Late at night or early in the morning when the air is cooler is the best time for the hand-harvest. If the grapes are allowed to warm, it can cause unwanted fermentation. A crew of workers snip the clusters from the vines and place them in small bins for transport to the winery. This is the best way to ensure quality and integrity.

A barrique is the most common type of oak wine barrel, originating in Bordeaux, France. This term refers to a particular size and shape. The size is very important as it determines how much oak influence will occur. This cask usually holds about 59 gallons of wine.
