Sweet & Spicy Meatballs with Wedged Potatoes 1 lb of ground beef 2 – 3 potatoes, wedged one kids handful of breadcrumbs or crumbled crackers one kids handful of chopped onion S & P 1/3 cup of strawberry jam ½ cup of ketchup 1 clove of garlic Toss the potatoes in salt and pepper and olive oil. Bake in the oven at a temperature of 350 degrees. In a medium size bowl, combine the meat, onions, and breadcrumbs. Add some S&P. I always sprinkle in a little oregano. **** KIDS: grab a small handful of meat mixture and roll together into a ping-pong size ball. In a sauté pan, drizzle olive oil and cook the meatballs. **** KIDS: measure out the strawberry jam & the ketchup In a saucepan over medium heat, add a drizzle of olive oil and 1 clove of garlic. Add strawberry jam and ketchup and lower the heat. To the taste, add a couple drops of Orange Juice to the mixture and S&P. Toss the cooked meatballs and make sure they are all covered! Serve with potatoes and a green salad too! This is a quick easy meal; you’ll have extra time You wont know what to do!!
Moroccan Chicken Salad For the Salad: Romaine lettuce, chopped 2 beets, boiled and peeled Small handful of dates, diced (hopefully there are some in your cupboard) 1 carrots, grated 1 egg, boiled and diced 1 avocado, diced couple almonds, toasted dried fruit, such as cranberries For the chicken: Chicken breast S&P Spices such as: cinnamon, cumin, and paprika Dressing: Champagne vinaigrette ****KIDS: cover the chicken with the spices, and bake in the oven. Cook the beets and egg. Let cool then dice. ****KIDS: Toss the salad with all the ingredients. You can either chop the chicken and place on top of the salad or serve whole chicken breasts on the side.
Cauliflower Crust Pizza (Taken from Pinterest! Find us on Pinterest at OutoftheBoxCollective for nightly dinner pictures!!) For the Crust: 1 head of cauliflower 1 egg 1 cup of mozzarella, grated* 1 tsp of oregano 1 clove of garlic, minced 1 tsp of onion salt Toppings: 2 TBS of olive oil 1 clove of garlic, minced handful of Parmesan or mozzarella, grated ricotta cheese handful of spinach, leaves only **** KIDS artichoke hearts, quarter * S&P Shred the cauliflower into small crumbles (like rice size) **** KIDS use a cheese grater to “shred” the cauliflower (watch out for tiny fingers getting too close to the box grater) You can use a food processor if you’d like, but you want crumbles NOT PUREE! You’ll need a total of 2 cups. Place the cauliflower crumble in a large bowl and microwave them (dry) for 8 minutes. Give the cauliflower a chance to cool. Prepare the crust: Preheat the oven to 450 degrees. Spray a cookie sheet or pizza pan with nonstick spray or olive oil. In a medium bowl, mix the cauliflower crumbles with the remaining crust ingredients.
****KIDS: Pat the â€œcrustâ€? into a 9 to 12-inch round on the prepared pan. Bake for 10-15 minutes. Remove the crust and turn the heat up to a broil. Prepare the pizza: ****KIDS: drizzle the olive oil and S&P around the crust. Sprinkle the garlic. Add the grated cheese, spinach leaves, artichoke hearts and spoon little balls of ricotta evenly around the pizza. (You can use a tomato sauce if you like) Sprinkle a little parm or mozz on top and bake in the oven for about 3-4 minutes. Let cool and cut into slices.
Home Style Ham and Potato Casserole with Panzanella Salad For the casserole: Potatoes, peeled and sliced thinly Onion, chopped 1 tbs of olive oil 1 ham steak, diced 2 cups of ricotta cheese 3 tablespoons of fresh rosemary Pepper 3 cups of milk 1 cup of Swiss cheese, grated* Preheat the oven to 375 degrees. Toss the potatoes and onions. Set aside. In a sautĂŠ pan over medium het, heat the oil and the ham. SautĂŠ the ham until heated through, about 2-3 minutes. **** KIDS: in a small bowl, mix together the ricotta cheese, rosemary and black pepper. Place half of the potato mixture in a baking pan. Top with ricotta cheese and ham strips. Cover with remaining potatoes. Pour the milk over the entire casserole. Bake for 1 hour or until the potatoes are soft and the sauce is thick and bubbly. **** KIDS: top with the grated cheese and bake for 10 more minutes or until the cheese melts.
For the Panzanella Salad: Â˝ red bread baguette, cubed and made into croutons 1 beet, boiled and diced, one red onion 1 avocado, diced 1 cucumber, seeded and diced 1 handful of parsley or basil* drizzle of olive oil For the bread, either cut into cubes and let it sit for a day. Toss all ingredients onto a small plate and drizzle with olive oil.
Spa Fruit Salad This is MY favorite sweet. It is so refreshing and tasty! Handful of strawberries, cut into bite size pieces 2 Bananas, sliced into half moons A few blueberries, whole Mint leaves, chopped Honey, drizzle Lemon, squeeze ANY other fruit you have lingering around In a bowl, toss together prepared fruit. Taking about a tablespoon of chopped mint, throw it in the mix. Drizzle honey and a squeeze of lemon. SO EASY!
Pan Fried Breaded Drum Fish Yellow Drum fish filets S & P 1/4 tsp cayenne pepper 1 cup flour 1 cup bread crumbs (use your Red Bread for crumbs!) 1 egg 1/3 cup milk or half and half 3/4 cup canola oil
**** KIDS: Season fish filets with salt, pepper and cayenne. In separate plates put the flour and breadcrumbs. In a wide bowl whisk one egg and the milk. Add the canola oil to a cast iron or heavy bottom sautĂŠ pan. The oil should be about a half inch deep in the pan. Heat to 350 degrees or test with a breadcrumb. If it turns brown within 10 seconds the oil is ready to fry! **** KIDS: Take the seasoned filets one at a time and dredge each filet in the flour (shake off excess flour). Then run it through the egg milk mixture, then through the breadcrumbs. When you put the filet in the breadcrumbs, be sure and pat as many crumbs as you can onto the filets. Add more bread crumbs if they are not sticking well. Fry the filets in the hot oil for about 3 minutes on each side, until golden brown. Be sure not to crowd the pan as this will lower the fry heat and make your fish soggy! Serve with a lemon wedge, over leafy greens.
