Introduction Tokwa’t Baboy is a traditional Filipino appetizer composed of boiled pork (either or both pig’s ears and pork belly usually) and fried tofu. The sauce made of vinegar and soy sauce gives life to this dish. Most people like to have their Tokwa’t Baboy with beer or wine by the side while others love to have it with rice porridge such as Arroz Caldo, Goto, or a simple lugaw.

1/2 kilo pork (cut into chunk cubes) 5 pieces tokwa (bean curd or tofu) 2 heads garlic (minced) 1 cup vinegar 1 cup soy sauce 1 teaspoon salt 1 teaspoon brown sugar 3 small onions (diced)

Cooking Instructions 4


ď‚—Step 1. In a casserole, boil

pork in just enough water with salt, lower fire and let simmer until pork is tender. ď‚—Step 2. Take the pork out and set aside.

ď‚—Step 3. Fry tokwa in hot oil until

toasted and slice to the same size as the pork.

ď‚—Step 4. In a saucepot, mix

vinegar, soy sauce, salt garlic and onions and heat for just a few minutes. ď‚—Step 5. Pour in mixture over pork and tokwa. Garnish with fresh onion rings then serve.

Observation and Implication ď‚—When I was preparing the

tofu, I did not have enough space for chopping. I was a bit distracted because the space is too small for the entire preparation.

When doing kitchen designs or layouts, give importance to the space to be allocated for preparation. Chopping and slicing are two dangerous kitchen activities that require focus, so, to avoid distractions, enough spaces for these are a must. 10


ď‚—Our cook top is exposed to air because

of too much openings and therefore extinguishes fire from time to time. ď‚—When I was doing lots of things at a

time, I had problems on where to put ingredients and utensils so, I just put things where there is space. This makes a disorganized manner of cooking and sometimes leads to cooking failures.

Proper openings and ventilation must be considered in designing a kitchen. The function must be prioritized over aesthetics. In designing a kitchen, one must put into consideration the way a cook cooks. A lot of dishes requires a lot of ingredients and therefore designing a sort of organizer (for kitchenwares)will help a lot.
