THE ROLE OF OLIVE OIL IN CRETAN CULTURE AND NUTRITION The olive tree and its seeds, especially the olive oil, constitute an important element in the Cretan culture and nutrition from the ancient years up to today. In the Minoan era the olive oil occupies a prominent position in the social life and the economy of Cnossos and the other cities. At that time the Cretans used the olive oil not only for their nutrition but also in a variety of ways. They used it as a cosmetic, usually flavoured with herbs, as a body ointment, as a therapeutic substance, as a lubricant and in religious ceremonies. Ideograms depicting the olive tree and its products are found in Linea A and B tablets. Wall-paintings, tools, storing utensils and other archaeological findings bear testimony to the close relation between the Cretans and the olive oil. This relation continues existing through the years and it shows that the olive tree is a diachronic value in the daily life of the Cretans and in particular the olive oil is considered to be the main element of a healthy diet. In particular, the Cretan diet, which is based around olive oil, is being rated by several studies, as one of the most characteristic and quality Mediterranean diets. The Cretans have always used the olive oil in large quantities in almost all their dishes. NUTRITIONAL INFORMATION The main criteria for qualitative valuation of the olive oil is its class, its acidity and its production method. Virgin olive oil is the oil that is obtained directly from olives only in natural ways, like common pressing, centrifugation or filtration and is classified in four categories. The Extra Virgin Olive Oil, the free acidity of which ranges from 0 to 0.8 grades, the Virgin Olive Oil with an acidity up to 2 grades, the Ordinary Virgin Olive Oil with an acidity up to 3.3 grades and the Substandard Virgin Olive Oil with an acidity higher than 3.3 grades. The acidity of the olive oil indicates its content in oleic acid. The methods of harvesting, storage and extraction can greatly affect the final acidity of the oil which determines how edible it is. The manufacturing process of olive oil is one factor that contributes greatly to its quality. The prevailing method is that of cold extraction in which the oil is extracted from olives by filtration or centrifugation of the olive paste in temperature up to 27 degrees. This low temperature ensures the preservation of the quality characteristics of the olive oil. The Cretan olive oil has excellent quality characteristics, such as an exceptional flavour and aroma, due to the special geo-climatic conditions of Crete and, in particular, the high levels of sunshine and the dry climate of the island. It is well-known the “Study of 7 countries” by dr.Ancel Keus, who in 1956 organized the first comparative study among 7 countries with different nutritional habits, in which Crete took part, in order to examine the cardiovascular diseases in relation to the way of life of the people. The results of this study revealed that the health level of Cretans was the highest and this was due to the Cretan diet and the great consumption of good quality olive oil (the "secret of Cretan longevity").

Cretan Rusk with tomato and olive oil We grate a big tomato and 100gr of feta cheese. We sprinkle rusks with very little water and we place each one on a plate. We drizzle as much olive oil as we want, then we add the tomato and on top the feta cheese. Finally, we put slightly cut onion, caper, olives and we sprinkle with oregano. We serve it immediately.
