There’s no better way to get the full flavor of the islands than a visit to the local farmer’s market. You’ll find all sorts of exotic fruits and vegetables you won’t necessarily see at home, and you can stop for a friendly chat with local growers to pick up a tip or two on the best ways to cook them. Besides fresh from the farm organic produce, there are often aromatic local dishes to enjoy, baked goods, locally made products, arts and crafts. You’ll also find roadside vendors selling their latest crop daily. The largest farmer’s market on St. Thomas is on the west end of the island at Bordeaux Farmer’s Market, held on the second and last Sunday of the month, while Yacht Haven Grande holds theirs on the first and third Sundays of the month. Stop by historic Market Square in downtown Charlotte Amalie for produce and local plants every Saturday. For fresh fish, head to Gustave Quetel Fish Market in Frenchtown or the Joseph P. INGREDIENTS FOR THE PASTRY: 4 cups Flour 4 tbs Unsalted butter 1/2 tsp Salt

2 tsp Baking powder 1 tsp sugar 1 cup Water

DIRECTIONS FOR THE PASTRY: Mix dry ingredients in large bowl. Cut in shortening with knives or pastry blender. Add water slowly to form a soft dough. Knead gently on a floured board for a few minutes. Cover and let rest for about 10 minutes. Shape into small balls, roll out and cut into circles desired for the pate. INGREDIENTS FOR THE FILLING: 1 Garlic clove (minced) 1 lb Lean ground beef 1 Hot pepper (finely chopped) 1 Sweet green pepper (finely chopped) 1/4 cup Tomato paste 1 Onion (finely chopped) 1/4 tsp Oregano 1 Celery stalk (finely chopped) 1 tsp Kitchen Bouquet 1 tbs Parsley (minced) Oil for frying (optional – may also bake) 2 tbs Butter DIRECTIONS FOR THE FILLING: Sauté the meat in the butter until brown. Add remaining ingredients and cook for a few minutes longer. If the filling seems very dry add a little water. Let cool down before using. Place filling on each circle of dough, leaving edge bare, moisten edge with water. Turn over and seal meat inside dough by pressing moist edges together with fork. Fry in oil or bake, until dough is golden brown.
