But it’s remained a jewel in Atlanta’s crown since 2002 throughout it all. When it first opened, chef Michael Tuohy brought his clean California style to the plate. When Tuohy returned to the West Coast, he sold the restaurant to Bernard Moussa and Nicolas Quinones, who soon partnered with chef Kevin Gillespie (now of Gunshow), but by 2013, Quinones was the sole owner, and Tyler Williams, who hails from Abattoir, the chef. I’m not surprised the warm, rustic restaurant revered for its wine list (with more than 400 wines spanning over a dozen countries) has had so much success, considering Quinones’s approach. “The culture here is based on sustainability, which means supporting local agriculture, humane animal husbandry and sustainable fisheries, and employing people who care deeply about dining,” explains Quinones. “I pay everyone a fair wage, there are no low-skilled employees, and I only hire people who want to move forward: servers who want to become sommeliers, dishwashers who want to become chefs, chefs who want to open their own places. Advancing each individual is the key to sustainability.”
