The intersection of Otaki Gorge Road and State Highway 1 will be reopened during the night of Wednesday 28 April 2021. A temporary speed limit of 30km/h will be in place initially while the new seal is bedded in and to allow motorists to adjust to the changes.

Work is being carried out to improve the functionality of this intersection to reduce congestion. Te Horo Beach residents are reminded of an alternative route to access State Highway 1 via Pukenamu Road.

250g (8oz) dark chocolate 250g (8oz) stoned dates 6 egg whites 1 cup sugar Heat the oven to 180ºC. Butter a spring form tin. Chop the almonds, chocolate and dates into chunky pieces. Beat the eg whites until stiff. Continue beating while gradually adding the sugar. Fold the almonds, chocolate and dates into the meringue. Put into the tin and bake for 45 mins. Cool with the oven door slightly open. Turn out, cover in plastic wrap and refrigerate overnight. Top with whipped cream to serve.

The recipe in my book Take 5 and Cook —The Dinner Book calls for almonds but you could easily use walnuts, or in this case I used 250g of crushed wine biscuits which makes it very affordable. I used my food processor to chop the biscuits (not too fine), removed that, then chopped the chocolate and dates. I made a meringue with the egg whites and sugar, folded everything together and popped it in the oven. This great recipe has the potential of being one of your favourites. If you wanted to add a bit more flourish and serve it as a dessert you could melt some chocolate in boiling water to make a sauce to serve with it. It's simple, it looks great and it's delicious — very Take 5 and Cook.
