Trends in cuisine may come and go, but when it comes to food preparation, speed, convenience, and savings never go out of style. With this in mind, Panasonic has seriously upped the game in food prep with its Sonic Solution series. The Sonic Chef and Sonic Steamer are uniquely designed as hard-working, compact, affordable appliances for next-level efficiencies that inspire chefs to innovate, free from many of the constraints of traditional kitchens. The 1200-watt Sonic Chef Commercial high-speed oven combines three cooking technologies – high-speed convection, twin “inverter” microwave, and broil – all in a compact, ventless, stackable design that simply plugs in. The Sonic Steamer oven steams two full-size 4”-deep pans easily and precisely, and also runs by simply plugging in – no vents, hood, or water line required. Taking its place as your new prep cook, this portable, programmable steamer comes with 16-memory capability, five power levels, and three-stage cooking, with two top and two bottom heating elements. The specs are impressive, but these appliances reveal their true beauty and versatility when you see them in action. The Unseen Benefits of Hand Dryers Over Paper Towels By William Gagnon, Vice President, Excel Dryer Inc.

With customers more concerned than ever about hand washing, convenience retailers are having to spend more on related costs: soap and water, as well as hand dryers or paper towels. While both drying methods are recognized as safe and hygienic, paper comes with an array of challenges: • Limited supply. If paper towels are unavailable, hands can’t be dried at all, and wet hands have been shown to be 1,000 times more likely to transfer germs than dry hands. • Hygiene. Paper towels can be left in damp piles on countertops, across the floor, spilling out of trash cans and clogging up toilets, creating breeding grounds

for dangerous bacteria. • Production. Paper towels originate from trees, then are produced through a wasteful chemical or mechanical pulping process. In fact, one ton of virgin paper towels consumes 17 trees, uses 20,000 gallons of water, produces more than three tons of CO2 emissions and requires 40 cubic feet of landfill space. In contrast, environmentally sustainable XLERATOR® Hand Dryers provide up to a 75 percent reduction in carbon footprint. • Transportation. Gas-consuming, carbon-emitting delivery trucks are used to transport lumber to mills and finished product to businesses. Waste is then transported to a landfill after use. It’s important to remember that while some paper towels are made from recycled

Tax-Exempt Fuel Sales from the Can-do Guys Ackerman Oil, owned by Mike Ackerman, operates a wholesale petroleum distribution business located in Jasper, Indiana. A Midax Fleet Card customer since 2012, Mike Ackerman said, “Because of Midax’s reputation for flexibility, creativity and reliability, Ackerman turned to the team at Midax to develop the functionality and transparency needed to track tax exempt sales of gas and diesel to government entities through a cloud based solution. “The team at Midax developed a flexible set of pricing and tax exemption tables to their already robust PFN (Private Fleet Network) program that allow us to apply the appropriate tax

The system provides transparent detail for Ackerman to file for refunds as an ultimate vendor with a solid audit trail for both customers and tax authorities. State & Local Government entities are entitled to purchase fuels exempt of Federal and certain local taxes, but as ultimate vendors, petroleum marketers have already paid the tax on their purchases and need an auditable means to track and invoice these customers through a proprietary system that also supports multiple pricing options including a rack plus basis.” The pricing and tax calculation automation this system provides saves

Blendtec’s Twister Jar There’s nothing like dipping a cold, crisp apple into warm, creamy almond butter. People used to make nut butters in their Blendtec Fourside and Wildside+ jar by adding oil or stopping the blender midcycle to scrape partially blended nuts off the sides of the jar. That worked, but Blendtec’s engineers thought there had to be a better way. Blendtec brainstormed dozens of concepts, selected the ones most likely to work and started prototyping. The engineering lab smelled like almond butter for weeks. The end result is the one-of-a-

kind Twister Jar. With the Twister jar, all you have to do is turn on the blender and twist the lid. The two tines on the Twister lid push the nuts back to the blade while you’re blending. The result: warm, creamy nut butter in seconds. Want it crunchy? Just add a few nuts at the end of the cycle and pulse. Not into nut butters? The Twister jar also works great for making perfectly blended hummus, flavored cream cheese and other thick spreads. Additionally, the jar is the right size for single-serving

AMEREX KP Superior Kitchen Protection: The System for Restaurant Operators The AMEREX ® Kitchen Protection (KP) fire suppression system is already a staple in commercial kitchens around the world. Amerex innovations make it an easy choice to meet code requirements, keep people and property safe with a dependable system, and give restaurant owners and operators unparalleled ease of use and maintenance for years to come. Plus, Amerex’s KP system meets the rigorous UL 300 standard for fire testing of fire extinguishing systems for protection of commercial cooking equipment required by NFPA guidelines. From fine dining to fast food chains, the Amerex KP system has the components to meet your clients’ needs with competitive pricing while never sacrificing quality.

Zone Defense KP offers two appliance protection configurations – Appliance Specific, where the appliance location is fixed, and Zone Defense, an overlapping protection configuration that allows kitchen appliances to be moved or replaced without having to move system discharge nozzles. Zone Defense

future-proofs the kitchen design and allows restaurants to adapt to changing consumer tastes or business conditions without repiping the fire system. KP offers three different fire detection methods – standard thermal link detection or one of two linear heat detection options, pneumatic heat sensitive tubing or electrical linear heat detection. These linear heat detection options give you continuous full hood heat detection that allows appliance movement without changing detection. This range of options helps you rightsize system configuration and price for your client’s operation.

STRIKE Electronic Control System The Amerex STRIKE Electronic Control System (ECS) is the result of years of rugged electronic fire detection and suppression evolution in vehicles employed in mining, transit, and military applications. Now, Amerex is bringing this advanced technology into commercial kitchens everywhere. Specifically designed to work with the Amerex KP System, STRIKE is the smart system for detection, actuation, and system

Distillery Diverts Waste From Landfill Montanya Distillers is an American Craft Rum Distillery located high in the Rocky Mountains of Colorado. Montanya Distillers was founded by Karen Hoskin and is a female-owned business. It has three facilities totaling 5,800 square feet: the Distillery and Tasting Room, a bottling facility and barrel house, and an office. For Karen Hoskin, building a company was never just about rum – as much as she loves it, she also loves the challenge of creating something new, and wanted to build a business that could have an impact. She sees Montanya Distillers as a way to be a force for good in her community, in the beverage and alcohol industry, and in the lives of her employees. Montanya Distillers installed an LFC-50 biodigester in February 2021. In just two months, the machine has digested 1,500 pounds (680 kg) of citrus and other food waste that comes from the bar,

restaurant, and tasting room. The company has diverted over 2.8 tonnes of CO2e from the landfill.

Clean Environment for Customers and Employees Karen Hoskin’s philosophy of stewardship guides every decision in the business: Are we taking care of the environment and the greater community around the company? Are we leaving a mess for someone else to clean up later? Karen was committed to reducing and eliminating at least 75 percent of all the food waste from the facility. Montanya Distillers initially used a local commercial composting service, but after it went out of business, Karen began looking for a long-term, sustainable solution for waste management. Easy, Seamless Installation While Montanya Distillers focused on

The latest craze among smoothie shops and enthusiasts alike is creating beautiful Brazilian-style acai breakfast bowls. Normally, blenders have real trouble turning frozen acai into deliciously smooth paste, and that’s monitoring. STRIKE uses plug-and-play electronic components for detection, actuation, and manual pull stations, replacing stainless-steel cable, corner pulleys, fusible links, and other components where grease buildup can disable a fire system. Installation is quick, maintenance is simple, and grease is neutralized. KP with STRIKE is capable of monitoring and releasing two separate hood systems, either separately or simultaneously. This means your clients get the power and convenience of two systems for the price of one. Plus, your customers will enjoy cost-savings over the years from refilling only one agent cylinder and cleaning only one kitchen area from a partial system actuation. According to Dave, installation was quick and simple. “Setting up the machine itself was quite easy! Done in a day. “I absolutely would recommend it to restaurants, especially those that can dump prep scraps and plate leftovers directly into the digester,” said Dave. “We are very impressed by how it works.”

Alissa Johnson, Vice President of Corporate Communications at Montanya Rum, is particularly excited about the LFC biodigester. “Environmental sustainability has always been an important focus at Montanya, and choices like that are great conversation starters to help educate our customers. When we switched from plastic to stainless-steel straws, our customers were very interested and wanted to learn more. The LFC-50 biodigester sits in an area that will soon become part of a tour exhibit. I expect that to be another great opportunity to further educate our customers on sustainability.”

UNOX Presents SPEED.Pro By Mark Klindera, President, UNOX

SPEED.Pro™ is an innovative oven that represents the fusion of two cutting-edge technologies, combined to coexist in a multifunctional and versatile product. It is, in fact, the first oven in the world capable of joining two diametrically opposed souls inside: SPEED & BAKE. The SPEED mode combines intense ventilation with the instant power of microwaves and is able to cook four toasts in 75 seconds, making them crispy on the outside, well-toasted, with a hot filling at the right temperature. The BAKE function, on the other hand, is the essence of the convection oven: heat distributed perfectly inside the

cooking chamber that allows you to brown 27 croissants in 16 minutes and to obtain uniform results on each pan. Many coffee shops or convenience stores in stations and airports have a food offer of baked products, ready to be heated for an essential and very fast service. To achieve this, in addition to the accelerated cooking oven to heat food, there is often a second convection oven that is used to bake all frozen products. These coffee shops and small convenience stores, therefore, need two ovens, which work at different times of the day to carry out two different types of cooking. In fact, SPEED.Pro is not limited to offering excellent cooking performance but also allows you to centralize both the

Tucs 50-, 100-, and 200-Gallon Self-Contained 75 psi Gas Kettles Tucs Equipment is known as a leader in cooking vessel technology, and that tradition continues with the addition of 50-, 100-, and 200-gallon self-contained, gasfired kettles. These new kettles are available in either stationary or tilting configurations. High-pressure 75 psi steam gives operators the option to caramelize and cook recipes that typical 50 psi kettles can’t touch.

The integrated, space-saving control panel gives operators control of agitator speed and direction and management of kettle temperature. The control panel is mounted on the left or right side of the kettle, depending on workflow requirements. Need help? The control panel can provide remote factory diagnostics. The trough shape allows for an ergonomically efficient low profile for loading and cleaning, thereby minimiz-

baking function of the convection oven to prepare brioches and bread for sandwiches, and accelerated cooking that succeeds in a few seconds to heat single and multiple portions, thus halving service times in busy moments. A product designed to meet the needs of customers, to make the food preparation chain more efficient and faster, and to make the spaces that are often particularly small in this kind of retail store more efficient. SPEED.Pro comes with a solid body of stainless steel with straight lines, which transmits solidity and strength at first contact. The large cooking chamber has a double-speed fan, ideal for the fragrant browning of baked goods.

SPEED.Pro is equipped with a clear and intuitive touch screen display that allows you to start cooking from the very first seconds of use. The work is completed by a series of accessories such as SPEED.Plate trays and the special spatulas that facilitate the work of any operator by speeding up services. Once again, UNOX stands out for its capacity for innovation. ing operator platforms and pits. An optional slide-out platform step for the 50- and 100gallon kettles makes access much more accessible. The slide-out step is standard on the 200-gallon kettle. The narrow width of the kettles allows installation under traditional depth ventilation hoods. The horizontal “paddlewheel” style agitator provides superior mixing and uniform suspension of particulate without damage to even the most delicate items. Agitator and scraper blades are easily removable without tools.

These new selfcontained Tucs kettles can easily be connected to a volumetric pump for use in a cook-chill workflow. In a cook-chill workflow, the kettles can connect to a Tucs volumetric pump to safely transfer products to lay-flat pouches for rapid chilling in a Tucs Batch Chiller. More innovative products are available from Tucs, including new self-contained electric sous-vide cook tanks and the EconoChill system for operators needing to adopt a cook-chill workflow using existing equipment.

Star-certified BX will heat sandwiches, baked goods and anything else to perfection.
