PREPARATION INSTRUCTIONS: - Prepare Parmesan cheese rings by laying out shredded Asiago and Parmesan on parchment lined sheet pan into 10” long x 1 1/2” wide strips. Baked in 350° oven until golden brown, but still pliable, about 6 minutes. - While still warm roll cheese into rings and place into ramekin to retain shape as cheese ring cools. - Prepare crab or shrimp... - Toss salad lettuces with 1/2 the cusabi dressing. Place tossed lettuces into crisp Parmesan cheese ring. - Arrange egg, julienne Roma tomatoes, avocado slices and asparagus spears around cheese ring. - Plate crab or shrimp on the salad. - Drizzle remaining cusabi dressing over salad. Serve immediately.
