Trefethen Family Vineyards Nappa Valley, California One of Napa Valley’s pioneering wineries, Trefethen Family Vineyards produces world-class estate grown wines that express the soul of their vineyards. The dedication of the Trefethen family is manifest in every aspect of the operation, from the soil to the table, including sustainable farming, thoughtful winemaking and gracious hospitality.

BUY NOW 2014 HāLo - £199 HāLo is named for Trefethen’s 3rd generation, Hailey and Lorenzo, who grew up in the middle of our Hillspring Vineyard in the Mayacamas foothills of western Napa Valley, the source of this extraordinary red wine. The vineyard’s rocky, shallow soils, coupled with a climate protected from fog and wind, make Hillspring the perfect spot to grow exceptional Cabernet Sauvignon.

forest which surrounds the vines as perfumed scents of earth, chocolate, bay leaf and cherry dance in the glass. The palate is rich with ample tannins and complex flavors of plum, black currant, tobacco and a touch of peppercorn. To enjoy every nuance of this sumptuous wine, decant before serving. Further rewards await those who have the patience to cellar a few bottles for future enjoyment.

Tasting Notes: A true expression of our terroir, one can literally taste the flavors of our Hillspring vineyard in every sip of HāLo. Your nose is enchanted with botanical aromas of the oak

96 POINTS “Perennially vying for top honors as one of the most impressive Cabernets of the year, HāLo is once again a magnificent effort that ranks with the most collectable wines around.”

2017 CHARDONNAY - £35.49 BUY NOW A beautiful gold color illuminates the glass and aromas of lemon, honeysuckle and pear greet the nose. The fresh palate features more citrus flavors, as well as green apple, and a clean finish. The oak influence in this wine is subtle but important, adding a note of vanilla on the nose and a pleasant roundness on the palate. Another classic vintage of Trefethen Chardonnay! 92 POINTS | FIRST PLACE California Grapevine 91 POINTS | GOLD Critics Challenge Int’l Wine & Spirits Competition 90 POINTS James Suckling

2016 DRAGON’S TOOTH - £48 BUY NOW This alluring blend has rich aromas of ripe red plum, baking spices and cracked pepper. The palate is lush with flavors of cherries and dark berries. Malbec brings color and diversity of fruit; Petit Verdot and Cabernet Sauvignon lend the darker fruits and robust structure. Merlot rounds out the mid-palate and brings an elegant freshness to the wine. While in its youth, this wine will benefit from decanting before serving. 91 POINTS | FIRST PLACE “Rich, opulent. plums, bramble. Oaky, dark. Chewy tannins. A ripe seductive red blend.”

Domaine Gayda Brugairolles, France The Domaine’s organic vineyards, situated in the heart of the Languedoc, produce wines with “provenance”, wines with a home. All vineyards are treated with maximum respect for the natural environment, improving biodiversity by hedge planting and “wilding” unused land, bringing back a balanced ecosystem essential for sustainable production. Using the beautiful diversity of the many vineyard “terroirs “ Gayda’s range of wines show off the very best of their winemaking skills using the “nothing added, nothing taken away“ philosophy that minimises unnecessary intervention in the process.

CHEMIN DE MOSCOU - £25.95 The wine that defines Domaine Gayda. Principally syrah driven, it is matured 20 months in oak followed by a rigorous barrel selection. The origin of the name is Napoleonic, the same heritage giving the title to our famous «arbre de Moscou». Deep purple, almost opaque in colour with an expressive nose of black fruits, pepper, cinnamon, spice and violets. A seductive palate of dark hedgerow fruits, very open and welcoming with an explosion of fruit and spice. Mineral undertones. The 2016 vintage won a Gold Medal Summer Tasting 2019 MUNDUS VINI The Grand International Wine Award Drink Now or age this wine over the next 5 years. 91 POINTS

Bodegas Lanzaga Rioja, Spain This summer, Will and I were delighted to be invited on a trip to Discover Rioja. During our 3 day trip we were keen to visit some wineries that are looking to do things differently in Rioja and move away from excessive oak aging. One such winery and a real hidden gem was Bodega Lanzaga.

Located in the village of Lanciego amongst six hills and three valleys. The Sierra Cantabria shields the vineyards from the Atlantic winds and rains from the north, creating a unique microclimate with low rainfall. Soils are stony with a palm-deep layer of iron-rich calcareous clay overlaying the mother rock. The whole estate is dry-farmed and worked organically, it’s the second largest organic certified estate in Rioja – the largest being its parent estate – Remelluri. Production is relatively small in comparison to the big brands: they currently produce between 180-250,000 bottles a year, compared to many of the more well-known estates that produce several million.

BUY NOW 2016 CORRIENTE - £15.95 My wine of the year, delicious and unbelievable value. The Bodega use a Burgundy style classification for the wines: Corriente is their négociant wine, they use the grapes that don’t go into their village wines and also buy some grapes for this from next door village Labastida. The term Corriente was used in the early 20th Century to describe good, approachable everyday wines drunk by ordinary people, that reflect their region. They’re particularly pleased with the 2016 vintage.

BUY NOW 2013 LANZAGA - £27.50 Lanzaga is their village wine from older vines, it’s 90% Tempranillo plus Graciano which adds structure and a herbal, liquorice note, Lanzaga is aged in old foudre. Proprietor Telmo Rodriguez isn’t a fan of new oak: “oak is a cosmetic, it masks the taste of the village and the grapes”. The nose is super expressive, nuanced and elegant, mixing flowers with wild berries, cured meat, spices and minerals. The wines have incredible freshness, and here, there are very elegant and refined tannins.

91 POINTS – Robert Parker Always a sure value, but the 2016 is truly exceptional, possibly the finest vintage they have bottled to date. It’s floral and aromatic, very elegant and balanced. There are fine tannins, a chalky minerality and a supple finish.

93 POINTS - James Suckling Classically styled with dried cherry, tobacco and earthy notes giving rise to dried roses and red cherries. The texture is supple on entry, the fine-grained tannins carrying fresh blueberry and cassis flavors. Very fresh, long and soulful. Compact finish. Drink or hold.

Two Tribes Chief Justin’s Christmas Recommendations Dream Factory - £2.09 BUY NOW It’s crisp and seductive. Aroma of citrusy hops, grapefruit. Pours a light golden colour beer with a medium head. Our every day, all day, easy drinking, go to Pale Ale. Two Tribes Chief: “This was the first beer brewed in our Kings Cross brewhouse, which is our creative kitchen and affectionately known as the ‘Dream Factory’ Dogtown - £3.09 The old school malt base has some deliciously piney and grapefruit hops. Centennial lends its trademark pink grapefruit flavour while Simcoe leans in with some bitter orange and fresh pine. Two Tribes Chief “The original West Coast IPA is the style that has come to define craft brewing’s thirst for the extreme. This beer takes me back to the early days of US breweries that lead the way. A real classic.” BUY NOW

BUY NOW Power Plant - £2.09 This is lager in its most natural state. Crafted to remove gluten but retain character and flavour. The beer is crisp, and carries a distinct noble hop character from the Saaz and the Mittelfrüh Hops. The flavours are subtly floral and herbaceous, with just the right amount of bitterness. Two Tribes Chief “We set out to brew a gluten-free lager that’s never tasted so good - Mission Accomplished! Enjoy!”

TOP TIPS FOR BUYING CRAFT BEER Ask questions. Tell the experts what you usually like drinking and they’ll come up with suggestions for similar yet (hopefully) better options. Try, try, try. There’s a whole world of different beer styles and sub-styles out there that could be completely alien to you at first. But don’t scoff at the notion of a sour beer such as a saison or run scared from a murky, eight per cent double IPA before you’ve given them a try. Your new favourite beer could be just a few hops away. Stick to a budget. At first glance, craft beer can seem crazily expensive. For a very strong, limited edition 500ml can you will sometimes be expected to pay upwards of £7. It sounds a lot but instead of comparing it to macro beers that are often subsidised by supermarket giants, think of it like you would a decent bottle of wine. These aren’t beers to be downed in one or bought as a six-pack. Yes, there are some ripoffs around, but generally expensive beers are priced as such because they are high quality and produced with expensive ingredients

Your own wonderful world of wine at home

We have said it before and we will say it again, Port isn’t just for Christmas but for many of us it is the only time of year we buy a bottle. So, if you are making your annual Port purchase read our updated Port profile first to remind yourself of the best way to enjoy a glass and what we have to offer. Port originated in Portugal in the 18th Century. It first became popular in England when the English were at war with France and no longer had access to French Wines. Port was a good wine to import as it is fortified with brandy, acting as a preservative the brandy made the wine stay fresh on oversea voyages. It’s also the brandy in Port that gives it a higher alcohol content than most other wines. How to drink Port Ideally Port should be served in a narrow wine glass at around 18 degrees (just below room temperature). Only fill the glass

half-way so the wine can aerate and you can appreciate its aroma. That being said (and with any drink for that matter), drink it however you want to as long as you enjoy it! Cheese and Chocolate To best enjoy your Port as a digestif, we recommend pairing it with either a sweet or savoury treat. A strong veined blue cheese like Stilton, Roquefort, Gorgonzola or a well-aged Cheddar are the best cheese companions. These pungent cheeses offset the sweetness of your Port creating the perfect balance. If you want to take it to the next level add some grapes, walnuts and quince to your Port experience to perfectly compliment your palette. Dark Chocolate between 50%-70% is a good match for drinking Port. Port’s sweetness makes the chocolate taste even more decadent, don’t go too dark or too light though as the balance will be off.

QUICKLY, BRING ME A BEAKER OF PORT SO THAT I MAY WET MY MIND AND SAY SOMETHING CLEVER. Peter Lanberg LBV and Vintage These are two common types of Port you will come across. But what is the difference? LBV (Late Bottled Vintage) are vintage wines that have been aged for between four and six years in large oak vessels before they are bottled. This helps to make these wines more approachable on release, compared to Vintage Ports. They are similar in style to a Reserve (higher-quality) Ruby Port which are ready to drink from release and rarely benefit from ageing. For Vintage Ports, all ageing prior to bottling takes place in large oak vessels or stainless steel and are unfiltered, meaning that you should decant before drinking. Whilst Vintage Ports are tannic and concentrated in youth, they will mellow over many decades.

Colheita Ports Colheita Ports are great as they are a little less heavy then a traditional vintage port. They are tawny ports aged in small oak barrels from a single vintage. Colheitas change dramatically during this extended time in cask and take on flavours of dried fruits, nuts, citrus and exotic spices, while becoming very smooth and complex the older they get. They are also amazing with cheese and a game of Pictionary!

grape nowadays, it kind of sits in between Sauvignon Blanc and Chardonnay but is sooo food friendly! My Christmas Chenin would be Chris Alheit’s Cartology – fresh fruit, spice and incredible depth with sapidity. It’s a young one but uber cool. Blank Bottle 69.999 - £52.95 BUY NOW My family are suckers for red wine and so without fail there will be red on the table. Recently I’ve been trying a lot of Pieter Walser’s wines (Blank Bottle). He makes incredibly high-quality wines with pure fruit, excitement and refinement running through them. His Rhone-Blends and single varietals all offer something slightly different from the usual. For Christmas, I’m going to be taking home one of his 69.99 bottles (a magnum of Syrah). Go big or go home.

Janz Brut NV - £17.95 BUY NOW XMAS OFFER £15.95 Enjoy a glass of bubbles on Christmas morning? I’d recommend the Pirie NV or Jansz Brut NV. Both outstanding bottles of Tasmanian fizz that will go head-tohead against the big Champagne labels but without the price tag. The Pirie is light, elegant with highlighted citrus notes whilst the Jansz is a bit fuller on the palate. All you need now is a sabre to take the top off... Cartology -£36.95 BUY NOW Before Christmas dinner, we tend to have a starter of smoked salmon or charcuterie; I find that a crisp, oaked Chenin Blanc pairs well. Chenin is such an underrated

Dalva 1995 Colheita Vintage Port. - £28.95 BUY NOW What’s the one thing you always forget when having a dinner party? The sweet wine. Sticky wines are a fantastic addition to accompany that favourite dessert of yours that mum made! Rule of thumb for pairing would be a port or red sweet wine for strong cheeses or rich chocolate desserts; but for everything else there’s white. It’s a simple yet satisfying port with lovely raisined fruit – as it is slightly lighter than traditional vintage port, it’s a great introduction to the world of fortified wines but lively enough so you don’t fall asleep on the sofa!

The Ingredients • 15 ml clementine juice , •Ground cinnamon • 50 ml cognac • 30 ml Martini Bianco

The Ingredients • Decent Quality Gin • Red Vermouth • Apricot Brandy • Fresh Grapefruit

The Method A general rule for measurements with this cocktail starts with 50% gin, 25% vermouth & 25% brandy, the size of your cocktail will not matter if you follow the percentages. To batch it up, use a bigger vase to complete the dilution process. In your mixing glass add your three ingredients and stir over ice until the burn of the alcohol has left, fine strain the mixture into a nice chilled coupe or martini glass and manipulate the oils of the pink grapefruit out of the skin and over the drink for a lifted aromatic finish.

The Method Moisten the rim of a cocktail glass with the extra clementine juice.Sprinkle some cinnamon onto a plate, invert the glass, dip the rim in the spice, then set aside. Shake all the remaining ingredients in a cocktail shaker with ice and strain into the glass.

Alcohol free (af) drinks, it’s a Sobering thought… I love wine, enjoy playing with spirits and from time To time chew down on a hoppy craft beer or two. But what are the options if you want to go out And enjoy a great alcohol-free drink… especially in the lead up to christmas!

Trends in the drinks industry are looking at you have to replace with sugar to make up the increase in those wanting to drink less for that mouthfeel; I would like to take this alcohol and the general decrease in alcohol opportunity to introduce ISH Spirits. levels. Take the old school traditionalists of Australia producing 14.5/15% Shiraz. Whilst these wines still exist there is a general fashion amongst ‘new wavers’ to produce wine of lesser extraction, more finesse and lower alcohol. This is happening all around BUY NOW BUY NOW the world. The Craft Beer scene is showcasing how well they can produce a beer with low alcohol, take table beers and micro IPA’s with only 1.5% to 3.0% abv. Packed with flavour, they are low enough to enjoy a couple yet still flavourful enough to accompany a robust dish. AF beers are also improving with great examples from BrewDog such as Punk AF IPA - a beer for those seeking a point of difference at 0.5% ABV that brings all the attitude of their flagship Punk IPA, all of the flavour – but none of the alcohol.

‘Focusing on a mission to change the social norms of drinking. By providing a satisfying, alcohol-free alternative, we include those who don’t want to drink, or simply wish to limit their intake during social gatherings where alcohol is typically the focal point’ ~ Morten Sorenesn, Founder of ISH Spirits Morten created ISH Spirits after he decided to do a 100-day alcohol free challenge. During this time Morten realised that for those looking to appreciate the social aspects of enjoying a cocktail, but not always with the desire to drink alcohol.

Then we have spirits. This is an exciting area with huge potential growth. The only problem is Alcohol Free cocktails tend to be very watery and by removing the alcohol

Comprising of two products RumISH and GinISH, Morten has produced an alternative for the athlete, the pregnant woman, or the designated driver. It’s for those who can tear up the dance floor completely sober, and for those who simply want to wake up with a clear head on a Sunday morning.

The beauty of these products is that they are made from natural aromas such as juniper berries, vanilla and nutmeg… the same ingredients you’ll find in a typical gin or rum. ISH carefully extracted the aromas from these natural botanicals and spices and with their own recipes, combining the ingredients to obtain the familiar flavours you recognise, as an alcohol-free alternative to your classic spirits. And to add to the ‘free from’ concept GinISH and RumISH contain zero sugar for an ultra-low calorie content of 6kcal/100ml.

So, how best do you enjoy these great ISH spirits? The NOLO concept (no alcohol / lo alcohol) #nolo based on classic and all-time favourite drinks and cocktails, the ISH team created a collection of recipes that offer the familiar flavour and perfect punch… without the alcohol.

The NO:

MartinISH[0%abv] Ingredients - 6cl RumISH / 4cl espresso / 2cl white chocolate syrup / 1cl dark chocolate syrup Garnish – Coffee Beans Method – Shake with ice and fine strain into a chilled cocktail glass

The low-alcohol program offers the experience and pleasure of a classic cocktail but with a much lower ABV than it would typically contain. This is an ideal option for the day drinker who only wants a gentle buzz, the lightweight who would like more than one cocktail on a night out, or the professional who thirsts for a proper cocktail and still remain sharp. The possibilities are endless, here’s one to inspire:

Low Fashioned [11% abv -typically 35% abv] Ingredients: 5cl RumISH / 2cl Rye Whiskey / 1cl dark chocolate syrup / 2 dash Angostura bitters Garnish - Orange Peel / Amarena Cherry Method – Add all the ingredients to a mixing glass / add ice and stir until chilled / strain over ice into an old-fashioned glass.
