COOKING BASIC COOKING SKILLS AND TECHNIQUES Dagmar Smith | Chef, Graduate of Cambridge School of Culinary Art Develop classic cooking skills that will help you understand recipes and allow you to improvise. We’ll start with knife skills and move on to basic techniques. We will discuss cuts of meats, where to shop, and kitchen equipment. In Section 01, we’ll focus on cooking a full-course meal from soup and appetizer through dessert and enjoy it with wine while discussing pairings. We’ll also make (and eat!) roast chicken, hummus, oven-roasted potatoes, cucumber salad, blueberry muffins, wine-poached pears, and chocolate chip cookies. By hand as well as by machine, we’ll make ice creams, gelato, frozen mousse and granitas. The extended class time will allow us to tackle sauces, toppings and tips for presentation. COOKING AND BAKING WITH FRESH HERBS Cara Marcus | Culinary Instructor Summer is the perfect time to take advantage of the season's bounty of fresh herbs! We'll start with plantains cilantro and south of the border pesto, enjoy summer vegetable soup with bouquet garni, serve up an easy thyme crusted chicken, and finish with lavender shortbread cookies and refreshing cinnamon basil lemonade. In this hands on cooking class we will create our own vegetable stock and make a carrot ginger soup, a fresh corn chowder, a curried zucchini soup, a chill cucumber soup, and a Japanese seafood nabe using fresh local fish. MORE FUN TOGETHER: LEARN, LAUGH, LOVE PARENT AND CHILD: BAKING AND DECORATING CUPCAKES Lillie Webb | Baker Spend a Saturday with your child in this cupcakes class. This class is for a parent and a child ages 6-12. In this class, we'll learn the secrets to baking delicious vanilla and chocolate cupcakes. You and your child will pipe, dip, and decorate your creations together. We will learn about a variety of fillings, frostings, and other toppings for unique flavor combinations. You and your child will have some yummy cupcakes to take home. No experience necessary. COURSE CODE: KDCP

PARENT AND TEEN: HAND-ROLLED PASTA AND HOMEMADE SAUCE Deb Della Piana | Culinary Instructor Spend quality time together and nurture your love for cooking. This class is for a parent and a teen, ages 13-17. In this hands-on course, we will pair up a parent and a teen and learn about various types of flour. We’ll make fresh pasta dough and roll it to fettuccine- or tagliatelle-style pasta. We’ll also delve into stuffed pasta, ravioli with two fillings. At the beginning of the 20th century, Albert Einstein formulated a stunning new theory that people hoped would explain how gravity and the universe worked, once and for all. It only needed new observations to confirm the results of his theory. 100 years later, there are confirmations, but wait! New observations that Einstein never foresaw now puzzle astronomers, physicists and relativity theorists! We will walk through a half dozen problems ranging from black holes, dark energy, superstrings, and other phenomena to see where the science will go next.

A provocative evaluation of our basic assumptions about the Vietnam war held by both supporters and opponents of this unique event in U.S. history. This in-depth history of the different periods of the war will challenge core beliefs by opening up fresh perspectives which replace confusion with clarity. We also examine the lessons of the Vietnam experience for today’s wars. Discussion is based on lecture, video, historical documents and speakers. PRINTMAKING AT THE CAMBRIDGE CENTER This term, try your hand at printmaking by taking one of our classes. All of our teachers are practicing artists with a deep knowledge of this special art form. Classes take place in an air-conditioned studio with three presses, solarplate exposure box, aquatint screens, drying racks for prints, flat files for storing prints, non-toxic inks and drypoint, woodcut tools and much more.

Credits and Refunds If you withdraw 1 week or more before the start date of a course, we will issue you a course credit (good for 18 months from the date of issue). If you prefer, we will refund the course tuition minus a $10 processing fee. Withdrawals from courses and events under $25 are only eligible for a course credit. No cash refunds are given.

Only one registration fee is charged per person per term. The registration fee is not refundable if you withdraw from a class.

If you withdraw 6 days or less from the start date of a class or event, we do not issue course credits or refunds. Transferring to another course Transfers to another course are allowed for 1- and 2-session classes if you contact us at least 5 business days before the start of the class. If there is a difference in price, we will issue a course credit or you will owe any balance. Refunds are not given. Transfers to another course are allowed for 3+ session courses if you contact us before the 2nd meeting of the class. If there is a difference in price, we will issue a course credit or you will owe any difference. Refunds are not given. Cancellation or schedule change The Center reserves the right to cancel classes due to low enrollment or other considerations. If we cancel your class, you will receive a course credit good for 18 months from date of issue or, upon your request, a refund. Please call our registration office to request a refund. If the Center cancels your course or changes the class schedule before the class begins such that you are unable to attend, you may receive a refund or a course credit. This does not apply to individual classes rescheduled due to inclement weather, other significant factors beyond the Center's control, or individual classes rescheduled by the instructor. Typographical Errors CCAE reserves the right to correct the listed price of a course or other errors due to misprints.

How to Find Us CCAE holds most classes in our two historic properties in Harvard Square: The Brattle House located at 42 Brattle Street. The Blacksmith House located at 56 Brattle Street. If you have registered for a class, you can log into your account at learn.ccae.org and click the tab marked “Academics” to find out your class location.

What are some changes you've seen at CCAE? Major changes to the physical space. The new registration office and [the] new kitchen for example.

In December 1997, you started working at the CCAE registration office. How did you first find CCAE? I noticed the catalogs out in front [of] 42 Brattle Street and took one. I thought this might be a cool place to work.
