Thursday Café (in fact open from Thursday through Sunday) is located in the upand-coming Newmarket area, an industrial neighborhood now home to produce markets, coffee stalls, and Teeling, Dublin’s newest whiskey distillery. Chef Aga Sierpinska sources the ingredients she uses in her café from the Dublin Food Co-op, which is housed in the same building.



Ground almonds keep this orange cake gluten-free, Quarter cooked oranges, and remove seeds. Pulse orange while giving it a wonderful crumbly texture. quarters (skin and all) in food processor until finely chopped. Set aside. 3 large unpeeled oranges 6 eggs, separated 1 cup unrefined Demerara or turbinado sugar 2 cups ground almonds or almond meal 1 tsp. baking powder ¼ cup slivered almonds Confectioners’ sugar, for dusting

1 Place whole oranges in saucepan, and cover with 2 inches water. Boil 30 minutes, or until soft. Drain oranges, discard water, and cool.


Preheat oven to 350˚F. Line bottom and sides of 9-inch springform cake pan with parchment paper.

4 Whisk together egg yolks and sugar in large bowl 4 minutes, or until mixture is thickened and pale yellow. Stir in orange pieces. Fold in ground almonds.


Beat egg whites with electric mixer until soft peaks form. Fold egg whites into cake batter, then fold in baking powder. Spread batter in prepared pan, and sprinkle with slivered almonds.

6 Bake 60 minutes, or until cake is golden, and toothpick inserted in center comes out clean. Cool in pan. Unmold, then dust with confectioners’ sugar before serving. PER SLICE 329 CAL; 10 G PROT; 15 G TOTAL FAT (2 G SAT FAT); 42 G CARB; 124 MG CHOL; 110 MG SOD; 7 G FIBER; 31 G SUGARS
