Congratulations Pearl River for winning first place in our district “Cleanest City” contest. We will now move into State judging this week. Way to go PR! Our town is truly beautiful! Not only do we have a beautiful town, but we also have beautiful people that live in our town.

I had the privilege of attending a fundraiser at the Honey Island Fish House this weekend.

The VFW auxiliary post 5174 had scheduled this fundraiser for Ms. Judy Ellison to help with medical expenses. Jubilee Foods and Mizers Cost Plus Foods donated the majority of food for this benefit. Ms. Ellison went to be with the Lord just a few days before this scheduled event, but the fundraiser was able to go on as planned. There were 300 or more friends and family members that showed up in support of her memory and celebrate her life with her family. This single benefit was able to raise well over $1700 that will now go to her family to help with final arraignments. This is the kind of people that live in Pearl River. Loving, kind and caring, BEAUTIFUL! There will be two other fundraisers coming up in our town that you will not want to miss. The first fundraiser will be the Mayor’s Prayer Breakfast on Thursday, May 3rd, at 8am. This event will be held at the Sheriff Complex in Pearl River. This fundraiser is hosted by the Pearl River Ministerial Alliance. The PRMA is simply a group of local Pastors from different denominations across our town that have aligned together to be a blessing to our community. This prayer breakfast is a time where the leaders of our community, parish and state gather to lead us in prayer. The tickets are $10 each and all ticket sales for the breakfast go straight back to our community through a benevolence fund that the PRMA manages. This fund is set up to help those in our community that need help from time to time throughout the year. You can buy your tickets online at Eventbrite or call Jamie Polk at 985-863-3363.

The second fundraiser you will not want to miss is for scheduled June 9th. This fundraiser will be held for a lifelong resident of Pearl River, Lisa Polk. The benefit will be held at the Honey Island Fish House where you can purchase Chicken & Fish Plates. Lisa was diagnosed with triple negative breast cancer a few months back and has been undergoing numerous treatments.

All funds raised will go to help with the costs of treatments. Thank you to the many business sponsors and generous citizens that make each of these fundraisers possible.

Ginger Sweet ~ Pink & Red The term “Ginger” has been used over 100 hundred years to describe red-heads. Late 18th century references use “Ginger” as a nickname for red-heads. Britain had occupied parts of Malaysia, home to the Red Ginger Plant. Brilliant red, this fiery-headed plant caught the attention of many of the visitors to the country. Although the ginger root is not red, a lot of speculation has simply put the “Ginger” nickname down to ginger root, used in gooking to give foods a bit of a kick. Long ago, red-heads were steyo-typed to have a fiery temper(not everyone) fiesty and pungent like the root. Another theory is that those with red hair are called “gingers” thanks to ginger-flavored food, which tend to show an auburn, reddish tint; like gingerbread and ginger snaps. The molasses, not the ginger root gives the reddish color to the baked goods.

Even American TV has also been an influence to associate the name Ginger with the famous redhead, Ginger, from Gilligan’s Island. Another color for ginger is a pink blush. Why is the Japanese pickled ginger pink when the root is a cream color. Fresh picked ginger that is pickled will give off a natural pink glow. But commecial ginger has food coloring added to give it its pink blush. I use hibiscus flowers, Jamaican Roselle, to naturally color my pickled ginger. The exotic, warm spice, with a pungent peppery kick is no longer just associated with Japanese and Indian cooking. Today, ginger is used for its peppery heat in Fusion dishes and praised for its medicianal herbal qualities. Ginger is everywhere! Trending now is Ginger Beer in a Moscow Mule cocktail.

Pickled ginger, once exotic and international is served with sushi and California rolls. Who doesn’t love the Pink Japanese dressing? Candied ginger soothes a sore throat. There is even a Ginger Lime Coke on the market. Ginger is not only popular because of it flavor, but its fragrance

Place all ingredients into blender.

Pour over iceberg lettuce.

KEVIN DAVIS CONCERNED OVER COMPLETION OF LEVEE SYSTEM, PARTNERING WITH NEIGHBORING ENTITIES Former Parish President Kevin Davis says Slidell’s biggest problem is its general economy. The Slidell mayoral candidate says the city needs “career jobs”, not re-created lower paying positions in a mobile retail environment as Slidell moves from an old school mall into outlets such as the Fremaux Center. Davis, who served on the parish police jury and was the state’s Homeland Security Director under Bobby Jindal, feels he can work with economic development partners such as Stennis and Michoud, on a regular, monthly basis. Davis said he would be a hands-on mayor. “I’ll be out there every day to help create these jobs”. These were his opening thoughts during an interview with Northshore Plus Publisher Tony Onellion last week.

Davis said he would meet with owners of the vacant buildings and strip centers around town to foster ideas he has with them to repurpose those spaces - for educational or recreational activities. He said, however, there probably will come a time when some of the properties would be considered blighted and they would have be torn down and the footprint redeveloped. Non-financial incentives for these property owners would be used and those would be discussed as needed.

But Davis said all progress revolves around completing our levee system. With completion, insurance costs for flood protection will stabilize and businesses will have a chance to prosper instead of breaking even each year. Davis said most building owners he’s spoken to are essentially going nowhere financially because of nearly Draconian flood insurance rates and other related costs. Davis said the current levee system being structured now was his idea with portions completed recently along Highway 11 at the Schneider Canal. Davis said the system needs to reach and go behind First Baptist and to follow the railroad tracks about a mile north of the shoreline and the levee continue eastward towards Lakeshore and Kingspoint. Davis said funding still needs to be secured to complete the levee as he was able to do for much of the completed phases. Davis said he hoped this levee one day will be viewed as a secondary levee if the proposed 10 to 15 billion dollar weir at The Rigolets becomes a reality. Davis said his plan was formulated with the help of the LSU professor who discovered deficiencies in the New Orleans levee system some years ago.

Davis said the current levee plan was approved by both the Coastal Protection Restoration Board and the Corps of Engineers and were incorporated into their overall plans.

As far as tourism, Davis said the city is at a crossroads or more specifically, a few shoddy interstate exits where panhandlers and less than attractive scenarios exist. Even efforts by the lauded Keep Slidell Beautiful Committee are not enough to overcome some of the negatives,such as a lack of real landscaping projects hamstrung by lack of funding and support. Davis said the committee needs more resource help to continue their work, which Davis said he would provide immediately. “The city needs to lead, not other groups” was Davis’s thoughts as much of KSB’s funding has come from sources outside of the city. He said he would like to hear more positives about first impressions of Slidell, whether they come from natives or visitors. The former parish leader said his ability to form coalitions and foster cooperation would greatly benefit the city. He said the problems caused by the W-14 and W-15 canals was an outstanding example of where a five to ten year implementation plan for canal restructuring would greatly benefit the homeowners and businesses whose properties are being eroded by the haphazard implementation of canal widening and dredging that has existed. He said a plan is needed now, even if it takes a generation to complete. He said the parish has to be involved in this project along with others. Davis said the entire parish uses the same infrastructure so it makes no sense not to cooperate. As for the permitting process, Davis said it is vital to streamline it. “I created an ombudsman on the parish level to do this when I was parish president” said Davis. He said he wanted everything on line and wanted the city website redone so citizens can use it 24/7 and tell the city where their concerns lie. He said making the site more user friendly is achievable and would not cost a lot of money.

On other issues, Davis said he was a big supporter of Olde Towne but the neighborhood needs a destination since it’s not a area most visitors need to drive through. He said we need to use our technology to communicate activities in Olde Towne where a personshould be able to sign up for cultural activities and government information and be able to receive texts about events. Citing his hands-on approach, Davis said he would be in the forefront by promoting Slidell businesses individually. He would go to their stores and push their positives, not only those in Olde Towne but throughout the city.

Davis also said the city needs some presence on the lakefront and in any case needs to increase its boundaries. Young people need activities but so do all residents. He said he looks forward to seeing leadership develop to bring the community full circle. One issue Davis has as a pet peeve is the lack of high speed internet and wi-fi systems and services. He said research and development technology advances are more than partially dependent on internet provider cable lines that need to be vastly improved. He said if these services are upgraded, we could expect more tech companies to consider Slidell for expansion and with Stennis poised for increases in support businesses, Davis said it was imperative that we do so. He said he was able to bring five similar businesses into Slidell in the past. Davis also said we need to review zoning and planning, especially with the number of apartment units being built in a tightly structured area of town. “We may have to put a moratorium on construction, especially along a two-lane road. Do we have the right infrastructure to continue this growth without a plan?” were Davis’s thoughts.

Finally, Davis said he has no plans to expand commuter services between the North and South shores beyond the small van pools now in place. He said his goal is to have Northshore residents working as much as possible on the Northshore and specifically in the Slidell area.

MAYORAL CANDIDATE CROMER SEES RETAIL REPURPOSING, FLOOD INSURANCE AS SLIDELL’S BIGGEST CONCERNS State Legislator Greg Cromer’s platform for Slidell’s future begins at the crossroads of this community’s initiating a new beginning with the restructuring of the space industry’s purpose in southeast Louisiana. The mayoral runoff candidate spoke with Northshore Plus Publisher Tony Onellion concerning his views on the direction of the Northshore’s major city.

Beginning with the usual concerns about keeping the city safe from issues that could create negative input and the stagnation of retail trade over the past ten to fifteen years, Cromer said the city needed to move on with not only continued strong police presence but the restructuring of obsolete retail spaces by creating partnerships with Michoud, Stennis and Oschner, among others. He said the space program’s reinvention of itself through companies like Boeing and Rolls Royce will not lead to more than 25 to 30 percent of the lucrative employment in existence in the 1970’s, ‘80s and ’90s. The space launch system focus will not employ the same number of engineers, PHDs and high tech professionals who called the Slidell area their home not so long ago.

Cromer sees these partnerships creating incubators to attract support industries, such as computer companies and similar higher tech suppliers. He said professionals would welcome the chance to live in a community like Slidell. But he said we would have to work with retail center owners and management companies to provide them the opportunity to be willing to renovate their properties to work. For example, he said Northshore Mall might become a “one stop medical destination”, with folks going there for diagnostic work, medical checkups and procedures and consulting. He said the back side of the mall might be redone to include condominiums, where those working at the medical complex could live and find many of their basic needs, such as groceries, pharmacies and restaurants, on site. He said he plans to visit Monroe, Louisiana, where a former enclosed shopping mall has been repurposed into a medical center similar to what he envisions in Sllidell.

Cromer said a site similar to the biotech corridor in midtown New Orleans could provide trained manpower to the tech support companies locating here. “Stores that used to sell groceries could sell manpower, providing contract labor to suppliers”. On a parallel subject, Cromer said some of this trained labor could come from high school students in mentoring programs similar to programs already in place in the area in the medical and culinary fields. Cromer said some of “the engineer gray beards from our aerospace industry might be available to create this technology job training, giving young folks an opportunity to work at a professional position once they finish school instead of moving to Atlanta, Houston or Dallas.

Cromer’s background in engineering and insurance would provide much of the resource contacts he would need to initiate many of his concepts. Cromer is a former city councilman and has been in the legislature for many years. He said his ability to create relationships with people such as St. Tammany Parish President Pat Brister and many of the parish council members would be key in building the partnerships he refers to to move the city forward.

Cromer said Old Town Slidell could use the artistic talents already in residence to create a new, visitor oriented atmosphere, with signage and other public artwork. He sees this neighborhood vital in creating a brand for the city, fostering a destination attitude that would make shop owners come to the area to open boutiques, specialty shops, coffee houses and dining establishments and artisan operations that could give the area a similar feel to Magazine Street or Fairhope, Alabama. Another possibility would be an agreement with the Robert Torres interests along the lakefront that could open this underutilized area to native and tourist alike.

Turning to drainage and flood control, Cromer said getting certified and recognized by the Corps of Engineers is vital to reducing flood insurance premiums. He said the Corps needs to definitely know of our completed levee system structures and how they have drastically reduced the possibilities of a major flood event in the lower part of the city. He said they also need to be educated that the average person seeking flood insurance here is not looking for a second home or investment property protection but for protecting their on-site living and working structures. Without these assurances, Cromer said investors will not take a big chance on coming into the area, even as self-insured entities, because of the capital that would be tied up to assure replacement to financial institutions in case of flooding. He said it was important that the new mayor and the parish council understand the continued importance of keeping the W-14 and W-15 canals cleaned out and maintained at their effective width and depth to assure no hydraulic bottlenecks during heavy rains or storm situations will occur.

Cromer said the new mayor “has to be as much of a facilitator as a visionary”, He cited his professional experiences and his move from Bogalusa in the 1980’s, where a one-horse economy (the paper mill) fell on hard times and the city did not know how to respond, as benchmarks in his life in creating his philosophy. He said he would like to see the tech campus originally promised as part of the Fremaux Center complex, come to fruition once the state has the funds to give to UNO to create that campus. He said UNO would love to have a stronger presence on the Northshore because many of its students are from this area.

Most people are familiar with LSU AgCenter Super Plant program, a promotional program advertising tried and true plants that perform well in all of Louisiana’s climates. We promote different flowers, shrubs, and trees each year because of their exceptional beauty and endurance in the landscape throughout the state. The LSU AgCenter promotes LA Super Plants during the spring and fall. This spring, we are promoting three wonderful plants.

The INTENZ Classic Celosia, Celosia argentea, is a full sun loving bedding plant that will bloom from late spring well into the fall. Most gardeners should be familiar with Celosias. They perform well in hot summer gardens and provide vibrant color. The INTENZ Classic Celosia has bold purple flowers and nice attractive foliage. The flowers are very abundant and will last all season long. The flowers also produce nectar, which makes them extremely attractive to bees and butterflies. The plants will get about 16-18 inches tall and slightly narrower around 12-14 inches wide. The small compact size makes them an excellent choice in flowerbeds and containers.

One of the most common shrubs seen in and around gardens in the south is the hydrangea and they are hard to miss when in bloom. The LSU AgCenter is promoting the ‘Limelight’ hydrangea, Hydrangea paniculata. It produces a large panicle shaped bloom that creates visual impact in the garden. Its bloom period starts in early summer and will progress through early fall. Look to grow this hydrangea in an area that receives protection from the afternoon sun. It will grow about 6-8 feet tall and wide. The best thing to note about ‘Limelight’ hydrangea is that it blooms from first year wood. This allows the plant to be pruned late winter and early spring.

We don’t just promote pretty flowers with the LA Super Plant program. We promote all types of plants. The last plant that will be promoted for spring 2018 is the ‘Little Gem’ Southern magnolia. The southern magnolia, Magnolia grandflora, is a common site in Louisiana and all across the south. The big stately evergreen trees bloom pure white flowers. The LSU AgCenter is promoting a cultivar of southern magnolia called ‘Little Gem’. It produces smaller leaves and smaller flowers than the southern magnolia. The one thing that sets in apart is that it stays smaller and more compact. Little Gem magnolias grow to heights of 25 and 30 feet with a spread of around 10-12 feet. Their smaller size makes them great choices for landscape beds, patios and courtyards.

FRAGRANT FLOWERS

One of the trademark shrubs of the south, gardenias are popular choices for Louisiana gardeners. Their signature characteristic is the pure white, extremely fragrant blooms seen all through mid to late spring, lingering into the summer. Their evergreen foliage, heat tolerance and variation in size are a few other reasons on why so many gardener choose to grow them.

Like azaleas and camellias, gardenias prefer an acidic soil with an optimal pH range between 5 and 6. Have your soil tested through the LSU AgCenter to determine your soil’s pH value.

Elemental sulfur can be applied to the soil if you need to lower the pH. Be sure to choose a location that drains well, receives full to part sun and near your back patio in order to get the most out of your new plant. Follow proper plant spacing depending on mature size of each variety. Scales and whiteflies can be problematic pests during the growing season but can easily be controlled using horticultural oil or insecticidal soap sprays.

There are several varieties of gardenia available in the trade. All of which produce white, fragrant flowers. ‘Dwarf Gardenia’ is the lowest growing of all. It will get 1-2 feet tall and 3-4 feet wide.

It has a spreading type growth habit. ‘Frost Proof’ gardenia has an upright growth and tops out around 4 feet tall. It gets its name from the fact that it is more cold tolerant than other varieties but that isn’t really a factor in South Louisiana. The ‘Frost Proof’ gardenia was selected as a Louisiana Super Plant back in the spring of 2011 for its outstanding performance.

Queenie, a one year old tabby with beautiful calico colors, has come a long way since she first joined our list of homeless felines. She has always been shy around people but she adores other cats, especially kittens. She would love to have a family with a 6-7 month old kitten for her to play with. Queenie is a peoplewatcher who, like many cats, wants to see what’s going on without being noticed.

However, she really does enjoy having someone pay attention to her. She is very fond of cat treats and enjoys playing with her toys. A quiet home with one person and a friendly young cat would suit Queenie just fine! An online adoption application is available at START’s website.

This adorable little guy is named Kai. He is only about 14 weeks old but he has already had a very eventful life. A few weeks ago Kai was running around a big parking lot at a shopping center, trying to get away from cars and the well-meaning people who were trying to get him out of harm’s way. It took an experienced cat rescue person with a can of cat food and a humane trap to corral the terrified kitten so he could be taken to a foster home. It was immediately noticed that he was very dirty, probably from having ridden to the shopping center under the hood of a car, and his eyes appeared irritated. In spite of being examined by a veterinarian soon after being rescued and receiving medication for an upper respiratory and eye infection, Kai’s right eye became worse to the extent that now he may lose that eye. Smalls got her name because she was one of the two smallest kittens in a rescued litter of eight. When her brothers and sisters started growing, Smalls lagged behind.

It wasn’t long before she could not keep up with her bigger siblings. While they ran and played, Smalls sat and watched. Then, amazingly, when she reached seven months of age she began to grow! Now at 8 months she is running around making up for lost time. Smalls is very sociable and sweet, and she gets along well with the other cats and small dogs in her foster home. TIGERS SHOW OFFENSIVE POWER IN SPRING GAME The LSU Tiger offense may not be as feeble as I once thought it might be if last Saturday’s Spring Game is any indication. LSU showed about eight different offensive sets, half of which employed empty backfields.

And if the game Saturday is any indication, Myles Brennan is in trouble as the penciled-in starter at quarterback.

Since LSU can’t recruit marquee quarterbacks, the game showed they can at least recruit quarterbacks who can scramble and throw well. Despite a more experienced defense and promises by same of a shutout, the offenses ruled the day by scoring eight touchdowns. Many of them came on long-distance passes, delivered primarily by Justin McMillan and Lowell Narcisse, the so-called backup signal callers. Both of them showed a lot more moxie than Brennan, whose lack of mobility and inability to read the field for secondary and tertiary receivers led to one intentional grounding penalty and some pretty ugly potential sack losses.

For now, the 6’3” McMillan is the leader with Narcisse right behind him. Both kids have great arms and can move around and spot secondary receivers better than Brennan, who kind of reminds me of Steven Rivers, the lanky quarterback from about eight years ago and brother of Phillip Rivers of the Chargers, who never could get on the field and was well underweight. So is Brennan and the LSU recruiting trust has apparently made another mistake with this Mississippi youngster. Even though Brennan made the pass of the day, an NFL quality completion in the first half, it was too little too late for this third year sophomore. Now the coaches don’t have to worry about either McMillan or Narcisse transferring out of Baton Rouge. Brennan’s weaknesses were all too obvious on Saturday.

The other impressive performances came from Justin Jefferson, youngest brother of the underachieving Jeffersons of St. Charles Parish. This kid’s the real deal at receiver and plays longer than his 6’2” and more impressively than the other skyscraper wideouts currently on the Tigers roster. He will most likely start at one wideout along with Jonathan Giles, whose awarding of the Number 7 jersey seemed to be premature after watching his uneven performance in Death Valley last week. The DD’s, SS’s and JJ’s and similar-sounding other initialed receivers may be confusing to Tiger fans but Jefferson will definitely stand out among them. Look also for true freshman Terrance Marshall to win the third wideout starting role. His route running is smooth and he will be a factor this year. So will Clyde Edwards-Helaire, the 5’8” running back who looked similar to Dalton Hilliard on the field but with more speed and quickness. His performance assures him the starting role at running back with Alabama freshman Tae Provens looking like the apparent backup. As promised, this Tiger team will pass more than run and it won’t be the dinky-donky junk from recent years past. They may not win more than six or seven games but they will be more entertaining to watch than the previous offenses in the recent past.

WICKED PICKLED GINGER SYRUP

Luscious and peppery, with a distinct tang of vinegar!

Add over ice cream, chocolate desserts, cocktails, tea or add club soda for a homemade pickled ginger beer. I first discoverd this burst of flavor in a salad of kale and Chinese cabbage, with sweet peppers, sliced jalepeno, the bites of pickled ginger & grilled shrimp with an Asian vinaigrette. Party in your mouth! It’s candied pickle ginger gold!

1 cup raw turbinado sugar, 1 cup white sugar, 2 cups water, 1 cup pickled sushi ginger. Combine all ingredients in a sauce pan over medium heat. Bring to a rolling simmer, stir constantly, then reduce heat to a low simmer and allow to reduce for about 30 minutes to achieve a slightly thickened syrup. Cool in the sauce pan, then strain syrup into a jar or squeeze bottle. Keep in refrigerator about 2 months or freeze in ice cube trays. Let the ginger air dry in a single layer for a few hours, then place in a container, You can keep the ginger in the syrup, also.

PICKLED GINGER ~ BACON~ TOMATO KABOBS Luscious and peppery, with a distinct tang of vinegar!

Cooked bacon, cut into 1/2 inch squares, grape tomatoes, 1/2 inch pieces pickled or candied pickled ginger, small mozzarella balls, toothpicks. On a toothpick, poke a piece of bacon, ginger, tomato , then cheese. Repeat pattern. Chop fresh herbs of choice and sprinkle over the kabobs. I like Thai basil, Italian basil, chives or tarragon.
