TAILOR AT BORRIE’S TAILORS Where did it all begin? I started in Christchurch, NZ. I always wanted to sew – I used to alter my school uniforms. I begged for a job with Borrie Perryman, a local tailor in 1960, but he couldn’t afford to employ me so I started a traditional tailoring apprenticeship at Ballantynes. I also did a cutting & pattern making course with Tailor & Cutter Academy, London. I eventually worked with Borrie in a tiny shop in Whitcombe’s Arcade. Borrie and his homesick wife went back to the U.K. and 1963 he left me the business. The 60’s were a wonderful period – both for music and clothing; we moved to the historic Chancery Lane.

Star Sign? Virgo After all these years, initially hating being an apprentice, learning to sew sitting on the table, age makes me respect this wonderful old trade and skills refined over the years. Sad to think Borrie’s will inevitably end with me – I thought I’d found a successor several times but no-one seems to have the patience to persevere. People make jokes about my longevity – “you’ve been at it such a long time – you must know what you’re doing by now!” Yes, I think I do. +++ 07 5503 0811

The 70’s was more of a “hippy” culture with the dandy look for men - flared trousers – lots of fun! Lace, velvet and leather were popular. In 1980 we had a holiday to Surfers Paradise, and we saw a niche so we decided to move to Australia. After the hassles of selling everything, we arrived in January 1983. Our first shop was on the front of The Mark in Orchid Avenue next to the Vogue Shop. Orchid Avenue was stylish and wonderful. Then a year in Raptis Plaza; followed by St Tropez, next to the Costa D’Oro Restaurant. By then, Surfers was losing its lustre and we moved to Broadbeach. We realized our dream of a shop in Marina Mirage in May 2001 and have been here ever since, through demolition, renovation and now rebirth. We’ve made clothes for so many people – Engelbert Humperdinck; Stevie Ray Vaughn; John Pertwee (early Dr Who); Sir Cliff Richard who bought a jacket for his 70th birthday concert in the Royal Albert Hall; costumes – Les Miserables; Buddy Holly; 42nd Street; Dusty; various bands; Normie Rowe; magicians – Matt Hollywood; the late Martin St James; fun costumes for the Stage Door Theatre Restaurant, and who can forget Big Kev! The most memorable was from Melbourne. We made him amazing outfits – usually involving Lurex! He had a ponytail and we always made him a bow hairclip to match. He provided our most incredible experience – he invited us to his wife’s surprise 50th birthday. We assumed Melbourne. He asked if we had passports and said “oh didn’t I tell you, the party’s in Venice!” He flew us business class with other guests and we stayed in a Grand Canal hotel – unforgettable! The Borrie’s man is simply a man who knows his own style. I like to see clothing well cut, well made and fitting properly. Style tip? Stick to your own style. Why Marina Mirage? We have always loved Marina Mirage with its quiet elegance. We love its location – close to the two hotels - it’s the only place for us on the Coast. Favourite holiday destinations? Venice is still top of the list. Then anywhere where we might find different and interesting fabrics. Also any uncrowded beach with white sand and warm weather.

MARIA GAMBARO CEO OF ESTEEM MEDI SPA Who is an inspiration / style or beauty icon for Esteem Medi Spa? Michael Russo of Ralph & Russo. His determination, work ethic and attitude to others are to be admired. Watching him grow over the years has been overwhelming; he is a true inspiration to me. What’s your favourite service in salon at the moment? I recently had my skin assessed using the Visia Analysis machine. It determines what’s developing under the surface of the skin, whether it is wrinkles, freckles, fine lines or pigmentation; the clinician can suggest what treatment is needed to achieve the best results. More importantly they can guide you into the skincare or treatments that can help slow these processes down. I have recently started treatments using the new PicoSure system (which was originally developed for tattoo removal but is also amazing for fighting the signs of aging). I am amazed to see such great results after only having two treatments. Top beauty/treatment tip for Autumn Winter? I think it is so important to keep your nighttime beauty routine intact over these seasons. We often forget that our skin takes time to adjust to the contrasting temperatures (especially here on the Gold Coast where it can be cold one day and hot & humid the next, taking into account being in and out of air conditioning too). Every night I ensure I thoroughly cleanse, tone, apply eye cream and then moisturise my face. My favourite product at the moment is the SkinMedica TNS Essential Serum. How did Esteem Medi Spa begin? Esteem was founded by Dr. Terrence Scamp. He continues to be the forefront in training our registered doctors and nurses whilst consulting with his surgical clients in clinic. I joined Dr. Scamp and Esteem in 2005, where we rapidly outgrew our Benowa clinic and moved to Marina Mirage – since then we have opened two new clinics and are in the midst of expanding further. What is your career highlight to date? Esteem recently won Queensland’s Best Aesthetic Practice 2015 at the “My Face My Body” Awards Australasia. I am very proud of my team - seeing our business come alive with the help of some amazing and talented professionals who are passionate about learning how to care for your skin and the motivation to teach others has been a huge part of getting us to where we are today. We are excited to soon be announcing Esteem’s most recent venture which has been a life long dream of mine. I have two beautiful sons, Christopher and Elliott, who encourage and motivate me to keep striving to be the best I can be. They run a formwork business together, and it has been such a pleasure watching them grow the business and still remain the closest of friends. I am so proud of their achievements. The boys may have learned a lot from me but I could confidently say I have also learned a thing or two from them.

The world is our inspiration, in so many different ways; we are constantly inspired by the wonders of many art forms and masterful creations across the globe, from desirable automotive art forms and world-class architectural structures to stunning landforms created by mother nature. What is your favourite item in store at the moment? It’s very difficult to select only one. As the seasons transition I am loving the unique design and colours of our exquisite ‘Symphony’ Ring. ‘Symphony’ features rare Argyle pink diamonds, an exquisite pear shaped white diamond crafted in stunning rose gold scrolls – the fusion of harmony, soul and artistic balance. Top style / jewellery tip for Autumn Winter? Making a statement wearing a powerful piece is big for the autumn and winter seasons. I recommend choosing a combination of artistic flair, unique design, warm yet vibrant coloured gemstones complemented by a balance of rose and yellow gold accents. Don’t be afraid to mix and match pieces to create your own personal seasonal style. How did the Calleija story begin? Where did your love of jewellery come from? When I was growing up in the 1970s we had no iPads! However I always seemed to have pen and paper at the ready - I loved to draw. I was always amazed by gold and precious jewels, and although we didn’t have a lot of jewellery in our family when I was growing up I recall admiring the very few heirlooms that were handed down from generation to generation. I was so intrigued by these intricate sculptures which represented my Italian and Maltese heritage perfectly. I remember seeing an advertisement on television one day for diamond jewellery and something stirred inside me. I knew I wanted to create beautiful designs like the ones I’d seen. My mother supported my decision, and introduced me to a Maltese jeweller who offered me a jewellery apprenticeship. From that moment on, I was hooked. Not a day goes by when I do not put pencil to paper; my creations all start with a hand drawn design, which I prefer over computer-aided design. I believe actually drawing with one’s own hand is so beneficial -- your hand can take the mind’s thoughts and express fluid lines and detailed ideas very quickly. What has been your career highlight? There have been many highlights in my career thus far, the most significant would be developing ‘The Glacier®’ diamond cut – exclusive to Calleija. Taking almost two years to perfect, I took the most beautiful aspects of all traditional cushion cuts and combined them into one amazing jewel - The Glacier® Diamond. The result is exceptional, highly recognized and one of which I am very proud. Another highlight was winning the highly prized De Beers Diamond Award with ‘Virtual Eros’ – a unique headpiece creation composed of 219 diamonds and showcased at the Alexander McQueen catwalk collection in New York, in 2000. The De Beers Diamond Awards are like the Academy Award of the jewellery world. Since its inception in 1953, this prestigious honour is only bestowed upon an exclusive selection of the world’s finest jewellers.

What do you love most about Marina Mirage? Above everything right now I would have to say the excitement that has come from the announcement of our BRAND NEW boutique, which is scheduled to open later this year. We have just received Twin Set by Simona Barbieri for Autumn. Some of my other favourites would have to be Rich & Royal and Robins Jeans from LA. Top style tip for Autumn Winter? There are lots of knits and fur trims coming up this winter, however we try to keep cross seasonal trends all year round. What has been your career highlight to date? I’ve been in the industry a long time, its hard to pin point one highlight. I’ve been here at Marina Mirage for over 25 years and happy to say I’ve had many great highlights but this centre is by far a highlight for my business, as it is the epitome of style and elegance. Having Palazzo Versace and the Sheraton Mirage next door is a great asset to Marina Mirage. Favourite holiday destination? HOLIDAY is all about cool, style and substance. It is a treasure trove of earthy fashion delights and a must for anyone visiting the Gold Coast. The South of France is the style icon and influence for HOLIDAY, in particular the elegant natural style of St. Tropez in the Cote D’Azur. What’s your favourite item or brand in store at the moment? My favourite items include the internationally renowned Australian designer Helen Kaminski’s Hats and Bags Collection, which is all natural raffia class and quality. The Helen Kaminski range is constantly re-invented for each season and is consistently at the fashion forefront. Some of my other favourite designers currently in store include Elemente Clemente and Rundholz, both from Germany. Their designs are favourites for all fashion conscious women with an eye for quirky, high-end items. Top style tip for Autumn/Winter? We just love the skinny leg look with the big cardigan or big knit, as long as it is earthy, natural and accessorised simply.

Favourite holiday destination? My favourite holiday destination is without a doubt St. Tropez and the Cote D’Azur … oh and Paris of course! My husband Michael and I travel on buying trips a few times a year and we love the South of France.

How did HOLIDAY begin? When and where did your love of fashion come from? My love of fashion and dressmaking definitely came from my mother. I am a Swiss/Australian and in my family’s first years in Australia I watched my mother make our clothes all the time. I have loved designing and creating quality garments since I was 10 years old. I have a passion for every step of creating patterns, choosing quality fabrics through to the finished garments.

What’s your star sign? My star sign … don’t let me get started! I studied Astrology for quite a while and it’s still my hobby and passion, my astrological name is Esther Moon. I have my Sun in Cancer, with a Sagittarius Moon and my Ascendant in Libra.

My early working life was in finance but then my passion for fashion came to the fore, firstly as a designer, manufacturer and distributor, then as a pioneer of importing classical international fashions for our relaxed natural lifestyle. The HOLIDAY boutique was one of the first stores to open at the brand new stylish and elegant shopping precinct of Marina Mirage in July 1988. What is your career highlight to date? The highlight of my career so far is having a successful business doing what I love with HOLIDAY at Marina Mirage. What do you love most about Marina Mirage? Marina Mirage is now 28 years old and what I love most about it is the clientele, especially my regular customers who come to HOLIDAY every season knowing they will leave happy with their new pieces. CHEF AT RISTORANTE FELLINI When and why did you become so passionate about food? For as long as I can remember I have enjoyed cooking and eating good food in good company, and my opportunity to shape a career around this passion for food came when I was 15 years old. I was playing rugby league on the same team as a second year apprentice chef who asked if I would be interested in an apprenticeship at the French cuisine restaurant he worked at in Canberra. I seized the opportunity and have continued to follow my passion for food ever since. If you could pick one last meal what would it be? If I was dining at Ristorante Fellini I would order a selection of entrées to share with my wife so we could enjoy a wide variety of different flavour combinations. I would be sure to order the Carpaccio of The Day because it is such a simple and elegant dish that allows the high quality ingredients we use at Fellini to really shine. If I wasn’t dining at Fellini I would like to enjoy a simple barbecue with family and friends. What’s your signature dish here at Ristorante Fellini? The Galletto Alla Diavola – a whole marinated spatchcock, grilled under a press with a black pepper crust, served with butter sautéed vegetables, grilled polenta, lemon, extra virgin olive oil and parsley. Mark Armstrong my father was a very famous chef in Sydney with many well known restaurants in the 80s, 90s and early 2000s. I first started cooking professionally with my father at the age of 12 and it stemmed from there, taking me all over the world – from France where I was the head chef at a 3 Michelin star in the south, to opening restaurants for the Pourcel Brothers in Bangkok, Shanghai, Beirut, Dubai, New York and many other cities. If you were to pick one last meal what would it be? I love Australian mud crab so I suppose ginger, shallot and black bean mud crab. CHEF AT PIER MARINA MIRAGE When and why did you become so passionate about food? I started cooking while at high school where I got to do work experience in 5 star hotels. I loved the excitement of the environment which lead to doing competitions while at school. I did really well and the progression just felt right, so I continued, I always knew I would have to eat and learn to cook at some point, I also hoped to one day travel the world so this was a skill that would allow me to do so. And, if nothing else it taught me to cook! So it was all worth it. If you could pick one last meal what would it be? It changes all the time, but currently its anything with pork. It’s such a versatile ingredient which can be used so many different ways. What’s your favourite menu item on the new Pier Menu? When I was 6 years of age, I used to go to work with my dad Nick Omeros, and sit on a crate next to the cold room. When the chefs would come running during service I would open the door for them, then close the door & sit back on the crate until the next chef would come running. It was when I was 22; I started to learn how to become a chef simply because I loved cooking and because I felt so happy when people gave me good feedback after eating my food. FROM DIVA TEA & COFFEE HOUSE Ingredients Pastry: 2 3/4 cups plain flour 1 cup icing sugar pinch salt 250g cold butter, diced 1 egg 1 tsp vanilla essence 1 tsp lemon zest 1 tbsp lemon juice 1 extra egg, lightly beaten

Filling: 250g cream cheese 1 cup icing sugar 1 tsp vanilla bean paste 2 tbsp lemon juice Topping: 1 punnet of strawberries, blueberries, raspberries or blackberries 1/2 cup apricot Jam

Method: For the pastry combine dry ingredients in a food processor. Add butter and mix until it resembles breadcrumb consistency. Add lemon juice and zest, vanilla and egg and pulse until just combined. Roll into a ball and wrap with cling film. Rest pastry in fridge for 2 hours. Pre-heat oven to 180C and lightly grease 6 x 6cm loose base flan tins. Roll out pastry to 3mm thickness on a floured surface and line the tins with pastry, smoothing out gently and trimming any excess from the edges with a knife. Prick the pastry lightly with a fork and let rest in the fridge for 20 minutes. Blind bake pastry cases for 10 minutes, then brush lightly with the extra beaten egg and return cases to the oven for another 5-8 minutes. Let cool for 15 minutes before removing from tins. To make the filling, place all ingredients in a stand mixer and using a paddle attachment beat cream cheese mixture gently until light and aerated. When cases have completely cooled down, spoon the cream cheese mixture into a piping bag and pipe into the pastry cases. Top tartelettes with a mixture of fresh berries. Warm the apricot jam slightly then using a pastry brush, lightly brush the fruit with the jam for a beautiful glazed finish.
