THE QUEEN CITY’S NFL NAME SHOULD BE CHANGED TO THE “SIN SIN NASTY BEND GALS”
There was a time that the Oakland Raiders held the NFL’S franchise on dirty players and nasty personalities. From a headhunting bunch of All-Pro defensive backs to a couple of scary defensive linemen, nobody messed with the Raiders on the field. Off-field hijinks might have found their way onto a police blotter, but it was usually a guy-on-guy event or something involving a civil matter. The AFC franchise in the southern reaches of Ohio has never won a Super Bowl and hasn’t appeared in one in nearly 30 years. But they are developing a stable of rogue horses that should turn the stomach of anyone who cares about professional demeanor from their professional athletes. Forget playoffs, Cincinnati; concentrate on potential parolees.
Burfict rhymes with perfect, and this guy is a perfect a… hole who should be banned from playing in the NFL or anywhere else. Mixon apparently limits his aggression to ladies. Well, no problem for Cincinnati, where the team’s development will continue to go sideways or down as long as ownership approves of this criminal roster. We’re happy Andrew Whitworth has left Cincinnati after more than ten years there. It’s time he got to play for a class organization.
Everyone is a victim these days and every predator is redeemable, according to ESPN and to a lesser degree, most of the network stations. Sports television has hired a bunch of apologists for the likes of Jeremy Hill, Vonteze Burfict, PacMan Jones and now Joe Mixon. Hill and Mixon have even gone beyond the pale by physically assaulting females, Hill in high school and Mixon three years ago. These four individuals are just punks, talented thugs who need to get their butts transported into intensive care. The most recent backside-kissing event happened after the Bend Gals drafted Mixon last week. A female reporter representing the Cincinnati franchise asked all the right apologist questions to a softly smiling, boyish Mixon. But nothing was asked about his follow-up on behalf of the woman he cold-cocked in 2014, nothing about his efforts to reach her and begin the process of trying to apologize and make things better (not right- it can never be made right) for the situation involving the woman. What a backfield for this team! Hope there are no female officials on the field that could be assaulted.
There was a reason only four of the 32 NFL teams said that they would take a chance by drafting Mixon (none of those teams were identified by name, however). In light of the number of recent scandals, protests, franchise relocations and the like, the NFL best watch its back and its bucks. ESPN already is in deep trouble for mixing biased politics and the Bengals run the danger of becoming inconsequential, much like the baseball Cincinnati Reds, who were led to mediocrity by Dusty Baker. The caliber of fans now roaming many stadiums is a far cry from the fans who built these franchises. Perhaps the league could adopt a shuttle system that brings these new era fans from their momma’s basement and central lockup to the stadium, replete with video games and power drinks. Hey, maybe this is why Cincinnati is stocking its roster with the likes of Jones, Burfict, Mixon and Hill.
To their minimal credit, Hill and Jones have kept their aggression on the field, more so for Jones, who has seen more moves in the NFL than virtually any other player of his generation.
Why, these guys could be folk heroes to the young masses of so-called fans who are raised without regard to much human decency. Years ago, there was a popular T.V. series called “WKRP IN CINCINNATI”. WKRP was a thinly disguised 70’s attempt to instill a little blue humor into a rapidly changing television landscape. Well, the WKRP has hit the FAN in the NFL and the NFL’s other acronym, Not For Long, could apply to the old school average team supporter, who really doesn’t need to spend $200-$500 per Sunday to watch a bunch of garbage continue to ruin a remarkable game.

Spicy Chicken Stir-Fry with Thai Basil (Gaprow Gai) When I lived in Thailand, it seemed I always ate spicy food. Chilies are simply part of Thailand’s culinary culture, and it didn’t matter if it was street food, a beach side restaurant or even a hotel restaurant, spicy food became a way of life. The local people enjoyed watching me attempt to match their spice tolerance level, but this did not go over well. Not only did I sweat profusely trying to keep up with local taste, but the spicy heat can be down-right painful. I found when food is too spicy, I can’t taste it. I’m blinded by chilies so all the other wonderful flavors become lost while I’m constantly flushing my body with water. It’s always fun watching locals endure the spice. You could see at times when the heat of the chilies got to them also, but they still managed to endure. I love spice, but now I do tend to tone it down a bit since chilies are less in my daily diet. My favorite dish to order was always Spicy Chicken Stir-Fry with Thai Basil (Gaprow Gai), and till this day, I still cook this recipe at home with delight, but with less heat. What I enjoy most about this dish is its simplicity. The preparation is not extensive making it easy to duplicate. Familiar ingredients, such as canola oil, chicken, soy sauce, garlic, chilies, rice, egg, basil and oyster sauce. Most every item can be found at your local supermarket rather than having to travel to a local Asian market that could
Spicy Chicken Stir-Fry with Thai Basil (Gaprow Gai) Makes about 2 servings 8 ounces chicken thigh, boneless – skinless, cubed 3 tablespoons canola oil ¼ cup chicken stock or water 2 tablespoons garlic, minced 2 chilies, green or red, minced (remove seeds) 2 tablespoons light soy sauce 2 tablespoons oyster sauce 1 teaspoon dark soy sauce (sweet soy), optional ¼ teaspoon white pepper powder ½ teaspoon sugar Handful of Thai Basil or Italian Basil, whole leaves 2 eggs, fried 1 cup jasmine rice, cooked
be less convenient for some people. Westerners will recognize the ingredients, and hopefully enjoy cooking this dish once they realize how tasty it turns out. Most people are always looking to cook something different, and this dish is one that has never disappointed me. Gaprow is a Thai word that means spicy basil, and Gai simply means chicken. The Thai basil adds that fresh herb essence to the dish. The basil completes the dish, being the last ingredient added in the stir-fry just before serving from the wok or frying pan. You can substitute Italian basil if Thai basil is not available. In Thailand, chicken breast is used and minced. Personally, when I cook Gaprow Gai, I use boneless-skinless thigh meat. I cut it into medium size cubes. The dark meat simply has a sweeter taste rather than breast meat that is somewhat dry even with a sauce. You can substitute shrimp, sliced or minced pork, beef, lamb and even diced tofu. Another unique element to Gaprow Gai is the freshly fried egg that sits on top of the steamed jasmine rice. The egg provides a rich balance that tones down the heat of the chilies and enhances flavor combinations with the salt (soy sauce) and spice (chilies). Jasmine rice is the main staple to Thai cuisine and marries nicely with the heat, salt, fresh herbs, egg and garlic. In Thai cookery, the main flavor components used in this dish are salty and spicy. ENJOY!
Perfect Jasmine Rice – Wash the rice in cool water 3 times till the water drains clear. Add 1 cup water for steaming. If you do not have a rice cooker, use a medium pot and allow the water to come to a light boil. Cover tightly and simmer for 12 minutes. When done, fluff the rice with a fork and serve hot. Method: Heat up the wok or skillet and add your cooking oil. Do not let the oil smoke. Add your chopped garlic and chili peppers and stir-fry for 10 seconds. Quickly add the chicken and cook for 1 minute stirring constantly. Add the chicken stock, soy sauce, sweet soy sauce, oyster sauce, white pepper, sugar, and continue to stir. Lower the heat and cook for 1 minute adding the basil leaves and mix together. Taste for balanced flavors. If it seems too salty because some sauces have different sodium strength, simply add 1or 2 tablespoon water. Serve steamed rice on the side and place the fried egg on top the rice.

Herbs and Spices Wild About Fennel!
Fennel is a very versitile garden plant. It is used as a vegetable, as an herb and as a spice. The vegetable fennel at the base of the plant has a bulb that has a crisp texture with a very mild liquorice or anise taste and smell. The herb fennel and the bulb fennel can be used interchageably in recipies. Fennel can grow 3 to 5 feet above the ground. Leave space between the plants to allow the feathery fronds to wave back and forth in the breeze to release its anise-like aroma. The fronds on both the herb and vegetable are bluishgreen and look just like dill. Sometimes you have to bite into it to tell the difference. There is a bronze herb fennel that give a beautiful burgandy color to your garden scape. The flavor is the same. Fennel is related to parsley, dill, celery, and carrots. Dill and fennel can cross-pollinate if they are in the same area. Fennel will eventually want to flower, sending bursts of yellow umberal-like flowers. They look like fireworks exploding in the sky. When the flower dies, cut the flower heads and place in a large bag and the seeds will fall out. The flowers attract many beneficial insects to your vegetable and flower gardens. All of fennel is used: the fronds, the stalks, the bulb and the seeds. There are three varieties of fennel. One, developed mainly for the production of seeds, is called Sweet Fennel. The other, Florence Fennel is for eating as a vegetable. Sweet fennel is treated as a perennial and left in the ground to produce seeds. If all of the seeds are not harvested, the plant will reseed itself in warmer climates. Fennel seeds are also used medicinally for digestion, heartburn, bloating and regulating appetite. Fennel seed is popular in Italian, Indian and Mediterranean cooking. Indian cusine uses the seed in curry and garam marsala blends and makes a confetti blend of fennel seed, rose petals and other spices as a pre-digestive tasting at their tables. Florence Fennel is grown as an annual(one season), with the entire plant being pulled up for eating. The other fennel is Wild Fennel aka” Finocchio selvatico” Italian origin, used in Sicilian pasta and sardine dishes. Wild Fennel is now being grown in California because of its fennel pollen “dust”. This is used as a garnish. The flowers are harvested before they go to seed. The flowers are crushed to release this anise flavored pollen. The immature green seeds are even tastier and softer on the teeth than the dried seeds. I came
across Wild Fennel while I was foraging wild greens on land in Mississippi. There is no mistaking the plant, with its distinct smell of anise. It can be as tall as 8 to 10 feet high, with skinnier stalks than regular fennel.
My first experience with fennel was eating it at Thanksgiving every year, when I grew up in New York. That was the only time it was in season. So my family would cut the bulb fennel up into quarters and place it on a platter with tangerines and nuts. This was an Italian after dinner course before dessert. Everyone would sit around the table chatting, cracking walnuts and hazel nuts and cleanse with the fennel or orange. When I moved to Louisiana in 1979, fennel wasn’t available in the supermarkets. With the explosion of “Garden to Table” and Food network, new foods became available. Now you can get the bulbs at all the grocery stores, year round. Oven roasting the bulb with onions to carmelize is a fantastic vegetable side. As I started to develop my knowledge of culinary herbs, Fennel, the herb became my friend. I use the fronds to flavor my salads, add a bit to my steamed mussels and barbeque my chicken on it. The fronds keep the chicken from burning and infuse the chicken with flavor. Squeeze a little orange juice and sprinkle some creole spice for a light refreshing taste. I love to pair this with a greens salad, diced red onion, “cutie” satsuma slices, a handful of almonds, a splash of Seasoned Asian rice vinegar, salt & pepper to taste. I make a large batch of chicken and make this for lunch regularly. This is great layered in a mason jar to go!
Not that I’ve been eating like a bird, but lately I have been experimenting more with the seeds. I was at a pizzaria in New Orleans-Pizza Delicious. Fantastic New York Pizza. Beyond the pizza, they have fabulous different salads. I ordered an Arugula, Radiccio, Marinated Cauliflower steak, white raisins salad with an orange lime vinaigrette. It was dinamic. I had to recreate this at home. It came pretty darn close. What does this have to do with fennel? The cauliflower was marinated in a citrus, olive oil & fennel seed marinade. How do I kow? I could taste it. Isn’t nice to be able to eat food with real flavors? Wake up your tastebuds to the fresh anise flavor of fennel.
ARUGULA & MARINATED CAULIFLOWER SALAD Ingredients Directions Baby arugula
1 small radicchio lettuce, sliced thin (purple cabbage is a good substitute) Pickled red onions,sliced thin 1 bulb fennel, sliced thin and pickled Cauliflower head, cut in quarters, then slice into thin steaks (some may crumble. Don’t fret) 1 cup raisins or dried cranberries Limes Lemons 2 tbs fennel seeds Salt & Pepper to taste Grainy mustard Seasoned rice vinegar Extra virgin olive oil
Marinate cauliflower – Lay a single layer of cauliflower on a sheet pan. Drizzle a little olive oil, squeeze the juice of a half orange and lime, 2 tablespoons of seeds, salt and pepper Let sit a while or over night. Pickled onions and fennel bulb~ slice both very thin and place in separate bowls. Sprinkle with Seasoned rice vinegar, salt & pepper. Let sit 1/2 hour. Vinaigrette– Mix 1 teaspoon grainy mustard, zest of a 1/2 lime, orange & lemon. Squeeze juice. Mix with a whisk and drizzle about 1/2 cup olive oil. Salt & pepper to taste. Assemble salad~ Mix arugula, radicchio, add some red onions and bulb fennel. Sprinkle in raisins. Toss together. Add cauliflower and drizzle vinaigrette. Add more salt & pepper as needed. Grilled fennel chicken breast would be great sliced over the top!

This month I want to go south of the border with one of my favorite party treats; Caribbean Nachos.
We are going to start off by making our own chips by taking corn tortillas and cutting them into quarters. Sprinkle a little garlic powder, curry powder and ginger powder over the pieces and bake in the oven for about five to eight minutes at 300degrees. Set them aside and we will start on the toppings. First, think of what you like to snack on, the possibilities are endless. Me, I like hard salami. I slice about five to seven slices into narrow strips, set them aside. Choose some of your favorite olives (blue cheese stuffed, black, kalamata, pimento or pearl onion stuffed), and slice or chop about a cup full. I like to use both gouda and sharp cheddar cheese, which I coursely grate about two cups, one of each and set them aside, also. Now here is where we go Caribbean. Take two slightly green bananas, peel and cut into the thinnest slices that you can. Get some tamarind paste (look in the Mexican isle), and some mild salsa. Get a large cookie sheet pan and spray with Pam or wipe with some vegetable oil. Spread out your homemade tortillia chips and cover with the first of your cheeses. You can now start to add your condiments. I like to start with a light sprinkling of cheese, then some of my veggies. At this point I sprinkle a little caribbean curry powder (Moko Jumbie curry powder), which we sell at the Camellia City Farmers Market most Saturdays, is my preferred taste. It is a caribbean vs. a Indian curry powder. I then add some of my selected meat. Other options are; ground beef, hot sausage, crispy bacon, shredded goat, etc. In the Caribbean goat is the most used meat. There are quite a few on most islands. Down the road I will be giving you some recipes for some delicious goat meals. Now you can add some diced tomatoes, and your salsa. At this point you can add your remaining cheese, and I like to sprinkle a little more curry powder over the whole thing. You are now ready to add some salsa, and I am going to give you a simple salsa recipe or you can use some you already have or you can purchase your favorite brand at the store. Here we go: Two large tomatos, one small onion, 1/2 cup pickled jalapenos, two tps.
Mokojumbie Creole Spice (Available at the Camelliat City Farmer’s Market), one small bell pepper, 1/2 cup pineapple chunks, and last but not least, two of your favorite peppers. The hotness depends on your own pain threshold. Dice the tomato, onion, jalapenos, bell pepper and pineapple rather coarsely. Then dice your peppers finely and mix them and the seasoning together. It doesn’t hurt to add a little of the pineapple juice and a splash of vinegar. The longer is sits the better it will taste. Salt and pepper to taste, and spread a little over your nachos. Remember that any reciepie is just a outline, you can adjust any and all of the ingreidents to your liking.Heck I hardly ever cook anything the same way twice unless I am working in a restaurant. You are ready to put your nachos on the oven heated to 325 degrees until the cheese is melted and your mouth is salivating. Serve with bowl of the salsa that you made on the side and enjoy. Now you might want to pair this with a burgandy because the spice in the nachos wil hilight the, to quote from Gastronomique, “they have an exquisite finesse of the bouquet and a flavour at once hot and delicate which last a few moments and leaves a sweet and fragrant after-taste, ruby colour of perfect limpidity and beneficient action on the digestive organs”. Another wine that goes well with nachos is the spanish creation of Sangria. You can buy it pre-made or make your own by getting a nice red and adding sliced lemon, orange, cloves and a cinnamon stick or two. Heat, but not to a boil and let it absorb the flavors and then chill or serve over ice cubes. You will notice that I do not specify any special labels for the wines I suggest because I leave the choice up to you. There are good wines at all price ranges and it depends on what you can afford on your budget that matters. Kitchen hint for the month: You can use the coarse grater side to get twist of orange, lemon or lime to add to many dishes. I use these twist in Thai soups and cream sauces not to mention in your cocktails. You can use the finer grate for a more delicate flavor in the same things. I also like to add them to some of my veggies in lieu of salt, to bring out the flavors without the use of salt. Also do not be afraid to experiment with different fruits and vegetables, herbs and spices. You know what you like.
OODLES OF ZOODLES!
There is a trendy piece of plastic in the cooking department that is getting a lot of attention. It’s a Spiralizer! When they first hit the stores 2 seasons ago, they were pricey and on every foodies Christmas list. It actually isn’t a new concept. I bought my first spiralizer in San Fransico in a Japaneese hardware store & paid a golden fortune. I thought this was so unique. The Japanese have been using the spiralizer to garnish platters for years. It’s an art to them. Now it is in stores in a cheaper version and affordable to everyone. Best of all, kids love to use it. Then kids love to taste the veggies they made into zoodles! It’s a win win situation. Spiralize carrots, zucchini, yellow squash, beets and mild radishes. Then make a ranch dressing. Watch the kids dip and eat their veggies,too! I let the kids at my cooking camp make a mix of 1 part mayo to 1 part Greek yogurt. Grate in a fresh garlic clove, a 1/2 teaspoon sriracha sauce( kids love it!) and chop some fresh herbs by rolling a pizza wheel over the herbs. We use chives, basil, parsley, and fennel. The kids zoodle the noodles, then crush & slice herbs. A very tactile and aromatic experience. Add a vinaigrette to make a fresh crunchy salad. Let it sit for a while & the zoodles become pickled. You could lightly steam the veggies and add fresh lemon juice, salt & pepper, or cover with a tomato sauce as a gluten-free pasta. Make potato nests~ toss zoodle potatoes with olive oil, salt & pepper, chopped rosemary ,optional. Fill greased cupcake tins with the potato zoodle. Bake 400* until golden. At this point you can let the nest cool a few minutes, then fill with sour cream or Greek yogurt, salsa, cheddar cheese or tzatziki. Make a breakfast nest by putting an egg in each nest and place back into the oven to just cook the egg. Also, when you zoodle potatoes, there is a small piece of the potato that remains and looks like little mushrooms. Toss those with Salt & pepper, chopped rosemary & creole seasoning and bake 400* until brown. There is another blade that comes with the spiralizer. It cuts flat spiral zoodles. This is great to make potato gratin and sliced apples and pears. The fun is just starting. I have seen a spiralizer machine in Walmart & Target for less than $20.00! There are zoodle cookbooks. This will be a new fun toy that both your kids and you can enjoy!
