CHEESE BREAD Serves 1 2 egg yolks 1 cup (250 ml) cream 1/2 tsp (2 ml) dry mustard 4 oz (113 g) aged white cheddar cheese 1 oz (28 g) butter salt, pepper, to taste

Whisk egg yolks, cream, and mustard until slightly thickened. Grate cheese, add it and butter, continue to whisk until smooth and fully cooked. Season with salt and pepper, pour over thick toasted bread.
