Heat oil to medium-high in a large Dutch oven. Add onion, celery, and carrot and cook about 7 minutes or until soft. Stir in beef and garlic. Cook until browned. Add wine and bring to a simmer, cooking until most of the wine is reduced. Stir in tomatoes, paste, and stock, mix well and add the bay leaf. Reduce heat and let simmer for 1 hour. Remove bay leaf and gradually stir in milk. Continue to simmer about 45 minutes, stirring occasionally. Season with salt and pepper and serve over fresh pasta of choice.

Father’s Day

Preheat oven to 450°F. Lightly coat the cast iron skillet with olive oil. In a bowl mix the sweet potatoes, onion and garlic cloves with the balance of the olive oil, coating well. Place the chicken pieces in the oiled skillet skin side up. Arrange vegetables around the chicken, ensuring the chicken is exposed. Sprinkle with salt and pepper to taste, and add bay leaf. Bake for 45-50 minutes until the chicken is golden brown and crispy. Remove garlic cloves, squeezing juice over meat if desired. Let sit for 2-3 minutes and serve hot.

Use 3 dishes to bread the veal; flour and salt in one, eggs in the second, and breadcrumbs in the last. In a skillet heat at least ¼” of oil. Dredge the cutlets, one at a time, in the flour. Dip in the eggs to coat and roll in the breadcrumbs. The crust should form a loose shell around the meat. Place in the hot oil (cooking in batches) and fry for 2-3 minutes or until golden brown then flip and fry the other side for an additional 2-3 minutes. The meat should be “swimming” in the oil and you may want to move the cutlets around with a fork so they don’t stick to the pan. When done remove and allow the oil to drain before serving.

In a small pan heat the wine and let sit. Heat large pan over medium-high heat with half of the oil. Season scallops with salt and pepper on both sides and place in pan for 2-3 minutes to brown. Flip scallops, add the butter. Once butter browns add the wine for 2-3 minutes. Meanwhile heat the other pan with remaining oil, add spinach, season with salt and pepper and toss to coat. When cooked remove, mix with the scallops and serve over pasta of choice.

Combine the marinade ingredients and blend/pulse until smooth. Pat the lamb pieces dry and put in a glass dish then add the marinade mixture, covering the meat and mix well. Refrigerate for at least two hours (up to 24 hours) Preheat grill to medium-high. Place the lamb cubes on pre-soaked wood skewers and grill until desired doneness, turning the skewers every 1-2 minutes. Serve with your favorite veggies.

In a large pot, melt the butter over medium heat. Add onions, cook, stirring until caramelized. Add garlic, salt, cinnamon, nutmeg and ginger and stir constantly for 1 minute. Add ¼ cup of stock and scrape any bits from the bottom of the pot. Add the rest of the stock, water, and pumpkin puree and stir to combine. Reduce heat and simmer for 20-30 minutes. Pour into blender, puree, then stir in the cream and serve immediately. Garnish with toasted seeds and parsley if desired.

For filling, combine all of the ingredients except the butter in a saucepan. Bring to a boil over medium-heat, stirring constantly. Make sure to scrape the bottom occasionally. Simmer for about 30 seconds, then strain and cool. Once cooled puree the filling with the butter until smooth. Pour into tart shells, then cover with plastic wrap and refrigerate for 2 hours so the filling can set. For the meringue, beat the egg whites and cream of tartar with an electric mixer until soft peaks form. Gradually add the sugar while beating until the peaks become stiff. Spread the meringue on the tarts. Caramelize the meringue using a small culinary torch if desired.

Preheat oven to 375°F. Slice each zucchini in half, lengthwise. Line on a baking sheet, drizzle with olive oil. Season with salt and pepper, and bake for 25 minutes. Combine the mozzarella, parmesan, and Italian seasonings in a bowl and stir. Remove zucchini from oven and top with about 2 tbsp of the marinara sauce, sprinkle each with same amount of the cheese mixture. Broil on high until cheese is golden brown and bubbly, about 2-3 minutes. Garnish with fresh basil.

Preheat oven to 450°F. Place chicken in a foil-lined baking dish. Drizzle oil over chicken and season with ¼ tsp each of salt and pepper. Roast for 45 mins. Remove foil and slice the chicken. Reduce the heat to 350°F. Meanwhile, boil the cauliflower for 6 minutes. Strain. Stir together the cauliflower, chicken, bacon, green onions, garlic powder, ½ tsp salt and balance of pepper along with half of the Monterey cheese and all the cheddar. Place in the baking dish and top with remaining Monterey cheese and bake for 25 minutes. Garnish with fresh parsley.

Fry noodles according to package instructions and set aside. Combine oyster, hoisin and soy sauce, rice vinegar, brown sugar then set aside. Over high heat, add oil to wok. Cook the shrimp, stirring until pink on both sides. Remove shrimp and set aside. Add more oil if needed; add garlic, onion and ginger. Cook for about 2 minutes, stir in the bok choy, broccoli, mushrooms, snow peas, bell peppers, and pork. Meanwhile mix the cornstarch in water; add to the sauce. Pour over mixture and stir to combine. Cook, stirring until desired softness. Mix in the shrimp for the last 2 minutes. Serve over crispy noodles.

Boil cabbage until leaves fall off of head. Set aside 12 large leaves. Trim the thick vein from each cabbage leaf. Combine the beef, pork, onion, uncooked rice, parsley, salt, and pepper with half a cup of the tomato sauce and mix well. Place about ¼ cup of the meat mixture into a leaf, then fold in the sides. Beginning from the cut end and roll up, tucking in the end. Repeat. Use the left over leaves to line a casserole dish. Arrange the cabbage rolls seam down. Mix the diced tomatoes, sugar and remaining tomato sauce and pour over the rolls. Cover and bake at 375°F for about 1½ hours or until tender.

4 medium eggs 2 cups (500 ml) each raisins, sultanas & currants ½ cup (125 ml) mixed peel, chopped ¼ cup (65 ml) each brandy & port 1 tbsp (30 ml) almonds, chopped ½ tsp (2.5 ml) each grated nutmeg & cinnamon

The day before pour brandy and port into a sauce pan. Add cinnamon, nutmeg, salt, dried fruits, mixed peel, nuts and zest. Stir and bring to a simmer for 10 minutes. Cool then pour into an airtight container and refrigerate overnight. In a large mixing bowl add flour, sugar and softened butter, then mix in the eggs with an electronic whisk. Fold in the fruit mixture until evenly distributed. Spoon into greased baking dish and bake at 350°F or 4 hours or until cake feels springy in the center. Once cool add icing and enjoy!
