Page |2 My wishes for 2012. This year I want to be happy and to achieve a lot of goals. First of all, I want to pass the lower exams because I have been practicing for 5 years. I want to get high marks because I want my parents and my teachers to be proud of me. Also I want to win with my team in water polo games. Apart from all that, I would like to spend my Christmas holidays with my family. Moreover, I want to travel to Paris because I believe that Paris is one of the most beautiful cities in the world and I would like to visit Disneyland. I wish to succeed in most of them this year. My New Year’s Resolutions! 1. First of all, I will study more. 2. Another important decision I have made I to give money to poor people. 3. I will also become a better person. 4. I will convince my friends to stop smoking. 5. I will pass the B2 exam. 6. I will also organize a campground with my friends. 7. I will start playing the electric guitar. 8. I will organize a fascinating trip to see unique natural beauty scenery. 9. I will also help my mum do the housework. 10. NEW YEAR 2012: In the New Year 2012 I want to have a very good time. First of all, I hope all the members of my family and I are healthy and happy in our life! So, if any problem arises, we'll find a way to solve it and we'll be very well. Also, I'm looking forward to passing the lower exams this year and getting a very good mark at it. In the meanwhile, I want to get along very well with school subjects and English. Therefore, I'll have exceptional marks. I hope to get more friends as well, so I'll have a bigger company than now. New Year is here! Today is the 26th of December and New Year’s Eve is not too far. Everybody goes shopping, decorate their house and kids are waiting for Santa. New Year is a chance to change your life. You can become a better person and you can help others. Many people expect things that can’t be done. What I expect is health and love. I wish people were friendlier and respected one another. People should have fun and enjoy themselves. They can help the poor and give them some money. For the time being, people are anxious and the financial crisis has affected their lives. You had better enjoy yourselves and smile! I wish you a Merry Christmas and a Happy New Year! New Year traditions. There are different New Year traditions from each country. Perhaps some traditions are strange but they are also interesting. In Spain, at midnight, on New Year’s Eve people eat twelve grapes, one for each time the bell rings, to bring good luck for the twelve months ahead. Also, in New York city, many people watch a big decorated ball drop at midnight and this event is shown on TV throughout the country. Many people have New Year’s Eve parties where they dance and eat lots of food, a special dish or black eyed peas, which are thought to be lucky. “Protoxronia” is the word for New Year’s Day in Greek. New Year’s Day is Bill’s day in Greece. People say that Bill helped the poor and left gifts for children in their shoes while they were sleeping. The Greeks exchange gifts on New Year’s Day and cook sweet biscuits (“kourampiedes”), which are very popular at Christmas. Another popular tradition is the cutting of the “Vasilopita” (a cake), with a coin inside. Whoever gets the piece in his/her piece will have good luck in the New Year. Georgia Pnevmatikou ECCE
HOW TO MAKE BAKLAVA INGREDIENTS Filling 500 gr. walnuts, coarsely chopped 60 gr. sugar 1 teaspoon cinnamon

Pastry 500 gr. fyllo pastry 180 gr. unsalted butter, melted

230 gr. caster sugar 300 ml water 2 cinnamon sticks 2 teaspoons lemon juice some lemon peel 2 tablespoons honey METHOD
Mix all the filling ingredients in a bowl. Liberally butter the base and sides of an elongated or round baking dish. Measure the length of the fyllo against the baking dish roughly and, allowing 2 cm extra approximately for shrinkage, cut to length with a sharp knife. Brush each layer of fyllo with melted butter and spread over the base of the container as evenly as possible. Once you have used 5 layers of pastry, sprinkle a thin layer of filling all over the surface and add 3 more layers. Sprinkle a thin layer of filling and place 2 more sheets of fyllo on top. Sprinkle on all the remaining filling, spreading it evenly, and cover with 7-8 more layers of fyllo, brushing individually with butter. Fold any excess pastry on either of the sides over the filling and brush it with butter. Brush the top layer liberally with butter in order to get it crisp and golden. Trim any excess pastry with a small sharp knife, keeping in mind that it will also shrink. Cut the top layers of fyllo carefully, either diagonally into diamond shapes or straight, which will result in square or elongated pieces. Be careful not to cut right down to the base, but only the top layers. This is done in order to make cutting and lifting the pieces out, once it is cooked, much easier and efficient. Using the tips of four fingers, sprinkle drops of water all over the surface and cook it in a preheated oven, gas no.5/ 375 grades F / 190 grades C, for 15 minutes; lower the heat to gas no.4/ 350 grades F/ l80 grades C and cook for a further 20 minutes. In the meantime, prepare the syrup. Place all the syrup ingredients, apart from the honey, in a saucepan and stir to dissolve the sugar. Simmer for 6-8 minutes; add the honey and simmer for a further 5 minutes until it thickens slightly. Let the baklava cool down then pour the hot but not boiling syrup slowly all over, through a strainer. Let it stand and absorb the syrup. Nickolas Hatzievangelou A senior

ws It was New Year’s night and I had the strangest dream of all my dreams. I went a trip with my parents and cousins at a big castle. After we arrived, my parents and cousins disappeared. I felt very scared. Suddenly a dragon that was sleeping next to the castle woke up and attacked all the people in the area. I ran at the city and after five minutes I returned at the castle. Kids’ News It was New Year’s night and I had the strangest dream. I was at my village in SKYROS and I was playing with my cousins. My grandma and my mother were cooking fish. My granddad was having a bath and my father with my brother was watching TV. I saw a man with a baby. The man the opened the door and I saw the baby. I freaked out. I didn’t know what to do. This was my dream
On New Year’s Day I get up at nine o’clock. At noon I eat lunch. In the afternoon I play play station and PSP and I watch TV. Then I eat and I go to sleep. John Varelas B junior
