Marketing Executive Amy Garrett says… “The Pyjama Project has been launched so that when the kids come to Honeypot for some much needed respite, they’ll be given a Bedtime Pack with a pair of new Pyjamas, a bedtime book and a cuddly toy which they can also take home with them. The idea is to give these kids a bit of much needed TLC.”

M

Our people of Orchid worked together to help us as much as they could, customers were able to donate children’s pyjamas, cuddly toys or drop in bedtime books to ‘our family’ pubs.

ORCHID STORY OMG! OF THE MONTH! NEWS - GOSSIP - FUN! The Priory Fuzzy Ed ’s

‘Beautifiul pub!’

THIS MONTH OMG! VISITS RICHARD AND JUNE OGDEN AT THE PRIORY IN WELLINGBOROUGH TO GET THE STORY BEHIND THIS BRILLIANT PUB AND THEIR SUCCESS!

K

A beautiful pub with brilliant managers who succeed because of their front of house style management and excellent team work ethic; The Oggy’s are inspiration to all of us and a true asset to Orchid.

Y

The Priory’s customers are mainly hardcore traditional, however recently with a Fuzzy Ed’s and meeting room extension they attract a much wider range of generations and groups. They have a very high rate of loyal returning customers “they keep coming back because they know the pub and what they’re going to get”. “We love the Priory!” say June and Richard “and are very protective over it”.

M

Richard says “The success of the Priory did not happen by accident!” It’s all about having a laugh yet staying professional; a manager with the right work ethic naturally attracts staff of the same calibre! The Priory’s head chef has been with them from day one too, 2nd chef for 8 years and deputy manager for 7 years! “A lot of our staff just stay” sais June, staff who have left for university will always come back and work over Christmas, meaning they never have to worry about being understaffed through the holidays!

One of the perks about having worked at the pub for so long is all of the customers you get to know, seeing them bring up their children and bringing them in for a job once they finish their GCSE’s. June and Richard see them go through college, get into universities, pass their driving tests, host their leaving parties or see them go into work “they are like extended family”.

C

The couple aren’t just any ordinary managers… they have been in the business for 30 odd years and have been managing the Priory since day one; Richard even named the pub himself when it was built in 1997! Referring to themselves as the Homer & Marge of Orchid, they are not short of personality and this is widely portrayed within the business. With a large loyal base of customers, excellent staff and many a time of the highest staff retention rates in the company, what is their secret!?

OMG! Recipe Time! This month’s recipe… a romantic chocolate treat comes courtesy of Julia Hill – Chef at The Frogshole Farm,Crawley

HAZELNUT CHOCOLATE MOUSSE GATEAUX

300g chocolate 600ml cream (whipped to firm peaks) 2 tsp gelatine & 2 tbsp cold water (soak) 8 egg yolks & 2 tbsp brandy

Assembly: OMG OMG

Method: 1. 2. 3. 4.

Melt chocolate over a low heat in double boiler. Combine the eggs and brandy, mix into melted chocolate. Next, stir in the gelatine mixture and blend well. Gently fold in the cream, and allow to set in the fridge for a couple of hours or overnight.

To assemble, just pile it all up in layers decorating with the extra meringue bits and chocolate swirls or strawberries, or fresh flowers!

K

For the Mousse: Ingredients:

Y

1 tsp (cinnamon)

1. Beat the egg whites until very firm adding sugar (5 x per cup) every five minutes or so. (This will take about ½ hour – the time factor is really important – don’t rush it – it means your meringue is really fab). 2. Fold in cinnamon, nuts and cocoa with a metal spoon gently. 3. Line baking trays with silicone paper. 4. Divide mixture between 3 rounds, and a few extra shapes – rounds or long finger like pieces OR make 24 round discs about 6 cm in diameter and then tiny cocktail bits for the decorations. 5. Bake for 1 ½ hours at just under 100C. Remove from oven and cool.

M

8 egg whites 2 cups caster sugar ½ cup nuts (roasted and ground) 1 tbsp (cocoa)

Method:
