The author loves to entertain on a grand scale, while keeping it simple and elegant.

Family and friends gathered around the table is perhaps the oldest form of socializing. It has been the custom from prehistoric times, where hunting and gathering in clans was essential for survival, to modern day, where the art of cooking and entertaining is a multibillion-dollar industry. The ritual of eating together is how traditions and family history are passed down to next generations.

I adore anything to do with feasts. Eating together and sitting at a long table with all my friends and children is heaven for me, and Thanksgiving has become one of my favorite yearly events.

This purely is an eating fest. Food is the topic weeks ahead of time, and the conversation for days later.

Friends that don’t usually cook agonize over what to make so I tend to invite them to my house (easier than frantically handing out recipes in the supermarket line on Thanksgiving eve). And so, I always find myself with a lot of last-minute guests. This year, anticipating a stampede of friends on Thanksgiving night, I am arranging one long table in the dining room—instead of the usual two rounds—and setting the table using pale colors. Celadon plates and mini tureens, silver and crystal, and pale green napkins combine to make a soothing palette perfect for a Palm Beach evening. Thanksgiving, and every feast for that matter, is about being hospitable and sharing our bounty. This is one of those days for which “the more the merrier” must have been invented.

Inspiration comes from odd places and, in this case, the orchids are the driving force for the rest of the palette. Pale yellow and pink, pale orange and goldenrod, and even some white ones with purple spots are arranged in small vases on the table. Bunch66

Everyone needs a seat and I need to pull chairs from everywhere in the house. Together they form an eclectic line around the table. It doesn’t matter to me that things are unmatched; I actually prefer it that way, as the importance of this day is not on the evenness of the chairs but the abundance of food and the quality of friendships.

I do love doing all the aspects of entertaining, but I don’t like creating more work than necessary, and if there is one piece of advice I can give my friends who don’t usually cook, it is this: Keep it Parmesan crisps with salmon caviar (left) is a favorite hors d’oeuvre. simple, doable and fun. This dinner is not about cooking for days on end; it is about lingering at the table and creating memories.

Hors d’oeuvres are served in the living room and consist of toasted baguettes rubbed with garlic and topped with a slice of tomato and jamón ibérico (pan con tomaca), one of my all-time favorites. Parmesan crisps with salmon caviar is one of my husband’s favorites and now is being requested by many of our friends.

Do include the children in entertaining at home—it is great training. They can pass the trays, get to talk to adults and generally keep out of trouble for an hour or so until we sit for dinner. They also learn the art of entertaining (inviting, that is) and will soon master the art of pouring and the very important knowledge of clearing, all important lessons in life.

The color palette was inspired by the flowers.

A traditional menu is essential to keep everyone happy; after all, this feast is about customs, rituals and goodness all around. The menu reflects seasonal produce and classic combinations but also takes into account the age disparity, likes and dislikes of the group, and the time that this cook is willing to spend in the kitchen.

This seasonal menu includes local Florida produce and reflects my criteria of cooking, eating and entertaining that is simple, easy to make and delicious. I also am adding the word “healthy” to my repertoire more and more as the benefits of cooking at home are becoming clearer.

I am serving squash and chestnut soup in ceramic boxes that I am using as individual covered soup bowls. I adore things that have multiple uses; these mini tureens also work to serve sauces on a buffet table or as decorations on the library shelves.

Everyone loves the main course. It is a classic: small Guinea hens roasted with lemon, sage and garlic served with fluffy mashed potatoes en croûte and an array of seasonal vegetables. I found these little zucchinis in a local market that I filled with ratatouille and cheese, and couldn’t resist roasting a whole bunch of Brussels sprouts with sea salt and olive oil.

old bread and homemade orange marmalade. In this recipe, the bread is soaked in a thin, very flavorful custard, then baked covered with the marmalade. I love it as is, but a dollop of whipped cream is a terrific addition.

Cooking does take effort and planning but the health benefits surpass the work. And if it is done with pleasure rather than dread, it becomes a source of inspiration and pride—not to mention a delightful way to treat family and friends on a special day. ◆

Tracy They say that if you love what you do, you never feel like you are working. That rings true for Tracy Smith, who has parlayed her personal passion into a business that has the fashion world buzzing. ¶ “I’ve always loved accessories,” she says. “I started collecting vintage jewelry and amassed quite a bit, including some amazing pieces.” ¶ Since her jewelry always turned the most fashionable heads, Tracy thought it would be smart to help women acquire the same special pieces. That’s when House of Lavande was conceived. It started as an online business four years ago, but when the jewels caught the eye of Harper’s Bazaar and Vogue editors, it quickly evolved. Now there is a flagship store in Palm Beach, and capsule collections are offered in New York City, London and Hong Kong. ¶ Though Lavande remains in hot demand by stylists and the fashionable set, Tracy keeps her life balanced. She and husband Matt enjoy traveling and spending summers in New York City with their son, 8, and daughter, 5. And she is involved in the community; her favorite causes are Make-A-Wish Foundation, Soles4Souls, the Nest Foundation and Boys & Girls Clubs of Palm Beach County.

Back story: Tracy is originally from Kenai, Alaska, where she spent the first 10 years of her life. She later moved to Atlanta, and attended the University of Georgia.

The accidental Palm Beacher: As a polo player in college, Tracy took a summer job working with polo ponies in Wellington, and has been here ever since.

Style sense: “I’m a mood dresser,” she says. She likes mixing high and low, so her look is never too precious or done up. Among her signature items: scarves and layered jewels, particularly 1920s and ’30s Czech crystal pieces.

In Vogue: Her jewelry first appeared in “Paris, Je T’aime,” Grace Coddington’s 1920sinspired spread for Vogue that was featured in The September Issue.

Mary Among the Palm Beach social elite, Mary Freitas is known for her megawatt smile, charming disposition, and ability to instantly make friends and connect people.

That’s probably due largely to her communications background. The granddaughter of broadcasting mogul Richard Fairbanks, founder of Fairbanks Communications, she admits that the spoken word is in her blood. ¶ She worked for Fairbanks-owned radio stations in high school and beyond, and later organized special events for WPTV. The latter was good training for the second act of her life, during which she has chaired umpteen charity events. This year, she is taking a little breather from the party circuit because she is a new mom—she and husband Mark recently welcomed a baby boy to their family, which already includes a 13-year-old son. They will, however, be among the host couples for the Ultimate Dinner Party and co-chair the Norton Museum of Art’s Bal des Arts. Mary also is honorary chair of the Old Bags Luncheon to benefit the Center for Family Services. ¶ Though Palm Beach is home, the Freitases spend Christmas in Greenwich, Connecticut, and summers in Hyannis Port.

Darcie Darcie Glazer Kassewitz has more facets than a brilliant-cut diamond.

She is an attorney, with a law degree from Suffolk University, and a former fashion designer. In the early stages of her career, she designed couture evening gowns under the label Darcie Glazer Couture, and had her own salon in Saks Fifth Avenue in New York City. ¶ The trouble was she was working around the clock. “I decided that, if I was going to work 24 hours a day, I would rather work for my family,” she says. The Glazer family owns the Tampa Bay Buccaneers and English soccer franchise Manchester United, among other holdings in various industries. ¶ Darcie now is president of the Glazer Family Foundation, which supports children and families in the Tampa Bay area. One of her main projects is the 2010 launch of the Glazer Children’s Museum, which the foundation supported with a lead gift. ¶ Though she no longer designs fashion, she continues to exercise her creative talents. She designed the interiors of Raymond James Stadium and the Bucs’ training facility, both in Tampa, and even helped design the Super Bowl XXXVII ring. ¶ Though her work keeps her engaged, she always makes quality time with her family a top priority. Not surprisingly, a favorite family activity is going to all the Bucs’ home games, and as many away games as possible.

Life in balance: Darcie’s fitness routine consists of running and Vinyasa yoga at Parasutra in Palm Beach.

Style signature: “There are no rules for me,” she says. “I mix it up, often pairing evening pieces with casual pieces, for day or night. I like pieces that are different, and I am really into jackets.”

Winning moment: Among her most memorable moments is the Buccaneers’ win over the Oakland Raiders in the 2003 Super Bowl.

Tiffany Helping people has been a theme in Tiffany Cloutier’s life for as long as she can remember. Though she earned a degree in graphic arts from the University of Cincinnati, she ultimately went back to school to become a registered nurse—just so she can help others. ¶ Since meeting George Cloutier, whom she married last New Year’s Eve, she has been helping people through her philanthropic endeavors. “George and I raised $1 million in our backyard over three summers,” she says, referring to their “Boogie on Low Beach,” a party at their Nantucket home to raise funds for Dana-Farber Cancer Institute. ¶ That’s the tip of the iceberg for Tiffany, who also is on the American Cancer Society board, the Heart Ball committee, and the host committee for the Ultimate Dinner Party. And the wheels are always turning: Now she is developing an idea to raise major funds for breast cancer awareness and research.

FIT FOR LIFE: Tiffany was an aerobics instructor during and after college. Her class nearly killed the University of Cincinnati baseball team. “The next day they couldn’t even swing their bats, they were so sore.”

Style sense: “I love the fashion of the 1950s and early ’60s, but also like sexy and edgy clothes that are still feminine.” Among her favorite designers: Alexander McQueen, Valentino and Versace.

Beauty bag: “Tammy Fender products are, by far, the best products I have ever used.”

“We’ve been giddy about having this amazing day together,” says Weingartner, designer and owner of Jordann Jewelry. Weingartner was married on May 9, and has been busy expanding her jewelry company. Her older sister, Weston, married a year ago this month and had a baby boy this past August. Koons received her MBA in finance from the University of Miami this May, got engaged in April and will marry May 2010.

“There’s so much going on in our lives that sometimes you have to stop,” says Koons, who is studying for her certified financial analyst test. “At Eau Spa, you can’t pull out your BlackBerry or be sidetracked by computers and televisions. It’s really nice to sit here, eat and talk, and that’s that.”

The Ritz-Carlton debuted the 42,000-square-foot Eau Spa in March of this year as part of the final phase in the hotel’s two-year renovation. The new $30-million retreat does not disappoint. and see, on both the male and female sides of the spa, including the openair Self-Centered Garden, the bath lounge where a water shower circle falls from the ceiling into a hot tub, the scrub and polish bar (guests concoct their own scrub of herbs, oils and sea salts), a relaxation lounge dubbed the “Eau Zone” where the infamous chocolate cupcakes are found, and 19 spa villas, some with outdoor gardens and tubs.

The spa journey begins in the lobby with the Wishing Well, where guests are encouraged to make a wish and set a candle afloat. The ladies then move to the Self-Centered Garden.

Dressed in white robes, they rest in the swinging basket chairs over a shallow pool of water. “This is heaven,” says Koons. The conversation returns to Koons’ recent graduation and her living in Miami, then on to Weston’s baby and Weingartner’s marriage. It’s the first time in a while the girlfriends have been able to reflect and bond over their life-changing events; then, the conversation turns goofy as they let their bodies and minds further unwind.

“When Holly was on her honeymoon in Hawaii, she bought a fertility necklace. She returned and was wearing it, and then the next month, she was pregnant,” says Weingartner.

“When I got married, she passed the necklace on to me. I’ve been wearing it and if it works, I’ll pass it on to Kathleen after she’s married.”

When growing up, Koons and Weingartner, who met at Palm Beach Day School in pre-K, idolized Weston with her cool clothes, Doc Martens and weird music. “Because of Holly, we were ahead of the curve,” says Koons.

“Holly did nothing wrong in my eyes,” adds Weingartner. “I always looked up to her.”

Despite Weingartner being five and a half years younger, Weston had no qualms with her little sister and friends tagging along. “There was never any sister rivalry. We were in different places,” explains Weston. “She was my fun little sister and had crazy friends that were always energetic and entertaining with personalities.”

The bonding continued when Weston attended New York University in New York City, where Koons and Weingartner visited her during school breaks. “I would take them around the city or we’d go shopping. I’d dress them up in little outfits, and sometimes we’d sneak into dance clubs,” says Weston. “Then I stayed in New York City and Kathleen went to NYU too, so we became very close. You get to a certain age in your twenties when age doesn’t matter anymore.”

The girls continue to reminisce about their golden days while late morning transitions into early afternoon. A miniature buffet of delectable snacks is laid out by the staff. Everything from a variety of salads, wraps and hummus to exotic cocktails and even a drink served in a pineapple looks and tastes phenomenal.

“It’s not that we don’t have to work at it but they are easy friendships,” says Weingartner. “Even though there is an age difference between us, Holly and I are best friends. It’s an even greater [relationship] because we’re sisters. With Kathleen, we’ve experienced a lot of great first memories together. It’s like a sister relationship too, because we can get mad at each other and can call each other out but by the end of the day, we’re friends again.”

The girls head indoors and settle into the inviting armchairs in the Eau Zone to recuperate from lunch and discuss beauty treatments. Koons decides on the bamboo massage, Weston picks the prenatal massage and Weingartner, the platinum and diamond facial.

“I love this room,” says Koons. “I like that if you [don’t] want to be all natural and drink cucumber water, you can drink your wine and eat your cupcakes and not feel bad about it because obviously other people want to do that too.”

After the treatments, Koons, Weingartner and Weston begin their descent back to the real world. “After we left, we all said that we felt like celebrities. The attention to detail and the treatments were heaven, and walking into the space was breathtaking,” says Weingartner. “We’ve been preoccupied with our private lives. It was great to come together and have a stress-free day, just the three of us, and not have to worry about what’s next or anything for the entire day. We put it all behind in the back of our minds and enjoyed each other.”

And that is exactly what Eau Spa is about. After all, “self indulgence is the only way to obtain what you desire,” Bolitho says. “You have to take your time and make it last.” ◆

MOTOWN SOUND It was 1964 when The Temptations hit the radio airwaves with “The Way You Do the Things You Do.” The Motown quintet’s smooth and delicate blend of voices accompanied by coordinated outfits and dance moves became a sensation. Over the next decades, The Temptations produced successful singles one after another such as “My Girl,” “Ain’t Too Proud to Beg,” “Papa Was a Rolling Stone” and “Treat Her Like a Lady,” and were inducted into the Rock and Roll Hall of Fame in 1989. The Festival of the Arts Boca is only four years old but it continues to deliver great caliber and variety. This year’s festival, scheduled for March 5-14, pays tribute to the artistry of Russian culture.

The festival introduces a new art to its lineup with American Ballet Theater principal dancers Irina Dvorovenko and Maxim Beloserkovsky. Dvorovenko is known for her attention to classical form with flawless technique and style, while her husband Beloserkovsky brings dignity and elegance to his roles.

Jazz returns with the Eldar Trio featuring jazz pianist Eldar Djangirov, a protégé who signed with Sony Classical at age 17.

Also worth mentioning is the literary program with authors Doris Kearns Goodwin and David Brooks. A well-known presidential historian, Goodwin won a 1995 Pulitzer Prize for her biography of Franklin and Eleanor Roosevelt, No Ordinary Time.

The booming cocktail culture has rediscovered and reinvented bitters.

Nonpotable bitters began as patent medicines, the most notable example being Angostura. This concoction of roots, bark and herbs was perfected in 1824 by a German doctor stationed in Angostura, Venezuela, and was originally intended to suppress fevers and nausea. It found its most noble function as the foundation and coloring for Pink Gin. Shortly afterward, Peychaud’s Bitters was invented by a native of Haiti who had settled in New Orleans. Created from a base of gentian, it became the foundation for the Sazerac cocktail, and was frequently used in Manhattans, Old Fashioneds and Whiskey Sours. Prior to Prohibition, in fact, it was hard to find a cocktail that did not contain bitters.

In their quest to bring back the classic cocktails, modern mixologists have stocked

their bars with a range of exotic, small-batch bitters. The Fee Brothers of Rochester, New York, make a complete product line (Peach, Mint, Lemon, Grapefruit, Orange and Whiskey Barrel Aged Bitters). The Bitter Truth, a German company best known for Celery, Lemon and Orange bitters, has recently agreed to distribute the products of Bittermens, an artisanal brand owned

by Avery and Janet Glasser; as a result, Bittermens Grapefruit and Xocolatl Mole will soon be available on the open market.

Regan’s Orange Bitters, made by cocktail guru Gary Regan, also is coming into general distribution.

Potable bitters have become the aperitif of choice in the United States, and have inspired bartenders in the country’s leading markets. It all began with Campari, which was invented by Gaspare Campari, a cutting-edge Milan mixologist of the 1860s.

dient of both the Negroni and Americano, and is frequently enjoyed with club soda.

While Americans tend to think of Amaro as a brand name, it’s actually an entire category of Italian bitters in a range of styles and flavors. Averna, first concocted by Salvatore Averna in 1868, has been described as sweet and thick, with a slight herbal bitterness. Amaro Montenegro is a specialty of Bologna, produced from 40 different herbs and popular as an after coffee drink. In fact, there are several dozen regional variations of Amaro in Italy, including Punt e Mes, a popular dark brown vermouth with a bitter sweetness.

Antonio Benedetto Carpano is generally credited for inventing vermouth in 1786, using the technique of infusing herbs and spices into wine. Today, the same parent company that makes Punt e Mes also produces Carpano Antica Formula, sometimes

called the world’s best red vermouth. Sweeter and more full-bodied than Punt e Mes, Carpano Antica has flavors of vanilla, orange rind, dried apricot and baking spices. While it can be used to make a terrific Negroni, purists prefer to drink it on the rocks.

Currently, the hottest bitter on the market is Fernet. In its various forms, this concoction of herbs and spices has become an underground sensation among bartenders, sommeliers and restaurant personnel in general. The bestknown version is Fernet-Branca; if you grew up in an Italian family, it’s likely that your grandmother gave you this black, bitter liquid when you had an upset stomach.

Consumption of Fernet-Branca probably is highest in Argentina, where reportedly 3

million cases are consumed each year, but parts of the United States are rapidly catching up. Jackson Cannon, bar manager at Eastern Standard Kitchen & Drinks in Boston, used 168 cases at his bar last year, and most popular urban lounges are not far behind.

Some drink it mixed with Coca-Cola, some consume it straight for its medicinal and energizing qualities, and some even enjoy it without their grandmother present. ◆

Can it be true that Gloria and Emilio Estefan are serving upscale Cuban cuisine in Vero Beach? What’s next—Norman Rockwell paints South Beach?

Improbable though it may sound, the Oriente restaurant in the Estefans’ Costa d’Este Beach Resort is dishing up some of the best Latin food in the area.

The hotel itself is airy and tropical, with a retro decor reminiscent of 1950s Havana. Framed by floor-toceiling windows, Oriente offers a view of the pool area stretching to the ocean. The kitchen is in the deft hands of Executive Chef David Rodriguez, a graduate of the Culinary Institute of America who honed his skills at restaurants owned by the Estefans in Miami.

Begin with Ceviche, pristine chunks of seafood marinated to perfection. Outstanding selections include the Camaron ($10), shrimps accented by a sweet and spicy chipotle sauce; Honduran ($10), featuring yellowtail snapper bathed in coconut and ginger; succulent lobster ($12), offset by flavors of coconut, crab and habanero chili. For those who prefer their fish sliced rather than diced, the range of Tiraditos ($10-$12) includes conch, tuna, baby octopus, tofu and hamachi.

A selection of savory tapas is available for those celebrating cocktail hour. Traditional dishes run the gamut from Ropa Vieja Empanadas to a sizzling platter of shrimp and chorizo with homemade sofrito. The Bacalaitos Cubanos ($9) are deep-fried, Cuban-style cod fritters, fluffy and spicy, accompanied by a pecan rémoulade.

When choosing an entrée, you’ll have a hard time passing up the Paella, available for one ($28) or two ($38) and brimming with shellfish, chicken, chorizo, fresh peas and rice. For an authentic experience, try one of the Cuban homestyle Completas, a main dish served with white rice, black beans and sweet plantains. The Vaca Frita ($24), or twice-cooked skirt steak, tastes like it just came off the barbecue. The meat is amazingly tender, rich, tasty and satisfying.

Bacalaitos Cubanos are cod fritters served up with a pecan rémoulade.

Seafood main dishes include guava glazed organic salmon ($24) and pan roasted scallops with serrano ham ($28), and are usually augmented by several daily specials. The Mojo Battered Soft Shell Crabs ($30) are brilliantly fresh and perfectly cooked, served with chipotle mashed potatoes and a combination of sautéed corn, tomatoes and peppers.

Among the dessert offerings are flourless chocolate Bombon Cake, several flans, and house made ice creams and sorbets.

The guava cobbler ($9) is a perfect way to conclude. Baked into a tart with a topping of buttered nuts, it is complemented by Mexican vanilla bean ice cream.

The interesting wine list includes close to 150 bottles, with a heavy emphasis on wine from the Americas, particular Chile, and other New World regions. The best complements to the food are found in the 20 or so

Oriente Selections, which hail from Spain, Chile and Argentina. A bottle of Paco Y Lola Albariño 2007 ($43) is bright, fresh and fruity, a nice accompaniment to the zesty cuisine.

The coed service staff is friendly, diligent and detail-oriented. Most of them have been on site since the restaurant’s opening last June, and know the nuances of the menu by heart. Management provides a pleasant reception, and circulates through the room to make sure that things are going smoothly.

The Oriente restaurant, as well as the resort that houses it, is a busy place at most times of the year. The pool area is packed on weekends, fueled by the DJ, bar and tapas menu. The clientele spans a range from international tourists to locals seeking a touch of the exotic; the hotel is a family destination, and it’s not unusual to see three generations dining together. ◆

Internationally known sculptor Esther Wertheimer explores the fluid sensation of movement with her slender, multicolored sculptures. Wertheimer, who has studios in Boca Raton and Canada, uses a process in which bronze is cast from a wax model. For color, the bronze is turned into a canvas by applying a bismuth sulfide solution with heat. Once dried, Wertheimer dabs powered pigment acids onto the bronze, also with heat.

PROJECT BOOK Books are more than words on paper. They inspire those who read them. Hibiscus Children’s Center volunteer Karla Preissman had that exact thought and created a fundraiser event.

The Little Auction That Could will benefit the center’s new Reef Library, which is used by children who reside at the Jensen Beach center that serves the needs of abused and neglected Treasure Coast children. Preissman contacted famous faces, from President Barack Obama to Alonzo Mourning, Tori Amos, Maya Angelou and Oprah Winfrey, to find out what childhood book had impacted their lives and to ask them to sign a copy of the book to be auctioned off. Almost 80 local, national and international celebrities participated.

An exhibit reception will be held on Nov. 5 at the Elliot Museum in Stuart, where the books will be on display until Nov. 29. An online silent bidding will be set up, but the most popular dozen books will be reserved, unveiled and auctioned at the Lyric Theatre in Stuart on Nov. 20. Author and columnist Carl Hiaasen will headline the event with comedian Dan Bakkedahl and Nicholas Basbanes, a rare book expert. Tickets to the auction cost $52. During the spring and fall, Nacho and his family return to Argentina for quality time, but every winter Nacho is in Palm Beach playing polo for the Black Watch team. “My wife is a professional photographer, and we both have a real passion for art, so we enjoy visiting all of the local art galleries,” says Nacho.
