The Salt Valley of Añana: the source of one of the world’s highest-quality salt products The Salt Valley, located in Salinas de Añana in the Basque province of Alava (Spain), produces one of the world’s most prized salts: Añana Salt. Its quality is guaranteed by both its completely traditional, organic production, and by the acclaim and acknowledgment of some of the world’s top chefs. The Salt Valley of Añana is a unique place currently undergoing extensive restoration, and is a landscape made up of thousands of salt pans, canals, wells and salt stores. Añana Salt is the fruit of natural evaporation of brine from local springs, and its unique salt crystals are the result of three factors: the sun, the wind and the traditional techniques used by the salt makers. Chefs of international renown such as Martín Berasategui, Joan Roca, Pedro Subijana, Andoni L. Aduriz, Eneko Atxa, Daniel García, Diego Guerrero and Patxi Eceiza, as well as the Marqués de Riscal bodega, who between them have a total of 18 Michelin Stars, all attest to the quality of Añana Salt and use it in their restaurants. They also help to raise awareness of the recovery and conservation of the Cultural Landscape of the Salt Valley, a candidate UNESCO World Heritage Site.

Mineral Salt The purity of the salt crystals obtained in the Añana Salt Valley is due to both the traditional production process and to the origin of the raw material. The brine that flows from the springs is formed naturally when fresh water systems flow through the veins of solid salt which were deposited in this area over 200 million years ago. The salt crystals are produced in the traditional manner in the pans. The sun and the wind cause the salt flowers (the flakes that form at the beginning of the crystallisation process) to gradually increase in size and combine. As their weight ncreases, they fall to the bottom and are collected manually by the salt workers. Since no industrial refining processes are used, Añana Salt is rich in minerals and trace elements.

Fleur de Sel Their crisp texture and laminated appearance are the result of a very specific production process. Añana Fleur de Sel is formed at the beginning of the brine evaporation process, when fine, irregular flakes form on the surface of the salt pan and are then harvested by hand before they fall to the bottom. Añana Fleur de Sel is characterised by its ability to greatly enhance the flavour of the food to which it is added, making it a prized ingredient in haute cuisine. The flakes of salt are often placed directly on top of meat or fish dishes, immediately before serving.

Salt Stalactites A単ana Salt Stalactites are thin, extremely pure, high-quality stalactites which are formed naturally by the seepage of brine from canals and salt pans. Harvested by hand, they are extremely valuable due to their scarcity and exceptional quality. Due to its fine, compact texture, this type of salt dissolves in the mouth very quickly, thus providing a clean, long-lasting salty flavour on the palate. A単ana Salt Stalactites are often used in gourmet cooking, most commonly grated directly on top of finished dishes, immediately before serving.

Liquid mineral salt A natural golden liquid which is formed when fresh water flows through the underground veins of solid salt which were deposited in the Salt Valley when the large ocean which covered the area dried up more than 200 million years ago. It is a product which helps you stay healthy, not only because it contains minerals which are beneficial for the human body, but also because in this form, less salt is required to enhance the flavour of the food to which it is added. It is especially good for dressing salads, due to the ease with which it mixes with other seasonings. It can also be sprayed over fish or meat before placing in the oven.

A variety of salt obtained by combining Añana Fleur de Sel and Arbequina Olives. These flakes are special, due to their unique texture in the mouth, their balsamic, spicy aromas with hints of fresh fruit and their strong flavour of extra virgin Arbequina olive oil. Arbequina olives are small and are harvested at the optimum moment of ripeness. When combined with Añana Salt, the intense gustatory potential of these olives creates a gourmet product of the very highest quality. We recommend that Arbequina Fleur de Sel be left on the table so that diners can see it, touch it, enjoy it and decide for themselves how much to add to their dishes.
