Schramsberg & Davies Vineyards Fall-Winter 2022 Catalog

Dear Friends and Club Members,

Mountain), Renteria 360 (Oakville), Winfield (Calistoga) Simpkins (Coombsville), and first-year limited releases of Criscione and Leonardini (St. Helena). Each represent a special slice of Napa Valley’s terroir. Another exciting update in our sparkling wine program this year is the new bottling specificity now noted on our Mirabelle and Mirabelle Rosé “multi-vintage” brut offerings. Before now, while each annual iteration of these wines had its own character, the non-vintage labeling of them hampered our ability to communicate that. With this labeling change, customers will know when a new bottling—and its special character—has arrived. We invite you to enjoy the “31st Bottling” of these two sparkling wines, which principally represent the late, productive 2019 vintage.

O

n behalf of the whole team at Schramsberg and Davies Vineyards, we extend our sincere gratitude and best wishes to all of you. Representing the second generation in our family’s 57-year-old wine business, we feel blessed to be able to build upon the efforts of the first generation, and we are motivated to do all that we can to place the third generation in a solid position to carry it forward. Our marketing team, led by Matt Levy and Ileana Banda-Travagli developed the concept of chronicling this history in this year’s holiday catalog. They have dug through the archives for images and moments in our past that correlate with the full set of sparkling and red wines that we produce. We think that you will appreciate this reflective effort, and we thank you for considering our range of wines for your year-end needs and beyond. The release of our first ever “J. Schram Blancs” and “J. Schram Noirs” sparkling wines deserves special attention here. The historically labeled “J. Schram” has represented our best Chardonnay bottling since its inception in 1987, and with the current 2013 vintage, we add more clarity to its label with the reference to “Blancs”. At nine years of age, it marries the complexity and depth of extended tirage with the vibrant, lively fruit from which it was crafted. Jones and Schwarze (Carneros), Hawk Hill (Sonoma Coast), and Stevens (Marin Coast) Chardonnays form its core. Also from the generous 2013 season, we present the inaugural J. Schram Noirs, our top Pinot Noir Brut offering that has historically been packaged as the Schramsberg Reserve. This richly layered, deliciously flavored bottling is a blend of some of our lower-yielding, hillside vineyards on the coast, including Skywalker and Redding Ranch in Marin County, and Nobles to the north in Sonoma’s Ft. Ross Seaview District. Our Sparkling Winemaking Team, led by veterans Sean Thompson and Jessica Koga, is particularly proud of this effort. Our third J. Schram tier bottling, the Rosé, was first bottled following the 1998 season. Just disgorged, the 2014 Rosé is our first J. Schram tier selection to be released from this drier and earlier vintage. The bright, tangy, red berry Pinot Noir essence of this tasty sparkling wine is carried with exquisitely tart Chardonnay length on the palate. These three sparkling wines will be well worth celebrating with over the winter months ahead, and they will also age gracefully for many years to come.

T For those seeking out even more seasoned, savory expression in the present moment, we are also thrilled to offer multiple late disgorged offerings in the catalog. We first introduced this concept back in the 1970s, with bottles that had aged for up to five years on their yeast lees. Yet with time, we have extended the en tirage aging just a little bit. The 2004 J. Schram and Reserve bottlings finished this year were aged for seventeen years on the lees!

O

ur team is also excited to highlight here the impressive range delivered in our Davies Cabernet Sauvignons this year. From the initial replanting of the J. Davies Estate Diamond Mountain vineyards in 1994, we have made steady, deliberate strides in elaborating our broader Napa Valley Cabernet program. The first J. Davies Estate bottling was the 2001, and here we present our nineteenth bottling with the 2019, carrying its traditional touch of Malbec (10%) with hints of Cabernet Franc (2%) and Merlot (2%). In 2012, along with establishing the Davies Winery in St. Helena, we also crafted our first J. Davies Estate “Jamie”. The crown jewel of our Davies red wines, we love the bursting, dark berry breadth of flavor and the dense volcanic soil structure of our 2018 vintage. The first non-estate Davies Cabernets were also produced in 2012, and that set expanded to include six unique vineyard designates in 2019. The Red Cap (Howell

here are plenty of other gems in this year’s wine portfolio as well, not the least of which is our 2019 Blanc de Blancs. It is always exciting to reflect on the success of this cuvée, first produced in our inaugural 1965 vintage with the help of the Mondavi family at Charles Krug winery just down the road. It was the 1969 vintage of the same wine that helped launch our brand in the international conscience fifty years ago, as it was served at the historic “Toast to Peace” in Beijing between President Richard Nixon and Premier Zhou EnLai. Since then, as you will see in this catalog, we have gone nowhere but up into better wines, wider selection, wide-ranging vineyard sources and steadily improved facilities. With the completion of a larger barrel room at our St. Helena facility in 2019, we looked to improve our vineyard holdings, purchasing the Amigo Three Vineyard in the Napa Valley Carneros and the Keefer Ranch in the Russian River Valley. Both will provide us with stellar Chardonnay and Pinot Noir fruit for our wines. These follow the 2018 purchase of Claes Vineyard, a Cabernet Sauvignon site on property adjoining Schramsberg in the Diamond Mountain District. Again, on behalf of our team and our family, including the first, second, and third generations, we share our appreciation for your enthusiasm and support. We hope to see you in the year ahead and we send our very best wishes for the holidays. Very Sincerely, Hugh and Monique Davies

Jack & Jamie Davies moved to the Napa Valley with a passion to make Méthode Traditionelle sparkling wine

Schram mansion, built 1889

They searched for a year and finally purchased the Schramsberg estate, caves and vineyards, which had been founded in 1862 by German immigrants Jacob and Annie Schram. They soon began the hard work of restoring the historic property. Making sparkling Jacob & Annie Schram wine in the traditional method—using Chardonnay and Pinot Noir—had not yet been done commercially in California. This was a time when there were only twentyone wineries in Napa Valley and fewer than 500 acres of California vineyards planted to the necessary Chardonnay and Pinot Noir grapes. With Jack and Jamie were sons Bill and John, and their third son, Hugh (current Vintner), was born the month after the family took ownership of Schramsberg.

1966

Schramsberg produces first American vintagedated Blanc de Noirs Making a white wine from a red grape requires great care, handpicked fruit, early morning harvest, optimal maturity, and delicate pressing. A balance of bright flavors, crisp acidity and minimal tannins is achieved. Barrel and malolactic fermentation of wine lots add richness and body. Yeast contact in the bottle harmonizes all the elements together in a toasty style. The youthful fruit character of the wine will develop and soften with additional age in the bottle. Jamie crushes Pinot Noir grapes.

Schramsberg chosen for “Toast to Peace,” and our fourth wine, Crémant Demi-Sec, enters production After rigorous study, Jack and Jamie chose a unique California grape named Flora to be the core component of a new offering, Crémant Demi-Sec. This wine is produced in a creamy, less effervescent style than earlier Schramsberg wines. The Flora, a cross of Sémillon and Gewürztraminer, unites the fruitful spice of Gewürztraminer with the strength, depth and minerality of Sémillon. We were honored to have our Blanc de Blancs 1969 chosen to be served at the “Toast to Peace” hosted by President Richard Nixon for the Premier Zhou Yount Mill Vineyards, Yountville AVA, home of the only Flora viney En-lai in Beijing, China. This was the first time Schramsberg or any other ard in Napa Valley American wine was served at any White House or State event, at home or abroad. While the first wine used was the Blanc de Blancs, it is the Crémant Demi-sec that has gone on to be the most often poured of Schramsberg wines at U.S. State functions. When Jack & Jamie first saw Schramsberg it was abandoned. A dirt road led up to the property. Jacob Schram’s first cabin peaked from the redwoods and the vineyards stood still in time. But they loved what they saw and they wanted others to see it. Slowly they revived the property and, after eight years, were able to add a visitor facility. Today, the Visitor Facility, which was enlarged in 2008, welcomes guests each year from all over the world. It was Jack and Jamie’s vision, which is realized every day, for people to come and learn about the historic Schramsberg estate and the American sparkling wine made using the Méthode Traditionelle.

Our first premier wine, Schramsberg Reserve, is bottled and laid down in our caves for eight years of aging

First bottled in 1975, our Schramsberg Reserve waited eight years in our historic caves (below) before its debut in 1983. It was our first reserve wine and helped build the reputation of our winery. This year, in 2022, after nearly 30 vintages of Reserve, we are thrilled to announce its transition to the first release of J. Schram Noirs, bottled in the proprietary rounded glass. The change fulfills a multi-year plan to consolidate our reserve-level offerings into one name, J. Schram, with three types: Blancs, Rosé, and Noirs. The wine represents 2% of annual production. Each bottle is aged in contact with its yeast in our historic Diamond Mountain hillside caves for approximately eight years, affording the development of seasoned, roasted and caramelized richness. The yeast is then removed and a finishing dosage, determined through comprehensive trials, is added to fine-tune the balance of flavor and structure.

The winery building before purchase by Jack & Jamie

Upper winery expansion completed with larger crush pad and more tanks From the start, Schramsberg focused on producing the finest, most complex, handcrafted sparkling wines in California. This process begins with base wines fermented in stainless steel tanks or oak barrels for the primary fermentation. Once this is complete, the blends are crafted and sent into the bottle, where yeast and sugar are added, causing the wine to undergo a secondary fermentation in our caves. This creates the effervescent bubbles that sparkling wines are known for. As demand grew, more winemaking capacity and other expansions were needed to support this mission. In 1982, an extension of the original winery building was completed, providing space for new stainless steel tanks and a barrel storage space to meet forecasted needs.

Chardonnay-based, reserve-tier J. Schram wine pays homage to winery & vineyards founder

Our J. Schram was created in recognition of Schramsberg’s founder, Jacob Schram, and has been a great success since its premier 1987 vintage was released in 1992. This year it becomes known J. Schram Blancs to stand alongside the J. Schrams Rosé and J. Schram Noirs (formerly our Reserve). The J. Schram Blancs’ blend is assembled from the very best Chardonnay-base wine lots produced each vintage. Cluster samples from over 140 cool-climate vineyard sources are pulled several times before the optimal pick date for each block is selected. The J. Schram Blancs is aged for over eight years on the yeast in Schramsberg’s historic Diamond Mountain caves; each bottle is then riddled by hand and finished with an exceptional brut dosage.

The final expansion of our historic Diamond Mountain caves is completed, creating storage for nearly 3 million bottles

1989

Caves maintain a steady temperature of 58°F, which make them perfect for storing wine. When Jack and Jamie purchased the Schramsberg property, the two cave structures dated to the 1870s, when Jacob Schram hired Chinese laborers to dig them. It took a succession of workers over nine years with picks and shovels to excavate a half mile of caves. As demand grew, additional cave portals were dug into the mountainside of volcanic tufa (a volcanic rock akin to sandstone formed by compression of volcanic ash). When the expansion was completed, we had 34,000-square-feet of caves that we could use for riddling, storage and aging (some bottlings for over 20 years) for up to 250,000 cases of sparkling wine.

Annie Schram, at right in 1880s, oversaw much of the construction of the original caves.

Base wine library

After spending twenty years building an outstanding range of vintage-dated sparkling wines, the Davies family set out to master the non-vintage or multi-vintage traditional style of sparkling wine. With our large library of previous vintages stored in barrels (left) at the winery, Schramsberg had a wide and high-quality range of wines to make up each bottling. This led to the successful launch of Mirabelle Brut and Mirabelle Brut Rosé. This year we added the sequential number of that year’s blend (this year is the 31st bottling) so Mirabelle fans will know when a new blend has become available. Lower Vineyard The after replanting

After more than three decades on the mountain, Jack Davies passes; first vintage of J. Schram Rosé is produced

Jamie and Hugh continued the work Jamie and Jack in the kitchen

Jack Davies passed away at 75, after 33 years of restoring the Schramsberg winery and overseeing its development into a recognized leader in the California sparkling wine world. In addition to his and Jamie’s work on the property, Jack’s wine-making innovations included the local revival of underground cellaring and the development of a vacuum-lifting method of moving grapes from truck to wine press in order to protect the fruit before crush. According to leading food and wine experts, Jack, with Jamie, changed the entire philosophy of sparkling wine consumption from one of only special occasions to one that centered on a enjoying sparkling wine everyday with a broad array of foods. With Jack’s passing, Jamie became chairman of the company, which that year produced the first vintage of J. Schram Rosé. This sparkling rosé, the companion to Schramsberg Vineyard’s J. Schram Blancs and J. Schram Noirs, is considered by many to be the ultimate expression of artisan American sparkling wine, the epitome of grace, style and elegance in a glass. Hugh transitions to Head Winemaker

First production of J. Schram Rosé

1999

2000

The first J. Davies Estate Cabernet Sauvignon is released and Hugh becomes head winemaker J. Davies Estate Cabernet Sauvignon is the creation of two generations of the Davies family, the product of an intimate knowledge of a place and of a passion to create delicious red wine. The wine is named in honor of patriarch Jack L. Davies. The careful replanting of estate vineyards to Bordeaux varietals began in 1994, and the J. Davies Estate Cabernet Sauvignon was first released in 2004 (2001 vintage). The vineyard blocks, totaling 46 acres, are laid out in four isolated pockets ranging Head Winemaker and Chairman from 500 to 1,000 feet in elevation. They now include the two original Schram sections, Napa Valley’s first hillside vineyards, originally planted in 1862, the McEachran parcel, first planted by Colin McEachran in 1878, J. Davies Estate and the Claes parcel, dating back to 1984. Cabernet Sauvignon Additional Options Limited Availability

Hugh Davies marries Monique Nelson in the oak grove area on the Schramsberg estate The wedding took place in the oak grove in the center of the lower vineyard, which was later dedicated as “Jack and Jamie’s Grove.” The grove is located at the crossing of two perpendicular paths, one of which is the lane of olive trees in many of our photos. The grove is encircled by the J. Davies estate Vineyards and tall Douglas fir and redwood trees. This grove is used often for private Davies family events and club member events, along with special trade and employee events such as celebrating the end of harvest.

Bearing the initials of Jack Davies, the first production of J. Davies Estate “jd” Cabernet Sauvignon is initiated. This richly structured red wine follows the blending of the “Jamie” and J. Davies Cabernet Sauvignons. The winemaking team carefully selects from the remaining barrels of wine to craft this offering. The vineyard blocks, totaling 46 acres, are laid out in four isolated pockets ranging from 500 to 1,000 feet in elevation. These are the southernmost vineyards in the Diamond Mountain District AVA. Flanked by two cool creek canyons (Nash Creek to the north and Ritchie Creek to the south) and surrounded by compact coniferous and deciduous forests, the vines here produce late-ripening, richly concentrated fruit with average yields of just two tons per acre.

Jamie Davies passes away; Visitors Center expanded for tastings From the start, Jamie was vigorously involved in the renovation of the house and the estate, including planting the estate’s first vines with her bare hands. Jamie’s passion and refined Jamie sets a stake during vision for the estate the 1967 replanting was expressed in every aspect of the business—from the gardens to the aesthetics of image and packaging. Her efforts, and those of Jack’s, were recognized in October of 1998 when the property was placed on the National Register of Historic Places. Jamie was dedicated to all-things wine and food, often writing and speaking on the two subjects. Bearing her signature, the J. Davies Estate “Jamie” is the finest Cabernet Sauvignon crafted from our historic Diamond Mountain vineyard property. In 2008 the new Visitor Center at Schramsberg was also completed. The expanded facility allows guests a more comfortable opportunity to taste through a selection of both Schramsberg sparkling and Davies Vineyards wines. New rooms & tables for sit-down tasting

Vineyard staff spread straw for winter

The teams at Schramsberg and Davies have instituted a solid set erosion control of practices that range from the vineyards through production. In 2009, Schramsberg received certification from both Napa Green Winery and Napa Green Certified Land programs. Both our wineries follow rigorous environmentally friendly practices such as installation of a total of 600 kWh of solar arrays, fish-friendly farming that reduces silt run-off into creeks, adoption of no-till farming practices to further reduce soil loss, maximum efficiency of water applications to conserve water, and minimizing water waste throughout operations. Additionally, the newly acquired Keefer Ranch is a fish-friendly vineyard and a Sonoma County Sustainable property.

Schramsberg Vineyards celebrated the 150th anniversary of Jacob and Annie Schram’s founding of the property. Today, expanding from the knowledge gained during the production of the J. Davies Estate Cabernet Sauvignon, our collection of Cabernet Sauvignon is an exploration of new Napa Valley vineyard sites. Each site provides the winemaking team unique flavor characteristics from the varietal, allowing them to produce a wine that is delicious and singular to the vineyard or appellation from which it came.

Keefer Ranch

Capitalizing on the passion, history, and experience, the Davies Vineyards winemaking team, started crafting vineyard and appellation designated Pinot Noirs in 2009. One of our highquality vineyard partners in the program was Keefer Ranch, and in 2018, we were able to purchase a portion of the property, guaranteeing Pinot Noir and Chardonnay from this proven vineyard long into the future. Located on gently sloping, welldraining Goldridge Loam soils with south-facing exposure, and benefiting from long, cool hang time, the vineyard produces fruit with outstanding color, balance, and flavors. The fruit from Keefer Ranch is used in both Davies Schramsberg completes Vineyards Pinot Noirs and purchase of Keefer Ranch Schramsberg sparkling wines.

Jack gives a tour in the early days of Schramsberg’s revival

Living and working on the Napa Valley Diamond Mountain property, three generations of the Davies family and Schramsberg team have focused on creating wines that reflect the passion and experience of the people behind each bottle. Today, Hugh and Monique and their three sons— Emrys, Nelson and Hugh Jr.—continue to live in the Schram House on the property. We follow in the footsteps of Jack & Jamie Davies by promoting the notion that sparkling wine is a serious wine, well suited to serve with fine food of all types and should not be reserved only for special occasions. We never rest on the successes of previous years, and are always looking to build— with new facilities, replantings, and new vineyards—upon the winery’s track record of producing worldclass wines that rival the best sparkling and red wines found anywhere.

Redwood tree starters were transferred to pots, where they will grow more roots before being planted around the property to replace trees lost to the 2020 Glass Fire
