Who is Chef Luis Simoes? What is he doing in Timor? Why everyone loves his food? Why have he decided to stay in this country? These are just few questions, which answers we will share with you in this article.

Luis Simões was born in Ponte de Vagos, Portugal in 1990, but it is in Praia de Mira where he spends his childhood and that he defines as “his” hometown. He was still very young when cooking came across his life, by necessity it is true, but the joy for the garden, for the flavours, for the aromas quickly became his main occupation.

At the age of 14, he headed towards Coimbra to join the School of Tourism and Hotel Studies of Coimbra, where he took a course in cuisine and pastry. During this time, he was forced to grow and do something else. His curiosity and desire to learn led him to study and simultaneously working catering and several hotels in the city, as part-time. He graduated in Cookery and Food Production at the Estoril Higher Institute for Tourism and Hotel Studies and did his Master in Hotel Management at the School of Tourism and Maritime Technology of the Polytechnic Institute of Leiria. Throughout his life we can highlight some professional experiences in large hotel chains such as the Ritz Carlton in Tenerife, the Hilton Group in Prague and the Pestana Group in Sao Tome and Principe. His last stop in Lusitanian lands, was as Chief Operating Officer Assistant at Pestana Management, in Lisbon. He still remembers very well the moment he landed in Dili on 14 of January with the purpose to start a new chapter of his life and prepare everything for the opening of Hotel Novo Turismo Resort & Spa in Dili, where he currently holds the position of Operations Manager, but initially he joined their team as Executive Chef. Few months ago he just published his first book about food in the CPLP (Community of Portuguese Language Speaking Countries) where he presented popular dishes but with some innovative combinations and ideas, which you can easily do at home. Above all he imagined a book which could inspire people to cook different recipes with ingredients which they can find almost everywhere and surprise family and friends, who want to explore some flavours of the countries covered in his book. Recently, almost three years since he moved to Dili Chef Luis Simoes had a crucial role in the opening of a new restaurant in the capital: “El Legendario” which brings a new style of dining, with a long cocktail list, snacks and Asian flavours followed amazing views, especially during sunset time, where you can take a seat, look to that incredible scenario and enjoy their food and drinks. In this project he counts with a new team, where some of the supervisors came from his previous team at Hotel Novo Turismo, what is totally motivating and exciting because it means that all his effort and confidence deposited in them it was worth and they have evolved to be able to hold higher positions in this new challenge. His life in Timor is extremely busy, just to give you an example he needs to manage a team with about 90 members, 2 restaurants, 2 bars, promote his book and give attention to the public always when in possible. He has a very good heart and even when he is too busy he finds space in his agenda to cooperate with volunteer projects in here and even abroad.

Nowadays they already know lots of things about international gastronomy and the ones who started from the beginning with him, currently are the ones who are teaching and training the new members of staff, inclusive they already do on their own shopping lists, stock control, inventories, staff rotas and even they have initiative to create new recipes and share ideas with Chef Luis. To conclude we would like to share with you a quote from Robin Sharma: “Leadership is not about a title or a designation. It’s about impact, influence and inspiration. Impact involves getting results, influence is about spreading the passion you have for your work, and you have to inspire team-mates and customers. ” This explains why Chef Luis still living in this country and is with enthusiasm that he talks about his staff: their willing to keep learning with him and their motivation to improve, considering them as part of his family and the reason why he does not want to live this country in the near future. As he likes to repeat many times this is for him a true personal and professional school, furthermore his contribution to a young country, for a young person like him, gives a true meaning to his life.

These members of staff joined his team without knowing anything about cooking, some of them did not even know how to switch on a stove, what was the difference between some ingredients and actually there was a big barrier between them and Chef Luis: the language. They did not speak Portuguese and English, only few words so him needed to learn as soon as possible how to speak Tetum. Sometimes it was very challenging for him to cope with some situations but he cannot forget that those people are working under international hospitality standards and they will be the future of hospitality in this country.

International Day of People with Disabilities On December 3rd the International Day of People with Disabilities was celebrated. This date is promoted by the United Nations since 1998, with the goal of having greater understanding of issues related to disability and to encourage the advocacy of the dignity, the rights and the well-being of the affected people. In Timor-Leste we have the example of the Adapted Swimming Group for People with Disabilities. The video below shows the teacher, Helder do Carmo, with a Master Degree in Inclusive Education specialized in the Education of Deaf, who is in Timor-Leste since 2014, where he has been developing several voluntary activities with some Timorese organizations.

One of these activities is related to swimming, a sport that had some resistance among Timorese swimmers; but through the courage and determination of these athletes, a remarkable result will be recognized by Timor-Leste’s National Paralympic Committee through the creation of a National Federation of Adapted Swimming. This way, Timorese will be able to compete at international levels and represent Timor-Leste. Currently, Professor Helder do Carmo is professor at the Nacional University of Timor Lorosa’e, where he created the Academic Centre for Inclusion. | timor-leste.gov.tl

As far as administrative division is concerned, Timor-Leste is split into 13 districts: Bobonaro, Liquiçá, Díli, Baucau, Manatuto and Lautém on the north coast; Cova-Lima, Ainaro, Manufahi and Viqueque, on the south coast; Ermera and Aileu, the two landlocked districts; and Oecussi-Ambeno, the enclave in Indonesian territory. The borders determining the 13 districts have been more or less the same since the last years of Portuguese administration. Each district comprises one capital city and various subdistricts whose number can vary between three and seven, with an average of five subdistricts per district. Demographically, Dili is the district where the majority of the population is concentrated, while Aileu registers the lowest population rate, although its area is superior to Dili’s.

SUBDISTRICTS

The 13 districts are subdivided into 67 sub-districts, with one designated as the capital, and administrative subdivisions – the so-called sukus (villages) – which vary between 2 and 18 per subdistrict. The largest subdistrict is Lospalos, in Lautem, with an area of 635 km², while Nain Feto in Dili is considered to be the smallest, with 6 km². Fatululik, one of the smallest subdistricts, is the less populated with approximately two thousand inhabitants. On the 2nd to 4th Dec 2016 Uma Kakaluk Tasi Loor in MataiSuai, Covalima has been inaugurated by the Family Uma Bei Kati (Family from the ancestor house of Kati) . Uma Kakaluk Tasi Loor is the sacred house in Matai-Suai, Covalima. The procession inaugurated of the sacred house done with the traditional rituals; such as traditional dance to take the sacred water from the ocean and bring it to the sacred house. Uma Kakaluk Tasi Loor is designed to get the power for war and peaceful purpose from the ancestor. The Timorese culture is very sacred, in every step from the rituals are surround by the power from the ancestor. As a young generation we should keep the spirit to look after the tradition in the future.
