BOARDWALK FRIES Don’t wait in line on the boardwalk. Bake your own fries. 1 hour, 20 minutes • $ • makes 4-6 servings

3 russet potatoes (about 24 ounces) 3/4 teaspoon sea salt, plus more to taste 1/4 teaspoon freshly ground black pepper, plus more to taste 3 tablespoons olive oil 1. Preheat oven to 400 degrees. 2. Cut potatoes lengthwise into 1/4-inch-thick wedges, place in large bowl and soak in cold water for 30 minutes. Drain potatoes and pat dry. 3. Dry bowl, return potatoes to bowl and toss with olive oil. Sprinkle with salt and pepper and spread on a parchment-lined baking sheet (don’t overcrowd the fries) and bake on the bottom rack of the oven for 35 minutes, flipping halfway through cooking, until golden brown.
