How do you reboot/detox? In the New Year/for a special event? Before special events, I have a routine with my dermatologist that revolves around a serious of treatments from PRP, mesotherapy, profhilo and other procedures that aim at celebrating my natural beauty and the quality of my skin rather than going for easy fixes like fillers. Having a healthy lifestyle is a long process that I commit to alongside having meals that give me enough nutrients and energy for my appearance. Sleep is an important factor as well in keeping everything in balance that we all need to shine and glow. I want to emphasize the importance of mental focus and wellbeing here and knowing when to reach out to professionals when needed and this is something that I genuinely believe in and try to make less of a taboo. When it comes to mining gemstones, Gemfields holds three key values to the highest of standards: transparency, legitimacy and integrity. As the world-leading supplier of responsibly-sourced coloured gemstones, the group’s CEO Sean Gilbertson explains how Gemfields puts responsible sourcing at the forefront, always WORDS: OLIVIA MORRIS

LEGITIMACY. Gemfields was founded in 2005. How has the brand evolved since then? When Gemfields entered the coloured gemstone sector, the industry was fragmented, largely small-scale, unregulated and not delivering a reliable supply to downstream clients. For more than a decade now, Gemfields has implemented industry-leading policies and practices across our mining operations and played an active role in working groups to modernise the sector. We have created projects to improve health, education, and livelihoods for the communities around our mines and have supported conservation efforts to protect Africa’s wildlife. Our work has shown that responsible, large-scale mining and a transparent auction system can deliver a consistent supply of precious gems, vital to the sector’s future growth, and bring about significant contributions to host communities and governments. Over the last 10 years, Zambia and Mozambique have become the world’s number one exporters of emeralds and rubies respectively.

Is it true Gemfields produces around 25 per cent of the world’s emerald supply and around 50 per cent of the world’s ruby supply? How do you ensure your stakeholders and consumers have confidence in what you’re producing? We estimate the figures are actually higher! Both mines today are the largest in the world delivering some 60 per cent of mined rubies and 30 per cent of emeralds worldwide. As pioneers of responsible gemstone mining, we have institutionalised the grading and auction of rough emeralds and rubies. We invite government officials from host nations to attend and supervise the entire process and we publish all data. All of our auction customers are vetted and our gemstones are sold via an auction platform with a transparent, repeatable and consistent point of sale. This platform is also very important as it reduces risk in the supply chain for the jewellery brands that buy from our auction partners. We see ourselves as the custodians of our host countries’ gems with the duty of

achieving the best possible price and repatriating the full proceeds to the country of origin to ensure maximum benefit for hostcountry citizens and local communities. To that end, we recently launched ‘The G-Factor for Natural Resources’, an indicator of the share of natural resource wealth paid to a host country’s government. Through this announcement and by publishing our own five-year revenue contributions of 30 per cent to Mozambique and 24 per cent to Zambia, we invited other mining entities and organisations like The Extractive Industries Transparency Initiative (EITI) to collaborate in further increasing transparency in the sector. What is the environmental effect of mining gemstones – how is Gemfields combating this? Before starting full-scale mining operations, we carry out environmental and biodiversity studies and involve the local communities, to ensure that their needs are always accounted for within our plans. We go beyond just adhering to national regulations. To ensure that we operate with the highest possible standards, we align our approach to the broader strategic aims of the United Nations Sustainable Development Goals as well as the management of environmental risks through international management systems. We are realistic and open about the impact of mining on the environment because what we do, does have an environmental impact. Using environmental and biodiversity studies to guide us, we aim to meet and exceed international best practices to mitigate the effects of our operations and incorporate the subsequent management plans into our mining operations long-term. We limit our impact by back-filling our open-pit mines, collecting seeds of indigenous plants and trees from the topsoil and creating plant nurseries for replanting vegetation in order to return the land to its original state at the earliest opportunity. There are no hazardous chemicals used in our processes and we recycle the water used in our wash plants. When did the focus shift for Gemfields to ensure gems are responsibly sourced? Since launching, Gemfields has championed responsibility across the coloured gemstone sector. Our goal has always been to operate in a way that contributes positively to national economies, takes a leading role in modernising the coloured gemstone sector and builds lasting livelihoods for the communities around our mines. We believe that coloured gemstones should be mined and marketed by championing three key values: transparency, legitimacy and integrity. Environmental, social and good governance (ESG) practices lie at the heart of

our business: these back up our brand statement and support our efforts to play a pivotal role in improving the credibility of the entire coloured gemstone industry. We both lead with our own standards and initiatives through the downstream supply chain and work with brands and other industry partners to standardise strong, transparent practices across the sector. Initiatives include the Coloured Gemstone Working Group, of which we are a founding member, and we aim to join and be Responsible Jewellery Council (RJC) certificated. In terms of shifting your focus, did this affect client retention at first? Or have you found jewellery houses – both well-known and upand-coming – are responding to this ‘responsibly sourced’ message? Responsible sourcing is increasingly important these days as many consumers want to know where their products and materials have come from and coloured gemstones are no different. Leading jewellery brands are increasingly, and rightly, focused on responsible sourcing and much work remains to be done. Our core values of transparency, integrity and legitimacy speak directly to these concerns. Mozambican rubies and Zambian emeralds from Gemfields give back to the local communities, ensuring a positive impact at the place of origin. Our ability to demonstrate our responsible practices and provide gemstone provenance is a key differentiator when it comes to purchasing coloured gemstones and as responsible sourcing receives ever-increasing attention and becomes progressively more important to consumers, gemstone provenance may become a key driving factor.

What trends in stones, gems and jewellery do you see when it comes to the Middle Eastern market? As well as supplying the majority of the world’s rough rubies and emeralds, Gemfields initiates activations to build a desire for coloured gemstones. As a result of our marketing efforts, we are seeing increased awareness and demand for coloured gems, in addition to a growing consumer understanding of a gemstone’s origin and how gems can be responsibly mined to have a positive impact on the countries of source. We’re also seeing an increasing awareness of African gemstones and appreciation of their quality, resulting in stronger demand. African gems are just as rare, unique and captivating as the more established provenances such as Burma or Colombia. Which jewellery houses do you work within this region? Gemfields’ owned Fabergé has a retail presence in the market and a number of other brand partners also sell privately in the region including Bina Goenka and Fehmida Lakhany. We partner with jewellery brands that have a like-minded approach to responsible sourcing, and our plans for this year are still under wraps but we very much look forward to sharing these with you when we can. Often surprising, unexpected and unique, our collaborations are chosen to promote consumer awareness and increase the appeal of coloured gemstones, raising their profile, and, in turn, providing greater benefit to their place of origin in Africa. Beyond just mining the gemstones, how do you ensure the entire process of Gemfields is producing a positive impact on the environment and society? As primarily a mining company (though we also own Fabergé), our principal focus when it comes to responsible sourcing lies at the heart of the business: the mining operations in Mozambique and Zambia. This encompasses environmental management, health & safety, community engagement, fair labour and employment standards and human rights. But beyond this, how transparently we export and sell the rough gemstones and support wider industry best practices also play a pivotal role. At our mines, this means following best practices wherever possible. We champion organised, large scale and controlled mining operations, the sensitive and appropriate use of security to protect our people and hostnation gemstones, working practically in partnership with communities to create livelihoods projects and managing the impact on the environment on a continuous basis. We typically invest up to USD2 million (depending on auction results) into our local communities each year in education, agriculture, health and conservation projects. business has experienced? The jewellery industry is ancient and therefore traditionally opaque without a consistent way of valuing gemstones. We’re trying to change this by being open about our revenues and taxes and selling our gemstones via an auction platform to provide authorised auction partners and government officials with a transparent, repeatable and consistent point of sale. This platform is important for the jewellery brands who buy from our auction partners in order to close the gap of uncertainty in the supply chain and minimise this opaqueness. What’s next for Gemfields? At the heart of all of Gemfields’ operations is a desire to return significant value to a gemstone’s country of origin, in addition to funding projects that benefit both local communities and conservation efforts. The search is now underway for an appropriate blue sapphire deposit for Gemfields to put its name to, and which would complete the “big three” trio of operations in Africa. Gemfields believes that coloured gemstones should be mined and marketed by championing three key values: transparency, legitimacy and integrity. We are proud of our leadership position in this field. The combination of increasing awareness, setting standards within the industry, operating transparently across the supply chain, pioneering traceability initiatives, and providing a consistent, reliable supply will help combat obstacles and challenges and thereby provide confidence in Gemfields. Finally, we always encourage people to ask questions. There is much information online and on social media about the coloured gemstone sector and about companies in it. So, when in doubt, ask! More trust should be put in those people and companies who transparently answer the questions, and less in those who don’t!

Founded in 2019, it’s a luxury, sustainable niche fashion brand which offers limited editions of unique abayas and kaftans. We offer a modern twist to garments and guarantee a long-lasting impression with an eye for detail and uncompromised attention to fabric quality. The team selects fabrics from sustainable international suppliers and hand pick the most exclusive from the best manufacturers. Next year, we are going to launch a ready to wear collection as a part of the brand strategy expansion. The brand is committed to keeping no stock. Can you talk us through the process in order for consumers to purchase from .BEYOND? This is one of our main pillars in terms of sustainability which .BEYOND is committed to. The concept of .BEYOND is to produce quality over quantity which enables us to keep no stock. When we launch the new collection, it consists of only a few pieces of each style. We build strong relations with our suppliers and they understand and support our concept which allows us to offer pre-orders. Currently, I am spending way too much time on the phone, scrolling through various social media accounts. what makes you feel confident? Discovering how to be self-confident is not an overnight process, it takes a lot of time and self-awareness – it’s an ongoing journey. I believe happiness is a critical element of confidence because in order to be confident in what you do, you have to be happy with who you are. What helps me to feel confident are the following tips: Positive self-talk – no one is me, and being my authentic self is my superpower, perfection does not exist, and instead of comparing myself to others, I try (as much as I can) to be the best version of me. Also genuinely celebrating my successes with other like-minded people genuinely makes me more confident. How can we support others to feel confident? I genuinely believe that if your tribe grows, you grow with them, and by authentically supporting and celebrating other people’s, especially women’s successes, you help them feel confident, any victory big or small is a victory.

At almost 40 I’ve spent years and years trying to avoid it, the idea of not having what I’ve told myself was/is freedom used to send my blood pressure through the roof! I’ve now finally realized that in fact, the only way to have that freedom is to indeed set a structure and follow it – so my first investment will be a giant physical calendar that I can’t escape from. As basic as it sounds I’ve got a feeling it will be pretty game-changing.

Not only when you’re operating from the level of a business owner but for anyone seeking to operate at their highest frequency and thereby their most confident selves. I’ve found that most people are quick to offer advice without truly hearing what the other person is saying be it an employee, friend or family member. If anything, I actually want to invest in time for myself. Time is priceless yet extremely valuable since time wasted is something that we can never get back. I want to dedicate my time to reading the books I bought over the past two years, to learning new skills as well as practising and perhaps teaching yoga. Something I’ve learnt growing up is that time really is precious. Personally, investing in time also means that I’ll get to enjoy the little things in life like the unrolling of my yoga mat and the smell of freshlypicked blueberries. It’s these simple things that add value to one’s life. Additionally, I want to respect time by turning off unnecessary distractions, taking breaks to clear my mind and most importantly, I want to take the time to care for my body and listen to it. By acknowledging time, I can pause, take a minute to myself and then I can properly continue to grow and thrive. Aside from time, I want to invest in my own life. I want to be able to set my own path and to live by design rather than the default, to not react to whatever comes my way and instead try to take charge of my life and its direction. My achievements throughout the years, looking back and realizing all that I have already accomplished excites me to move on and go even further. Confidence for me also comes

in the shape of acceptance. Not seeking validation from others and surrounding myself with people who have ambitions and goals is key. What do your first 30 mins of the day look like, your morning routine? My mornings always begin with 2 huge glasses of water, whilst I’m working my way through these, I’m preparing my first batch of coffee for myself and my wife. Whilst the coffee is brewing, I take my dachshund Teddy outside, which also gives me the opportunity to get exposed to some natural light, which has been shown to be one of the best ways to naturally energize the body first thing in the morning and maintain a healthy circadian rhythm. Whilst preparing Teddy’s breakfast I’ll work through a cup of coffee, before jumping in the shower, which over the last couple of years always ends with 15 – 30 seconds of coldwater exposure to help naturally boost energy and alertness further. What are the pillars of the brand and how did you define why these were important? Workshop is a brand that is trusted, has personality, is empathetic, and has purpose behind everything we do. These brand pillars have become identified as the brand has evolved, and our identity has been formed. There is also trust gained in that we now have a global network of gyms, having the ability to have a client’s programme, likes/dislikes, injury history etc. seamlessly shared amongst all of our coaches around the world. A client doesn’t have to worry when they are travelling about their workouts, if they train at one of our facilities they know that the trainer they will be working with will know their programme and personal preferences just as much as their regular trainer does. Understanding early on that we’re working with humans and not robots it became very clear that we need a team of different personality types to match our customers’ personality types, which enables our coaches to connect and build strong bonds with our customers, which perfectly leads into the next brand pillar of being empathetic. This is such an essential trait required to pull the best out of someone, the ability to read a customer, know when they need some tough love and when a little more compassion needs to be shown, this is the art of what I believe our coaches do best. And finally, having purpose behind everything we do, whether that’s purpose and reasoning behind how a customer’s training programme is designed, purpose behind the products we bring to market and that they will actually add value and benefit to a customer instead of just making a quick buck. How did you know it was the right time to make the leap and launch something for yourself? I had worked for another company for just over 7 years and having gone as far as I could within that business, I left them to work full time with one client, which I knew at the time wasn’t a longterm solution, but it was what I needed at the time. After about 6 months the Bulgari Hotel in London knew me and wanted to have a training concept that they trusted and that would enhance their offering to guests, which is when they approached me to launch what has become Workshop. How did your previous roles prepare you for this leap and is there ever a right time? What my experience has taught me is that there is never a right time to launch a business, we all have to start somewhere, and the reality is there will be parts of launching a business that we’re completely inexperienced in, but that’s when most of your evolution as a business owner comes from. My previous role taught me a lot of lessons as I started with the business when it was relatively small, so I got to see some of the mistakes to avoid, but at the same time got experience at helping a business grow in every aspect, from marketing, PR and more. How does being able to think outside the box equip you to build a strategy that scales the business? I think it’s very easy to fall into the trap of replicating what other successful businesses do, and without a doubt success definitely leaves clues which can be useful to incorporate into your own business, but at the same time developing your own strategy helps. That being said when we launched our second location in Milan, I thought that we would just replicate the template of the business model in London, but Italy had different regulations, which meant we had to adapt the business model slightly, and the same when we launched in Dubai and China.

Do you feel more drawn to the creative or the business side of the brand? Ironically this has been something I have mentioned more and more recently, that as the business has grown the aesthetic and creative part of the business has been something I have come to care more and more about, so much so over the last year I have actually begun learning photography. I figured in this day and age the ability to showcase a brand through imagery and video is becoming everything, so if I can capture this in an aesthetic that I feel best showcases the brand then it can be a benefit. What has been the biggest challenge since launching and how did you navigate it? The biggest challenge undoubtedly which I still struggle with even today is having the discipline to step away from the gym to work on developing the business. I love being in the gym training clients and I love being in the gym with our team of coaches when I should be in our office working on all of the other components of the business. This is slowly changing but without a doubt this has been the biggest challenge. You’ve also branched out into supplements – how did this come about? Honestly this was born out of the demand from our clients, we developed our supplement line back in 2018 to be used just within the gyms, and as customers would experience them more and more the demand to bring them to the general public grew. It really is a product range developed from demand and the level of purity in the products is unrivalled. Do you have any mentors or guides and how does this help navigate the right path? My business partner Hani Farsi has been an incredible calming presence during times when I think everything is falling apart, his experience and confidence at times have been invaluable. I’m also fortunate to be surrounded by incredible clients who are some of the smartest, most successful people in the world, and over the years I’ve always picked their brains on some of our business ventures. I’ve always enjoyed talking business with Anthony and David de Rothschild, who have been friends and clients of mine for over ten years. Patrice Cohen and Jordan Cook have always given me great business advice and Nassef Sawiris has always taken the time to allow me to pick his brains when needed. The one common theme all these super smart people share is they are able to ask me 1 or 2 questions which straight away helps me figure out the answer. What advice would you give to your younger self starting out? Don’t be scared to ask for help, it isn’t a sign of weakness, always go with your gut feeling, it will likely lead you to the right decision, and always sleep on a tough decision, it will likely always appear better by sleeping on it. You have global locations – tell us more about how you scaled this and how you retain consistency on a wider scale? We established the business within the Bulgari Hotel in London in 2014 and following a successful year where our customers were happier than ever, our trainers were happy and the hotel was happy with the level of guest satisfaction, media coverage and revenue, the hotel group was watching what we were creating in London and wanted to have

us as a part of their global portfolio of properties. Fortunately for us this coincided at a time the hotel group was expanding quickly, so from 2016 – 2018 we expanded from 1 location to 6 locations globally. We managed to retain the quality of each location by creating a strong management team when launching and the majority of our management team had been an experienced member of our London team, so they were able to instill the culture and oversee the training quality amongst the local coaches that we work with. On top of that all training sessions are recorded and tracked, so we are able to help oversee the quality of the training sessions being delivered from any of our locations. How important is selecting the right brand ambassadors in this? Our ambassadors have played a really important role, particularly in regard to our exposure within the media and marketing. The likes of Zara Martin and Gala Gordon are always trying to help the brand awareness in whatever way possible, which is something I’ll forever be grateful for. This is The Confidence Issue – what makes you feel confident? Easily my wife, the fact that she married me fills me with the most confidence possible, but in all seriousness at certain times, such as when I wasn’t sure about launching the business and the times when I’ve doubted myself, she has always said the right thing to help me get over the line in whatever thing I’m struggling with. She worked within the business when we launched and 100% the business would not be where it is today without her initial involvement when we launched. At the same time, she is also my toughest critic and will call me out if I’m dropping the ball on something.

FOUNDER – PILATES BY BRYONY What do your first 30 mins of the day look like, your morning routine? The mornings are really sacred to me and set the tone for my day. I wake up between 5:30 and 6 am during the week as I like to have a slow and calm start, with an hour to myself, before my first client. Every morning I take my time and make a Matcha using my favourite Enso Matcha powder, its a ritual for me and I climb back into bed to drink it. I always have my morning playlist on too, it lifts my mood and gives me a burst of energy first thing. What are the pillars of the brand and how did you define why these were important? My brand and ethos is about movement that serves the mind and body and challenges without breaking it down and putting it through stress. I also believe in the power of live classes, I’m passionate about form and the precision behind each movement that I put my clients’ bodies through. I want my sessions to create transformative long lasting and sustainable results. If a client tells me I have given them confidence in their own skin again, it truly is the most amazing feeling. The strength of the relationships I have built up with my clients is at the heart of my brand. How did you know it was the right time to make the leap and launch something for yourself? I have always been entrepreneurial since a young age so it was never a question that I wouldn’t work for myself and build a brand. I have developed two other businesses in the past and have learnt a lot along the way. I have always been extremely mindful of health and wellbeing and the importance of truly treating your body like a temple, for me Pilates encapsulates all of this. It felt so natural for me to be doing Pilates, I feel so grateful to have found my calling and purpose, doing something I love.

How did your previous roles prepare you for this leap and is there ever a right time? I have worked for the most amazing and inspiring brands such as The New York Times, Cosmopolitan magazine and Bare Minerals in various roles. I then went on to launch a swimwear and a corporate wellbeing company. The common thread was that I loved making people feel good and the best possible version of themselves. To be able to learn from every experience and challenge is a real opportunity for growth. There is never a right time and you’re never “ready” but I am a believer in just going for it whole heartedly and figuring it out along the way! You train clients both 1:1 and over digital – do you feel a combined approach works best or is it possible to see results from digital classes only? I have clients who solely do digital as this fits their busy lifestyles and others that prefer a mixture. During lockdown we realised that we can use technology to achieve great results. Using digital platforms has meant that people from all over the world can join my weekly live group classes and train with me and my team. I give guidance on form and demonstrate different options so that everyone can participate fully, based on their level of experience. Do you feel more drawn to the creative or the business side of the brand? To be honest both, I studied for a degree in fashion business and have always been excited by the business side but equally enjoy seeing a concept come together visually. What has been the biggest challenge since launching and how did you navigate it? I have been extremely lucky to have the most kind and supportive clients who have helped my business to grow at a speed that feels almost overnight. Managing growth whilst maintaining balance in my own personal life is something I have had to navigate. Routine and structure is where I thrive, so giving myself boundaries has helped and knowing when to say no, and that actually saying no is sometimes the best thing you can do. How often do you need to commit per week to Pilates practice to really see a transformation? I work with my clients on a minimum of 10 sessions per month, 2-3 hours per week is an achievable and realistic amount for people to see real progress and stay consistent. Consistency is what achieves the results. I share my energy and passion for Pilates with everyone that I train and in turn they become devotees of the practice. I’ve never had a client take more than a week off! Do you have any mentors or guides and how does this help navigate the right path? I don’t have one single mentor but I am incredibly keen to learn and develop, so I try to soak up everything I can from as many experiences and people as possible. I am lucky to have been raised by two amazing parents and have a tight knit group of very supportive and inspiring friends. What advice would you give to your younger self starting out? Have more confidence in yourself, trust the process and don’t sweat the small stuff. Everything that is happening is leading you to your calling and your alignment so just be you, work hard and take lessons from every challenge and experience. This is The Confidence Issue – what makes you feel confident? Prioritising health and wellbeing makes me feel calm, in control, happy and in turn confident. I then feel clear headed and energised to wake up with a purpose every day. I read a lot of self development books and I love to journal. breakfast on some days. Sport has always played a crucial part of my routine and it allows me to start the day with a full battery. What inspired you to start Wild & The Moon and how did you scale the brand globally? When I moved to Dubai, there was clearly

a lack of healthy restaurants and awareness around good food. As I opened my concept store, Comptoir 102, I realized I would have to open a healthy café with it, even if it would be only for my friends and me. Unexpectedly, it was a huge and immediate success, and I soon had the choice to develop the Comptoir 102 cafés, or to push the concept a little further and create something new entirely. I went with the latter. With Wild & the Moon, I wanted to create the first global brand of super healthy, plant-based food gathering a community of mindful eaters around it. We started with one restaurant in Dubai, and a few years later, we have 10 restaurants in 4 different cities, with more coming up. What is your own personal approach to wellness? Wellness is about feeling good, eating healthy food in good company, sharing life’s pleasures, having fun and doing the sport you like. I see too many people forcing themselves into eating healthy bland food or following a boring exercise programme, because they have to. Wellness is inhabiting your body and treating it well, not punishing yourself. Do you take supplements or add protein on a daily basis? I believe in real food to provide your body with all the nutrients it needs. A well-thought out plant-based diet is loaded with vitamins and nutrients and gives you more than enough complete protein. Rather than supplements, for add-ons, I like to use superfoods, which are whole plant powders such as spirulina. I love to use it as a spread or with one of our home-made mixes with pure plant power. You have an effective detox programme – can you tell us more about it? I strongly believe in the power of fasting as a way of regenerating the body. Not just because of the science behind it, but because I experienced it many times myself. Each time I do a detox, I feel much better, lighter, my skin clears up and brightens, my digestion improves, my mind is sharper, and I feel completely re-energized. It is magical. For our detox programme, I didn’t want people to feel hungry, frustrated or deprived. With a team of experts, we developed a tasty detox programme with a massive boost of vitamins, nutrients, antioxidants, and joyful colours, which, I think, is the reason of its success. How do the Middle Eastern preferences for vegan food differ to those in Europe? French people tend to be a little conservative when it comes to food, while Middle Easterners are more adventurous. But maybe it is just an impression and the fact that the Middle East has a younger demographic profile. The vegan movement is spreading globally, and for

many, it is not necessarily dogmatic, nor is it about giving up anything, but simply about eating more consciously, being aware of the choices we make, and re-introducing more whole, plant-based food onto our plates. What piece of advice would you give to your younger self? I wouldn’t go back and give my younger self advice. Life is also about embracing your own experiences, and with it, its fair share of mistakes, for we only succeed by trial and error. I prefer being grateful for my imperfect youth because it took me to where I am now. I am happy with the choices I made and lucky my parents taught me to believe in myself and go for it. What recommendations would you make for anyone thinking of adopting a vegan or partvegan lifestyle? It’s important to realise you can keep on eating the things you love. Being plant-based does not mean renouncing your favourite dish and replacing it with seed porridge and purple dragon fruit. You could start by replacing just one of your weekly meat-based meals with a plant-based one that you love. Be it pasta with a rich tomato and basil sauce, a steaming bowl of soup

Where does your love for food come from? My father who worked in the Hospitality industry gave me the passion for this profession. What brought you to Dubai? My first job was in Dubai, for the opening of the One & Only Royal Mirage. For 3 years, I was mentored by Lew Kathreptis. Several years later and

after some experiences around the world, I was back in Dubai, where it all began, for an exciting and challenging project: La Cantine du Faubourg. Talk us through the concept of Gohan. The main guideline when it comes to Gohan was to get as close as possible to authentic

Japanese food with a twist of modernity and street food. I wanted the concept to be straightforward in terms of taste but also accessible and not fine dining. What are the hero dishes at Gohan? Among the most popular dishes, there is the Miso soup with spicy crab and tofu, the Chawan mushi with caviar, the Shrimp okonomiyaki, Black Angus beef & cheese, Crispy Chilean sea bass and the Matcha sponge cake of course! What sets the F&B industry in Dubai apart from the rest of the world? The Dubai F&B industry is particularly interesting as it reflects the mix of cultures and nationalities we can find here. The spending power is also very high in Dubai, so it allows us to provide and work with good quality and high-end products. Describe the process that goes into curating new menus and new dish ideas. Personally, my main inspirations come from books. Travelling is also a great source of inspiration as it has been for Gohan with my travels to Japan. What have been the milestones throughout your career? My career choices have been guided by some chefs such as Lew Kathreptis and Gordon Ramsay. A big milestone was when I won a Michelin Star for the French restaurant L’Auberge à la Bonne Idée. The objective was loud and clear: I head the kitchen, I do whatever I want to do, but I had to get a Michelin star within two years. And so I did. Another milestone is when Gordon Ramsay called me to work in Qatar by his side to open two restaurants at the Saint-Regis and then two in Hong Kong. Finally, I am now back in Dubai where my career began. I chose to join La Cantine du Faubourg as the Executive Chef for the optimistic dynamic and I am now Corporate Chef of the Group. What’s next for Gohan in 2022? Among all the projects and ideas for Gohan, the goal for me is to maintain the consistency of the venue.
