LOUISIANA SUMMER DRIVING TIPS Just like winter, summer has its own set of seasonal hazards that require your complete attention as a driver. Here are some to be particularly mindful of: • PEOPLE In your neighborhood, on city streets, in parking lots, and especially around parks, beaches, or any popular summer attraction, people are outdoors and often more focused on their enjoyment than on personal safety. Children are out of school and they might be playing in the street in a quiet neighborhood or chasing a basketball bouncing away from a driveway hoop. In summer, there is simply more human activity everywhere, and it’s up to you to slow down and stay alert.

• BIKES AND MOTORCYCLES Bicyclists and motorcyclists are also more active in good weather. Pay attention and take extra care in areas that attract cyclists.

• GLARE The sun’s glare is bright in summer, and even harsher when the sun is low and in your face.

Have your sunglasses handy if you’re not already wearing them, and be ready to flip down the visor so you don’t spend even a second driving while blinded by the glare.

• ROADWAY OBSTACLES: A busy roadway is no place for a sofa. But, with scores of people completing summer moves, you might just encounter one. Keep an eye out for roadway obstacles and plan as far ahead as possible on how to safely maneuver around them. Thunderstorms and tropical storms can further clutter the roads with debris, tree limbs, or even downed power lines.

• HEATSTROKE: Finally, don’t forget the dangers of summer parking. Children and pets left in parked cars are vulnerable to injury or even death from heatstroke. At an outside air temperature of 60 degrees, a car’s interior temperature can reach 110 degrees, which is a lethal level for children, according to the National Highway Traffic Safety Administration. Rolling down car windows does not provide sufficient cooling, so don’t be tempted to leave children or pets for even a minute. It can be lethal—and in many states illegal—to leave children and pets alone. To help keep your car cool for when you return, park in the shade or place a removable sunshade in the windshield.

• ROAD TRIP SAFETY: A road trip with family and friends can make a memorable summer for both the right and the wrong reasons. Make it the right reasons with some careful planning and driving. There will be plenty of time for fun once you reach the campground, resort, or cabin.

Speckled Trout Tacos

My Speckled Trout Tacos will please the family, and it will give dad something different to cook after the catch has been cleaned, and ready to eat. This is a simple recipe using fresh ingredients like speckled trout, cilantro, lime, white corn tortillas, and cooked corn cut from the cob. A medium skillet, and a bamboo steamer for steaming the tortillas are all the pots and pans you’ll need to make this dish a success.

Keeping fish ice cold after it’s caught then bought is so important. After they are cleaned and bagged, simply ice them down. This method will easily keep fish fresh for 2 days if you decide not to cook them right away. Fresh fish kept on ice will not turn or smell because bacteria cannot grow as quickly in ice cold temperatures. This is only for temporary holding, and I suggest two days maximum. This is a safe time frame. If you know the fish will not get cooked for a few days, then I suggest freezing immediately.

There are so many ways to cook trout, but I believe when you are working with fresh fish, masking fresh doesn’t make any sense. Keep the flavors simple, and balanced. This will allow the taste of the fish to really shine. Fried fish is wonderful, but heavy seasoning and deep fry can cover the fresh flavors. My Speckled Trout Taco recipe shares how fish can be enjoyed with a little fun-innovation that everyone can appreciate, and certainly recognize being a fish taco.

Speckled Trout Tacos.

Makes about 4 servings

Recipe & Method

4 trout fillets, cleaned 3 tablespoons virgin olive oil 1 tablespoon sea salt 2 teaspoons fresh black pepper 1 lime 8 white corn tortillas 12 sprigs of fresh cilantro 4 ears of fresh corn on the cob

When I cook corn, it’s usually cooked 2 ways, boiled or grilled. If the corn is grilled, I leave the husk on, and grill for about 30 minutes depending on how hot the grill. You don’t want to burn the husk, but rather have it grilled or steamed within. If I boil, I boil water in a medium pot with some salt, and remove the husk. Boil the corn for about 15 minutes.

Next, heat up a medium skillet and season the fish with a little salt and pepper. No flour is needed.

Add olive oil and sear fish on both sides lightly, but make sure the fish is completely cooked. This is fresh trout; please don’t over-cook it, about 2 minutes per side. Squeeze fresh lime juice over the fish and set aside. Slice the cooked corn so that kernels stay together and sear in olive oil for 1 minute on both sides in the same pan. Remove corn, and add ½ cup hot water to the skillet to steam the tortillas. Add parchment paper on the bottom of the bamboo steamer so the tortillas do not stick. Cut each piece of trout in half length-wise for each taco. Once the tortillas are soft, steaming about 2 minutes, simply create your Speckled Trout Taco’s while they are hot.

Seems like summer time temperatures are starting to ascend along the Gulf coast. Over the past couple of seasons, we have enjoyed cool spring weather. The cooler temperatures even extended into May. However, it looks like we will reach 90°F by the end of the week. When adding plants to the landscape during this time of year, think of some of the more heat tolerant choices such as hibiscus.

Hibiscus plants are extremely common in southern gardens during the summer months. The genus Hibiscus belongs to the family Malvaceae which is made up of several hundred different species all native to Will Afton warm-temperate, subtropical, tropical regions. This helps to explain why they thrive during the warmest months of the year.

There are a few hibiscus species that are native to the United States including Louisiana. The most common is the crimson eyed rose mallow, Hibiscus moscheutos. It can be found throughout the state growing in ditches along the roadside. You will notice them by their large 4-6 inch flowers with white petals and crimson red throats.

The Confederate Rose, H. mutabilis, is a common tree-like shrub planted throughout the state.

It can reach heights of 10 and 12 feet. The species name “mutabilis” hints at the plant’s most distinguishing characteristic. The flowers open white in the morning and fade to pink later in the evening before they close. Even though Confederate Rose is considered a perennial plant a hard freeze might kill it back to the ground, but with proper mulching the plant should return the following spring.

Most of us should be well acquainted with the Rose of Sharon plant, H. syriacus. A native of Asia this hibiscus has been popular to gardeners dating back to the Europeans in the year 1600. Due to relative ease of care and lack of pest problems, it is not uncommon for Rose of Sharon to live many years in the landscape. There are many well-known cultivars grown in the nursery trade to choose from. Try looking for the LSU AgCenter Super Plant selection from the spring of 2013, ‘Aphrodite’. It is reach heights of 8-10 feet tall and produces beautiful rose red blooms with dark magenta centers.

Last and definitely not least, the most popular hibiscus is the tropical hibiscus, H. rosa-sinensis.

Some home improvement stores bring these in by the thousands as soon as spring weather arrives. Of all of the other species of hibiscus written in this article, H. rosa-sinensis is the most tender when it comes to cool weather. On the other hand, these bushes will bloom all during the warm season. After the first frost some die back will occur but when it does, go ahead and prune the whole bush to the ground and cover it with mulch. If you can protect the root system during the cold months there will be a good possibility of survival to enjoy it the following year.

START is an all volunteer 501 C3 organization made up of members who rescue, foster and care for homeless cats and dogs. Our rescues are fostered in the homes of our STARTCARES@HOTMAIL.COM volunteers until they are ready to be adopted. We are always in need of foster homes, WWW.STARTFOSTERS.COM especially for dogs. MEET SPY GIRL & BRADY

Two beautiful cats, rescued from the same place at about the same time. Brady and Spy Girl were kittens hanging around behind a store, depending on handouts for food, running and hiding from loud noises, just trying to survive.

Both liked to watch the people, but they liked to do so from a safe distance. Brady, one of a litter of five, was a regular when food was put out. She became quite bold, the first to run up as the food was being served. Spy Girl got her name because she liked to observe things from a distance, a little ball of black fur, waiting patiently. Allowed to remain in that location, Spy Girl, Brady, and her litter mates, all females, would have been the beginning of a feline population explosion. Captured and placed in foster homes by START, they were spayed and vaccinated, and given the time they needed to become socialized with people. They are still not comfortable with crowds and commotion. Brady and Spy Girl would do very well in quiet homes with one or two people who love and understand cats. They are, of course, very cat friendly. Please contact START if you would like to meet Brady, Spy Girl, or another of our fantastic rescued felines.

Adult cats and dogs are wonderful pets! Please consider an adult when adopting an animal. They will bond with you and be just as devoted as a kitten or puppy will eventually be. There are several advantages to adopting an adult: 1) They generally are calmer and more attentive to you than a puppy or kitten.

2) They are often already trained.

3) You can know their personality from the beginning. With a six to eight week old pet it is sometimes not obvious.

4) They know what it is like to be abandoned and have to fend for themselves in many cases, so they love you all the more for giving them a home!
