Petfinder happy tail As Sherry Rentz gazed at her computer monitor, the eyes of the dog on her screen mesmerized her. She was suffering over the loss to cancer of her beloved dog, Cassidy, an Australian Shepherd, and had been looking on Petfinder for another pooch to fill the emptiness in her heart. Now a beautiful Aussie named Lady, listed by Huntsville (Ala.) Animal Services captured her attention. “It was uncanny how much this dog’s eyes reminded me of Cassidy,” the Moultrie, Ga., woman says. She emailed to
see if the dog was still available and she was. Rentz teaches, but an approaching long weekend would provide enough time, so she scheduled a trip. Upon meeting Lady, “My first words were, ‘She's so beautiful,’” Rentz says. She kneeled down and hugged the dog. Tears welled in her eyes. It had only been a month since she’d lost Cassidy, and she was overcome with emotion.

Cassidy, usually shortened to Lady Cass. Lady Cass holds a special place in Rentz’s heart. “When I get home from teaching, there is Lady Cass, so excited that I’m home. She jumps up to greet me with the sweet little sounds she makes. As the quote I use in my email signature says, ‘There are no bad days when you come home to a dog’s love.’”

Tres leches cake By the editors of Relish Magazine Tres Leches Cake 3/4 C (1 1/2 sticks) butter, softened 1 1/2 C sugar, divided 1 1/2 tsp vanilla extract, divided 5 eggs 1 1/2 C allpurpose flour 1 1/2 tsp baking powder 1 tsp cream of tartar 1 C whole milk 1 (12 Oz) can evaporated milk 1 (14 Oz) can sweetened condensed milk 2 C heavy cream 1 T rum 1. Preheat oven
to 350F. Grease and flour a 13 x 9-inch baking dish. 2. Combine butter and 1 cup sugar in a large bowl. Beat with a mixer at medium speed
until fluffy. Add 1 teaspoon vanilla. Beat in eggs one at a time, mixing well. Combine flour, baking powder and cream of tartar. Add to butter mixture slowly and beat well. Spread batter in pan. Bake 25 to 30 minutes, until a wooden pick inserted in the center comes out
clean. Let cool. 3. Stir together milk, evaporated milk and sweetened condensed milk. Pour 3 cups over cake. Reserve remaining milk mixture to serve with cake. Refrigerate cake until chilled. 4. Combine heavy cream, remaining 1/2 cup sugar, remaining 1/2 teaspoon vanilla and rum. Beat until thick and spread over cake. Refrigerate until ready to serve. 5. Pour leftover milk mixture onto dessert plates. Slice chilled cake into squares and place on dessert plates. Serves 16. Per serving: 440 calories, 26g fat, 140mg chol., 8g prot., 45g carbs., 0g fiber, 230mg sodium
