Increasing estimated market values? By Jason Sethre

While many locals may think the economy has stifled construction, new construction has been stimulating the economy and adding a pretty significant amount to the Olmsted County tax base. According to documents made accessible at the Olmsted County website, specifically referencing a document titled, “Olmsted County Value Comparisons 2010 vs. 2011,” agriculatural land is the hot ticket in Olmsted County. The Olmsted County Real

Estate Valuation Summary 2010 assessment demonstrates $64.85 million in new construction for the City of Rochester in the areas of residential and agricultural. Rochester’s commercial new construction shows $22.2, while $4.8 million was tied up in new construction with apartments. Outside of the city limits of Rochester, it appears Rochester Township saw the most new construction at $4.56 million. Byron was second with $3.4 million in new construction, with Marion creeping behind in third place with $2.45 million in new construction. Stewartville boasted $2.43 million in new construction, as well.

Stewartville seeks to grow healthy people with community gardens

The city of Stewartville has expanded their Community Gardens program to include thirty-three garden plots this year. The community gardens are made available through a partnership with Olmsted County and Minnesota’s Statewide Health Improvement Program (SHIP), which aims to help Minnesotans live longer, healthier lives by reducing the burden of chronic disease. “This is our second year for the community gardens,” City Clerk Cheryl Roeder said. “The program is designed to help people learn about the value of proper nutrition by growing vegetables.” The city received a $4,000 grant last year to begin the program and has received a

$1,000 grant for this year. The program is open to anyone in the Stewartville school district. The cost is $20 per garden plot. The application deadline is May 15. “The city has been very proactive with this program and the council is very supportive,” Roeder said. “We did a fall tilling to get ahead of the process for this spring. Last year we had twenty garden plots filled with vegetables.” “This is a great opportunity to get some regular exercise, enjoy the sun and realize the healthy benefit of growing your own vegetables,” she said. “There is easy access to the gardens at 640 20th Street NW and there are few restrictions for the gardeners.” See GARDEN Page 2 

Collectively, when including new construction from residential, agriculatural, commercial and apartments, the gigantic number is staggering. Olmsted County generated a shocking $122.3 million in new construction in 2010, Interestingly, Olmsted County parcel count reports show 69,466 in 2009, 69226 in 2010 and 69,308 in 2011. Did you notice the drop from 2009 to 2010? And, the gain in 2011 does not bring Olmsted County back up to the parcel county of 2009. Some other interesting figures related to the Olmsted County projected growth for 2011. According to a report

accessible at the county’s website, commercial real estate is anticipated to see the biggest gaines in 2011. With 18 townships and seven cities included in the report titled, “Olmsted County Value Comparisons 2010 vs. 2011,” the numbers are all over the board. However, agriculatural parcels still seem to be increasing the most in estimated market value, which directly relates to the taxes for those parcels. Cascade Township Statistically, very little activity in any particiluar category. Dover Township The floodgates have opened with 267 of 292 agriculatural parcels, totaling 91-percent,

increasing in total estimated market value. Elmira Township Similar to Dover Township, Elmira boasts 84-percent of the agriculture parcles experiencing an increase in estimated market value. Eyota Township Likewise, this township came up with 85-percent of the agriculature parcels boasting increases in estimated market value. FarmingtonTownship At 88-percent of its agricultural land increasing in estimated market value, this township is in the same boat as the See MARKET VALUE Page 10 

Today’s vegetable gardens By Phillip Nicklay If you’ve been trying to add more vegetable to your diet and find yourself lacking enthusiasm for the taste of grocery store veggies, maybe you need to discover the taste of fresh vegetables. It doesn’t matter if you are getting your vegetables from the freezer, a can or even from the fresh produce shelf, none of these are going to compare to the taste of a fresh vegetable. There is an easy remedy to this….grow your own veggies. Now I know what you’re thinking, but don’t panic. Growing your own vegetables really is easy and more importantly, its fun! The first thing The first thing you will want to do before getting started is taking some time to think about what you want to grow and where you are going to grow them. Make a list of what you are going to actually eat, along with a few new vegetables that you would like to try. The next part of your pre planning will be figuring out where you’d like to grow them. Don’t tell me you don’t have anyplace to have a garden. An old fashioned tilled up piece of earth on your property is the Cadillac of vegetable growing systems. You should know that this type of gardening requires the most maintenance, but can produce the largest quantity of food. A large garden area isn’t necessarily available or you may not want to put that much time into your vegetables…. let’s talk about smaller options. Integrating veggies with other landscaping plants or flower beds actually enhances the look with different colors and textures. I like to use vegetables in existing beds the same way I would nay other plants. Vegetable can be blended into landscapes as single plants or in blocks or in waves. Shrubs and trees with edible fruit are a great way to add another value to your landscape. Try a hedge of high bush blueberries or Nanking cherries. You or the birds will enjoy what ever fruit is produced by these plants. The third way to grow your vegetables is in an above ground container. This would include any thing from a raised bed to a flower pot. All of these environments will work for

By Sandy Manion The International Herb Association chooses an Herb of the Year to highlight each year. Their choice involves evaluating herbs that are outstanding in at least two of the three major categories: culinary, medicinal, or decorative. Horseradish meets all three of these categories. Culinary: Horseradish is probably most well known for its use in cocktail sauce. It is also a wonderful sauce for roast beef when mixed with sour cream. Horseradish is one of the bitter herbs used in the Passover Seder. Medicinal: Horseradish root can be rubbed on sore joints to relieve rheumatism or pressed on the forehead for headaches. It is full of nutrients such as vitamin C, iron, calcium, magnesium, phosphorous, potassium and zinc. Horseradish also has antibacterial, antioxidant and detoxifying properties. Decorative: The leaves of horseradish don’t all look alike. They are easily dried for use in dried flower arrangements. Horseradish became popular in England in the late 1600’s. Commercial cultivation in the U.S. centered around Chicago because a German family brought plants to that area around 1856. If you are looking to plant some horseradish in your garden, here’s what you need to know to get you started: You can mail order for root cuttings or possibly pick them up at a garden center. They should be ¼” to ¾” in

diameter and about 8” long. You plant them with the flat side facing up and at a slight angle. Plant so the top is just at the soil line. Space 18” to 24” apart. Plants are large and can grow to 3’ in height. It is best to plant horseradish in the spring. Horseradish is a perennial and will sprout from any piece of root that is left in the ground meaning it can be invasive if you aren’t careful. Using Fresh Horseradish: Freshly grated horseradish will turn brown so it is best to use it right away. If that is not practical it can be preserved by adding vinegar, 1/4 to 1/3 cup white vinegar for every 2 cups of freshly grated horseradish. Recipes: Cocktail Sauce ¼ cup Ketchup 2 T prepared horseradish 2 drops any brand hot sauce Horseradish Salad Dressing •2 C yogurt •4T fresh dill •1T minced onion • 1 T chopped chives • 1 T prepared horseradish

Dash of fresh ground pepper Combine all ingredients in a quart jar, cover and chill. Shake before using. Keeps two weeks in the refrigerator. Great on any green salad or can also be used as a dressing for potato, tuna, chicken or pasta salad.

About eighty percent of the families who utilize the program are immigrants and refugees who are accustomed to planting large gardens in their home countries. The atmosphere in the garden is one of family. The sharing of knowledge and the camaraderie of coming together around the common bond of a love of gardening is really something to witness. For summer 2010, garden plots were utilized by over 80 families.
