Salsa Verde Bean Enchiladas Makes 6 Servings

2 cans (15 ounces each) READ Southwestern Bean Salad 1 teaspoon ground cumin 12 soft corn or flour tortillas (6-8 inch diameter) 2 cups prepared salsa verde 1-1/2 cups shredded Mexican cheese blend Optional Toppings: Sour cream, chopped avocado, fresh chopped cilantro, lime wedges Drain 1 can of salad; discard liquid. Place in food processor. Process until pureed but still slightly chunky. In large bowl, stir together pureed salad, second can of salad with liquid, and ground cumin. Spoon mixture evenly down center of tortillas. Roll up and place seam-side down in 13x9-inch baking dish sprayed with nonstick cooking spray. Pour salsa verde evenly over enchiladas. Top with cheese. Cover with foil. Bake at 350°F 30 minutes. Remove foil; continue baking 10 to 15 minutes until beginning to brown around edges. Let stand 10 minutes before serving with optional toppings, if desired.

Caribbean Pineapple-Lime Ice Cream Makes 12 servings Ready in 4 hours

1 (20-ounce) can crushed pineapple in pineapple juice, undrained 1 (14-ounce) can Eagle Brand Sweetened Condensed Milk 3 tablespoons fresh lime juice 1 teaspoon grated lime peel 2 teaspoons vanilla extract 4 to 5 drops yellow food coloring (optional) 1 cup heavy cream

1. COMBINE undrained pineapple, sweetened condensed milk, lime juice, lime peel, vanilla and food coloring, if desired, in a large bowl; mix well.

2. WHIP cream in medium bowl with electric mixer at medium speed until stiff peaks form. Fold into pineapple mixture.

3. POUR into 9 x 5-inch loaf pan or 2-quart freezer-safe container. Cover; freeze until firm, about 3

hours.

Press evenly in bottom of prepared pan. Bake 12 to 15 minutes or until lightly browned. 3. BEAT cream cheese in medium bowl with electric mixer on medium speed until smooth. Beat in eggs just until blended. Beat in sweetened condensed milk, vanilla and 2 tablespoons pineapple juice. Pour over warm crust. Sprinkle drained pineapple evenly over top. 4. STIR coconut, macadamia nuts and butter in small bowl until evenly moistened. Sprinkle over pineapple layer. 5. BAKE 30 to 35 minutes or until filling is set and coconut is lightly browned. Cool 1 hour on wire rack. Chill 1 hour. Cut into bars.

Sausage Won Tons

Makes 15-20 appetizer servings 1 pound sausage, cooked and crumbled (hot, medium or mild) 1 1/2 cups shredded Monterey Jack cheese 1 1/2 cups shredded cheddar cheese 1 cup ranch dressing 1 package won ton shells or squares Preheat oven to 350°F. In frying pan, crumble sausage and cook over medium-high heat. Drain fat from fully cooked sausage, mix in bowl with cheeses and dressing. Grease two mini-muffin pans very lightly with baking spray. (If you don't have mini muffin pans, regular muffin pans will work.) Place one won ton in each muffin space; gently push down so that the square corners of won ton shells are standing straight up. You are creating space for the filling. Drop a small amount of filling into each cup (you should be able to fill two mini-muffin trays). (Or, use just half of the mixture and freeze the rest to pull out when unexpected guests arrive. Just be sure to have won ton shells onhand.) Bake at 350°F for about 10 minutes, but keep your eye on them. The edges of the won tons brown quickly - watch for golden brown color. Remove from the oven and serve warm.

Youth Acting & Musical Theater Camps The Omaha Community Playhouse offers week-long youth acting camps for ages 4-13 and a two-week musical theatre-intensive academy for ages 12-18. All camps taught by OCP teaching artists. Perfect for the kid a little on the “dramatic side!” Prices vary from camp to camp. Camps take place from June to July.
