BERRY YOGURT POPS TIME: Prep 15 min - Settle +8 hours INGREDIENTS (6 popsicles) 1 pint strawberries, hulled and roughly chopped 1/4 cup sugar 1 teaspoon lemon juice 6-8 ounces (about 1 cup) plain yogurt UTENSILS Popsicles molds Blender or Food processor INSTRUCTIONS 1. Combine the strawberries and sugar in a small bowl. Let stand about 20 minutes, stirring occasionally. Till it soften and become syrupy. 2. Pour the strawberries and syrup into blender. Add the lemon juice and pulse a few times until pureed. 3. Stir the yogurt into the strawberry mixture until combined. 4. Pour into molds and freeze for at least 8 hours 5. To remove, run hot water over the outside of the mold until you can gently pull the popsicle out.

FRUITY FONDUE TIME: 10 min INGREDIENTS 12 oz. bag of semi-sweet chocolate 2/3 cup of heavy cream 3 tsp. of vanilla extract Fruits or cakes, diced UTENSILS Fondue saucepan & forks INSTRUCTIONS 1. Combine chocolate, cream and vanilla in saucepan over low heat for five minutes or until smooth. 2. Dip strawberries, brownies, marshmallows, bananas or pound cake into chocolate

STRAWBERRY MOJITO TIME: 10 min INGREDIENTS 1/4 Cup of fresh mint leaves 2 limes, cut in quarters 1/4 Cup of white sugar 1 Liter of club soda 1 1/2 Cup of ice 6 riped strawberries (or and other fresh fruit) INSTRUCTIONS 1. In the mortar and pestle, put your mint, lime quarters, sugar and strawberries. 2. Mash them all together to release the juices, oils and flavours. 3. Pour the mixture in a pitcher and add enough club soda to fill the pitcher. Mix well so the leaves, sugar and strawberry pieces are no longer stuck to the mortar and are in the soda instead. 4. Add ice and mix well.

WATERMELON SORBET TIME: Prep 20 min - Settle 3-4 hours INGREDIENTS 1/2 cup sugar 1/2 cup light corn syrup 1/4 cup freshly squeezed lime or lemon juice 3 fresh mint leaves 3 pounds watermelon, rind and seeds removed, cut into chunks INSTRUCTIONS 1. In a small saucepan, bring the sugar, corn syrup, lime or lemon juice, and mint to a boil, stirring until the sugar dissolves. Remove from the heat and let cool. 2. In a blender, puree half of the watermelon chunks. Strain through a fine-mesh strainer into a large bowl. Repeat with the remaining watermelon. 3. Add the slightly cooled syrup to the watermelon and mix well. Place in a 2-quart container, cover, and freeze for 3 to 4 hours. Flake the mixture with a fork.

DURIAN CAKE TIME: 1 hour 20 min INGREDIENTS 170 g self raising flour (sifted) 170 g butter 140 g sugar 115 g mashed durian 4 egg yolks 4 egg whites (beaten) INSTRUCTIONS 1. Preheat oven to 180C or 350째F. 2 Cream butter and sugar until fluffy. 3 Add in only the egg yolks one at a time. Beat well before adding the next yolk. 4 Add durian meat and beat well. 5 Next, add in the beaten egg whites. 6 Last but not least, add in the flour. 7 Put in a 8 x 8 greased pan and bake for 1 hour.
