SUMMER BEACH TRIPS

W

e all scream for beach days, tasty BBQs, and mouthwatering watermelon during summer. Although we have plenty of bright sunny days in Florida, I have never really enjoyed visits to the beach. Fortunately, I recently visited Venice Beach, Florida, where the water is brilliant crystal clear, and the sand has such a beautiful cream color. I will have to say Venice Beach is my newly discovered paradise to escape and enjoy one of mother nature’s gifts “the ocean.” The best part is Venice is just a few hours south of Central Florida. Discovering new places to relax and rejuvenate is something I challenge you to do all summer long. In this issue, we focus on sustainable summer goods that will make your season pleasurably pleasant. Enjoy the golden sunshine!

Definitely yes! The lifespan of single-use plastic bags is typically 12 minutes but the environmental effect is massive. Every year 8 million metric ton of plastic is dumped in oceans. Several marine species are being affected by plastic pollution. These numbers are only going to increase with time if we don't take any counter measures. -Ritika Jain

Yes. Single use plastics should be banned because they end up in a landfill or in the environment and are not biodegradable. They’re harmful to the environment and animals that encounter them. The fight for saving our ocean and marine animals is on and the mission to cut single plastic use is in action. Unfortunately, plastic straws have been the worst enemy on the coastlines endangering sea life. According to the National Park Service, Americans use a staggering 500 million drinking straws every day. The good news is there is an alternative and it begins with the use of glass straws by Hummingbird Straws, an U.S. glass straw company that is passionate about preserving our ocean and sipping tasty beverages with no harm without toxic elements.

CBD AVOCADO TOAST 1 large or 2 small slices of bread (I like sourdough or sprouted) 1 garlic clove, sliced in half Ÿ teaspoon CBD oil ½ avocado, pitted generous pinch of sea salt pinch of freshly ground black pepper pinch of chilli flakes/hot red pepper flakes 1 tablespoon freshly chopped coriander/cilantro, parsley or basil (or a combo) sprinkle of vegan feta, to finish (optional)

Toast the bread to your liking. While it is still hot, rub the garlic clove halves, cut-side down, onto your toast. Drizzle the toast evenly with CBD oil. Scoop the avocado flesh from its skin and lightly smush it onto the toast with a fork or knife. Sprinkle with the salt, pepper, chilli flakes/ hot red pepper flakes, fresh herb(s) and vegan feta (if using). Enjoy immediately

CBD WATERMELON MOCKTAIL The bittersweet taste of the tequila has been balanced by adjusting the ratios of ingredients in a classic Sour to two parts strong, one part sour, and half part sweet, and adding three dashes of bitters. It makes for a very refreshing cocktail.

900 g/6 cups peeled, deseeded and chopped watermelon flesh 6–8 ice cubes freshly squeezed juice of ½ lime, the other half cut into wedges to serve pinch of sea salt 1 teaspoon CBD oil Combine all the ingredients in a blender and process to a smooth purée. Serve immediately garnished with lime wedges.

Grilled Corn on the Cob with Parmesan Butter Chomping corn from the cob is one of summertime’s most tactile pleasures. Using regular table butter is just fine, but replacing it with a quick compound butter makes corn on the cob seem like more of a dinner party dish. Plus, the flavor of the three different fats together feels unexpected, as does the heat from the chili flakes and the cool of the parsley. The method for toasting the chili flakes is tried and true for me (an unabashed multitasker known for burning spices by forgetting them in the pan).

½ cup (120 ml) neutral oil ½ tsp (2 g) chili flakes 4 oz (115 g) butter, at room temperature ½ tsp (3 g) salt 2 oz (55 g) Parmesan, grated ½ bunch parsley (1.2 oz | ¾ cup | 34 g), leaves only, chopped 6 ears corn, shucked Heat the neutral oil in a frying pan until it begins to smoke. Add the chili flakes and remove from the heat. Let steep in the oil for 10 minutes. In a stand mixer or a bowl, combine the butter, salt, chili oil, Parmesan, and parsley. Paddle until well combined. Taste and add salt as needed. Lay a sheet of plastic wrap or parchment on the counter and spoon on the butter in a strip. Gently roll into a round log, tightening with each pass, and chill until firm (this butter can be frozen for later use). When you’re ready to grill, heat a grill at medium to high heat. Cut the butter into coins. Grill the corn until the kernels are golden brown and slightly charred. Top with the butter rounds and serve immediately.

GARLIC MAPLE SALMON Anyone I make this dish for becomes an instant fish lover. Even those who weren’t previously convinced. Maple syrup makes everything taste better, and this recipe is no exception. Do check that your salmon is not genetically modified. This is when it’s handy to know a fishmonger, so you can ask those questions. For a full meal with a lot of vegetables, serve this salmon with Beet and Carrot Slaw with Ginger Sesame Dressing and Lemony Green Beans.

3 tablespoons (45 mL) pure maple syrup 1 clove garlic, minced 1 teaspoon (5 mL) dried dill 4 (3 ounces/85 g each) organic or wild salmon fillets 1. Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper. 2. Mix the maple syrup, garlic, and dill in a small bowl. 3. Place the salmon fillets on the prepared baking sheet. Spoon the maple syrup mixture over the fish. 4. Bake for 10 to 15 minutes until the fish flakes easily when tested with a fork. Serve immediately.

Kim S Being in nature, spending time in nature. Just the feeling of being in it. OB How has the use of essential oils changed your life? KS First, it started off with replacing my chemicals in the house. And then it just moved more into energy-wise. Different essential oils like lemon, peppermint, if you have tests to study, peppermint to keep you up for memory. So different essential oils for different parts of the day. OB What are some of daily sustainable practices? KS Not using the light. Very good about that. During the day we don't use the light at all. Natural light until the moonlight. And then we'll try to use one light, LED, no CFL lights. OB What's your definition of mother nature? KS Everything. Nature itself. It could be a small park.

You've got the trees, you got the garden, everything. Mother nature is everything. It's just ... It's how you look at it. OB What are some of the lessons nature has taught you? KS Never to give up. I mean, you see the dead plants, trees burn and they regrow. They heal themselves. OB What's your favorite beach? KS I like Big Talbot Island in Jacksonville, because you have a hike, you have the forest, the beach. You have the beach to yourself. It's beautiful. You have the sand dollars, the shells, it's privacy. It's nice. It's very relaxing. It's a little under two hours from Orlando. Depending on how you drive. I drive like grandma. So it takes me longer to get there. OB what do you want people to know about frequencies? KS How important it really is. I mean I'm still learning about it, but everything is a vibration. And vibration frequencies go together, so it's like the more you know about it, the more it helps you. With everything.

Experienced beer consumers that were once faithful to the major beer producers now enjoy a nice local craft beer. Consumers are starting to appreciate the hard work that goes into crafting something local, tasty, and refreshing. If you haven’t tried a craft beer yet, you are missing out. I highly recommend you do yourself a favor and seek out a local brewery and experience the difference. ONE MORE THING

This short feature was inspired by my grandfather's early life when he would look right at the sun and quickly found out it was not the best idea to stare at it. Unfortunately, he went blind for about three weeks and wasn't sure if he would get his eyesight back. Thankfully he did, but as old age kicked in, he developed a few sight adversities. Of course, you may be wondering what in the world would trigger him to do such craziness. Well, the reason is he was curious about the sun and wanted to know more about it. He was a curious boy in the late 1930s in a time when there was no Google to do research and probably no UV sunglasses available to protect his eyes from the burning sun-rays.

One of nature’s most powerful force is the sun. You see it and feel its powerful energy day in and day out. Whether you are conscious of its burning rays or not is another issue. Most of us take this radiant gift for granted and not for one second think if this priceless energy dissipated, we longer as a human race exist. Our lives thrive because of the sun and we should be thanking our higher power for blessing us with the warmth of it that Illuminates our souls daily. The sun is the one element in our lives that never fails even when the grayest of puffy clouds cover it.
