This strong passion for food led him to the California Culinary Academy in San Francisco. After earning his A.A degree, Roberts headed back to his hometown to become a rounds cook (chef tournant) at the prestigious Highlands Inn Restaurant. According to Roberts, “It was at Highlands Inn where [my] true culinary training began.” Roberts later moved to Southern California and worked at Hotel Bel-Air before joining the team at Zax in Brentwood where he met his future wife, Williamson. He then traveled to New York City to work at Café Boulud before returning to the West Coast to open his own restaurant business.
