WORLD BREAD DAY LUDHIANA NFCI Ludhiana, celebrated International Bread Day, where breads were prepared by the students under the supervision of chefs with the special focus on British breads. There were seven kinds of breads that were prepared to celebrate the day; namely, Crumpet, Stottie Cake, English Muffins, Bara Brith, Barley Bread, Pain de Mei and the Dripping Cake. Talking about the breads prepared: Crumpet is a one inch deep round bread that looks like a quite thick pancake, but only 4 inches wide. Stottie Cake is a flat off-whitish bread that originated in North- East England. English Muffins are the same size as mentioned for Stottie Cake. This has bread-cum-sponge like texture from the inside. Resembling a Plum Cake, Bara Brith is bread that is well flavoured with raisins and sultanas. Highly nutritioned with protein, calcium and vitamin B, Barley Bread is made of a grain derived from the barley plant. Pain de Mei is very soft bread with almost no crust on the outside. Lastly, Dripping Cake is prepared using a sponge that contains spices, raisins and currants. It is then layered with whipped cream like an icing cake, thereafter; ganache is dripped from the top of it. In order to utilize the wastage (off cuts) of the bread, our chefs lead the students and created a model of the LONDON BRIDGE, to highlight the theme of the day. Accompaniments included smoked butter, extra virgin olive oil with balsamic vinegar, green pea and ham pudding, tzatziki, peanut butter, tomato salsa to make bruschetta, ginger honey sauce, hung curd with spring onion, hung curd with honey, smashed avocado, caramelised onion, berry compote.
