Eggplant and Lentil Salad with Yoghurt Dressing Source: Taste.com Servings: 5 Ingredients: • 4 baby eggplant, cut lengthways into 5mm-thick slices sliced lengthways • Extra virgin olive oil, to brush • 1 punnet (250g) cherry tomatoes • 1 small garlic clove, crushed • Juice of 1/2 a lemon • 400g can lentils, rinsed, drained • 1/2 cup (80g) pine nuts, toasted • 1/2 cup flat-leaf parsley leaves • 2 firmly packed cups (about 70g) baby spinach leaves Pita bread, to serve
Acai bowl 1-cup apple juice 2 tablespoons RioLife 100% organic freeze-dried acai powder 1 banana 1/2 cup frozen mixed berries
Home made muesli Combine all dry ingredients (except dried fruit). Warm honey and juice briefly in the microwave, then pour over dry ingredients. Mix well. 2 Place mixture onto a baking tray lined with baking paper, bake at 150°C for 25-30 minutes or until almonds are toasted. Allow cooling completely. 3 Combine dried fruit with toasted ingredients. Store in an airtight container.

Exercise A great way to enjoy life while also getting fit and healthy is surfing. Surfing has been a huge part of my life the past year and I have become healthier, happier because of the ocean.
Stand up paddle boarding is another way to enjoying the ocean and the sun. It helps with building arm strength and also getting fit and healthy.
Skateboarding is great for burning calories and staying in good shape. Depending on your size, you might shred between 150 and 500 calories per hour. I find running in the mornings a great way to get fit and health and also have fun listing to music or watching the sunrise. Being fit and healthy is one of the best ways to stay happy and positive. 5
