I can’t quite believe it is now September and summer is over – but what a summer it has been! Stirling really did itself proud and put itself on the map with a fantastic Armed Forces Day, Battle of Bannockburn, Stirling Highland Show… Not to mention the several days of glorious sunshine we had! Review of Café Continental by LOVE LOCAL Right on the high street of Dunblane lies Café Continental, a brasserie type restaurant complete with a grand piano! On a sunny afternoon, the outside tables were full of people enjoying lunch, or reading a book whilst enjoying a coffee. It felt very continental and testament to the relaxed atmosphere of the café. Indoors revealed a stylish design set off beautifully with the sleek black piano sitting on a raised platform. Weekend evening diners are treated to live musical accompaniment to their meal. The extensive menu offers a good choice from homemade soup and imaginative sandwiches to a range of enticing starters, mains and desserts. With strong French, Italian and Scottish influences the menu makes it difficult to choose!

Since this was a quick lunch break we settled for a main course. The Moroccan Lamb Burger, nicely spiced and cooked to perfection was complemented by goat’s cheese and beetroot salsa. Served with a side salad and fries, it was a generous serving. Café Continental pride themselves on catering for gluten free diets, not currently marked on the menu, so be sure to ask. We tried their homemade gluten free vegetarian pizza. A good variety of vegetables and a crispy, thin base made for a tasty pizza and for only £8.95 was excellent value. Stylish, with good freshly prepared food, served by helpful and friendly staff, Café Continental left us with a very favourable impression. If you don’t live in Dunblane it’s certainly worth the short journey.

Love Local Food by LOVE LOCAL IN ASSOCIATION WITH THE GROW FORTH LOCAL FOOD NETWORK Food has a big impact on our everyday lives, and there has been a significant resurgence recently in greening our food system and at the heart of this is trying to re-localise our food supply. People increasingly want to know where their food comes from; they want to support local growers, producers and businesses that stock and sell local food. People want to eat in a way that decreases their food miles and at the same time contributes to a thriving local economy. It is difficult to pin down a definition of local food, as the nature of food production is complicated and the more you dig into it (pardon the pun) the more tangents there are. However in the interest of helping people to move towards more sustainable food behaviours it’s essential to have some guiding framework, in particular around local food which is a big part of sustainable food behaviours. We think that in accordance with National Association of Farmers Markets that Local Food is: “Food which is produced, processed and traded within a specified distance, usually 30 miles radius” Of course it will be impossible to buy everything you currently eat or drink using this strategy alone as our food landscape doesn’t include the some 100,000 products available in a supermarket. However we should try and source as much as we can locally and then look to our regional neighbours. Of course it’s not just about reducing food miles; it’s also about other aspects of food behaviours too, such as food waste, types of food consumed, growing some of your own, ethical considerations, health and economic implications.

Perhaps it’s easier to think about our purchasing behaviour as step by step changes. We think these are some of the things we need to do more of: 1. Eat and cook together more often, celebrate food and welcome it back into our communities. 2. Eat seasonally, making the most of foods when they're available and fresh. Thus avoiding imported food, or food that has been grown in artificial temperatures. 3. Increase the number of vegetarian meals eaten on a weekly basis and when we do eat meat we want to make sure it’s as local as possible, it’s been grown and slaughtered with high standards of animal welfare. 4. Waste less food – and if it is unavoidable it should be composted, and if not compostable put to the food caddies provided by Stirling Council. (We throw around a 1/3 of a weekly shop away) 5. When eating out, support our local cafes, restaurants and shops which adopt a local food ethos, this will help drive demand and subsequently help support our local growers and producers. In the following pages Love Local highlights a number of local businesses that support the local produce ethos.

Start Up Stirling A year ago we introduced you to Stirling’s fantastic food bank charity, Start-Up Stirling. The last year has been a very busy one for Start-Up Stirling as the demand for practical and emotional support services continues to grow. Since opening their first Crisis Food Bank in October 2012, 800 adults and 300 children have been supported. Almost 3,000 food packs have been issued, equating to a staggering 51,200 meals.

This has only been possible thanks to the local community and everyone who has donated food, household items or money. Please continue to support Start-Up Stirling, the need continues to grow and they will soon be opening a third Crisis Food Bank. The Sunlite Café Let’s Make It Better (LMIB) is a mental health voluntary group, formed in 1994. Their aim is to support people with severe and enduring mental health problems within the local community by providing a safe, flexible working environment and a venue for social contact. Beer Battered Halibut with Tempura Tiger King Prawns by JASON HENDERSON, KNOCK CASTLE HOTEL & SPA Ingredients

Method

4 6oz Halibut Steaks 12 Tiger prawns (de-veined and de-shelled) 8 Baby Corn (peeled and blanched) 8 Baby carrots (peeled and blanched) 8 Asparagus spears (peeled and blanched) 1 red onion finely sliced 100g pea shoots 100g sundried tomatoes 500g creamy mashed potato

1. Season the flour and slowly mix in the ale until you reach a thick custard consistency. (Don’t worry if you have lumps, as this will add to your batter texture.) 2. Do the same process for the tempura batter with the gluten free flour and sparkling water. 3. Lightly flour halibut and dip in the beer mixture and gently place in hot fryer, cook until it rises to the surface. Repeat process with prawns and tempura mixture. 4. While fish is cooking, place creamy mash on the plate whilst you warm vegetables in a pan with butter, salt and pepper. Add tomatoes into the pan at the last minute. 5. Scatter on the plate, and place halibut and prawns on top.

For the Halibut batter: 200g plain flour Seasoning 1 bottle real ale For the tempura batter: 100g gluten free flour 1 small bottle of sparking water

Lemon Posset by CHRISTOPHER PECK, CHEF AT THE OLD BRIDGE INN, BRIDGE OF ALLAN Ingredients 450 ml Double Cream, 125 g castor sugar, 2 large lemons Method 1. Zest the lemons into a heavy based saucepan. Add the sugar and cream. Bring to the boil to dissolve sugar, whisking occasionally. When it is boiling, pour in the juice from the lemons. Whisk a final time then strain into a jug. 2. Allow it to cool for five minutes then pour it into the dish you wish to serve it in (a wine glass looks good.) 3. Serve with ginger biscuits.

Did You Know…? Local business, Graham’s The Family Dairy, is Scotland’s largest independent dairy company. The business is run by the son of its founder, Robert Graham who is chairman, supported by his wife Jean, son Robert (managing director) and daughter Carol (marketing director). When founded in Bridge of Allan in 1939, daily milk output was 400 pints - today it’s more than 700,000. Armed Forces Day by KIERAN (10) AND EILIDH DUNNING (7) The Tornado Jet appeared and flew by, leaving its trail in the rainy, dark sky. Then came the Apaché sweeping through the air it ducked and dived with elegance and flair. The fields were filled with smoke and blasts, the army men run about so fast. The parachutists floating, one by one, the cheering crowd all having such fun. A rumbling noise then ripped through the sky as the Typhoon Fighter appeared from up high, It flew so fast, as it pierced through the clouds, amazing and impressing the adoring crowds. The famous Spitfires then took to the sky, accompanied by a bomber as they shot on by. As rain poured down and the day came to a close, there was one last display, so up the crowd rose. Above the castle the Red Arrows appeared, an amazing sight, as the crowd all cheered. Colourful trails are left behind, they twist and turn so fast. So close they fly in the sky, every time they shoot on past. We celebrated in this special way, what the forces do every day, we’ll never forget the sights we saw on Armed Forces Day.

What’s in your breakfast bowl? by TIM MEADOWS, PERSONAL TRAINER OPERATING FROM THE UNIVERSITY OF STIRLING Which of the following sentences do you relate to? 1. There’s nothing I like more than having a healthy bowl of corn flakes with semi-skimmed milk for my breakfast. 2. There’s nothing I like more than having indigestible gluten and blood glucose spiking sugar with nutritionally deprived milk. Spot the difference? Are we talking about the same breakfast? I’m afraid so.

Let’s go back a few years pre-obesity and diet obsessed times, right from caveman days to 1900’s when cereals were first created with Kellogg’s & Bircher early pioneers of the processed grain. What did we eat? How did we survive through the decades through process of survival of the fittest? I’m not a paleo pusher or advocate by any means, but there are some things we

can take from it. Our diet consisted of meat, nuts and fruit/vegetables. Welcome to the day of convenience and poor quality foods, welcome to breakfast cereals where the box they’re contained in possibly has more fibre and vitamins than the cereal in it. Let’s cut to the chase. We got tricked. We all did. Cereal companies used healthy slogans, kids animated characters and don’t forget the “added vitamins and fibre” stamp on the box. What do we want regarding health and fitness? We want to be healthy, lean and fit. As the obesity crisis worsens, a lot of us want to lose bodyfat. I want to ride my bicycle Getting on two wheels and getting around Stirling is just about to get easier as the city introduces a new cycle hire scheme. Over one hundred bikes will be available across eleven stations, offering a low cost, low carbon travel option for locals, students and visitors. The scheme is being introduced by Forth Environment Link (FEL), the organisation responsible for running the Cycle Hub at Stirling Station. Bike hire stations will be positioned across the city and will include a main terminal at Stirling Train Station. Nextbike, an independent bike sharing firm, will be responsible for running the scheme which comes hot on the heels of a similar scheme in Glasgow. Commenting on the scheme, Graham McQueen, Cycle Coordinator at Stirling Cycle Hub said: “The Cycle Hub has been working for the past year to encourage people locally to get on their bikes - for pleasure, for work or to get fit. Seeing the introduction of a public bike sharing scheme in Stirling is fantastic, as it builds on an already growing momentum to give cycling a go. We already have a demonstration station with two bikes at the Train Station for anyone who wants to give the bikes a try before the official launch in September. ” Investment in the Stirling cycle scheme has come from Transport Scotland with

partnership support from Stirling Council and ScotRail. Stirling Council’s Councillor Neil Benny said: “It’s great to see this scheme coming to Stirling. This new way to get a shot of a bike for visitors, commuters and residents alike will make Stirling easier to get around. It’s the kind of practical scheme that will help make Stirling a better place for everyone. ” Registration to the scheme is free and each rental will cost £1 per half hour. For full subscribers rentals are free for the first half an hour of every rental. There is a maximum charge of £10 per day to allow riders to explore the city and surrounding areas for longer. Often described as the gateway to the Highlands, Callander is a lively tourist town situated where the River Teith and Leny meet. Set dramatically beneath high, wooded crags, this Victorian spa town is a popular base for tourists exploring Loch Lomond, The Trossachs National Park and 'Rob Roy Country', or stopping off on route to the Highlands. Callander originally gained fame in the 1960’s and 1970’s as the location for the original, long running Doctor Findlay's Casebook television series as the fictional Tannochbrae. Callander is perfect location for a night or two away, and you will also be spoilt for choice with accommodation with many bed and breakfasts, country house retreats and hotels to choose from. Our recommendations would be Poppies Hotel, or The Crown Hotel. The Main Street is crammed with unique shops for some browsing or souvenir shopping and also boasts the Hamilton Toy Museum which has a fantastic collection of antique and collectors’ toys. have mesmerised people for generations and there are spectacular views over the town and beyond to Stirling and the Forth Estuary from the summit of Callander Crags. It is believed, in geological terms, about 410 million years ago, England collided with Scotland with a bit of a crunch and the layers of rock 'scrunched up' to form gigantic ripples. Some of the ripples were over stressed, cracked and slipped to form the highland boundary fault - one of the results is the Callander Crags and another is the vertical slabs of rock visible at the Bracklinn falls. If you are feeling fit, the view at the summit of Ben Ledi (2873 ft) is captivating and overlooks the town from the NorthWest. On a clear day the view extends to Ben Lawers, 20 miles North and to the Forth Bridge, 40 miles South-East.

A Walk to the Bracklinn Falls and Bridge by LOVE LOCAL If you have children with you, keep an eye on them as there are un-guarded cliff edges around the gorge, the falls and bridge.

If you have the energy and time and weather permits, your walk can be extended to a 4 mile round trip. Cross the bridge and turn left to follow tracks through the woods and descend easy slopes to the riverside. A little way upstream you can find the remains of an old track which was damaged by the flood. Follow this track turning right to climb and meet a forest road. Follow the forest road upstream, ignoring all right turns until you drop down to the river again. Finally, continue up the hill to a minor road and turn left to follow this road (with occasional traffic) to return to the car park.

The easiest walk to the Bracklinn Falls and the bridge starts at the Falls car park, about 1/2 mile up Bracklinn road (east end of the Main Street). The walk is level most of the way however you will face some steep steps or a partially steep “all ability” section in last 200 yards. There is a bench near the top to rest and enjoy views to Stirling and the Campsie hills. At the falls, you can turn right just before the bridge and follow a rough path downstream for perhaps 100 yards where a break in the trees permits an excellent photo-opportunity looking up the gorge.

Nine Years of Great Jazz and Blues The annual Callander Jazz and Blues Festival takes place in the Trossachs Town of Callander from Friday 3rd October, finishing late, on Sunday 5th October. Autumn Gardening Tips by LOVE LOCAL With the relaxing summer period over and the kids back at school, it is time to put your BBQ away and get your gardening gloves back out. Summer bedding plants will be getting past their best now, make sure you prune shrubs and de-head roses. Winter flowering bulbs such as snowdrops or bluebells should be planted, however make sure that the beds are thoroughly dug and fertilised before you plant. To maintain your luscious lawn, ensure you thoroughly rake it with a wire rake to remove any thatch. Lawns should also be spiked, fertilised and re-seeded. Cut out any damaged areas, cut and loosen off the soil beneath it. Fill the hole with sieved soil, pressing gently to firm it as you go, and sow 30 to 40 grams of seed per square metre. Don’t forget about houseplants that you may have put outside during the summer months. Make sure you bring them inside when the evenings get cool to avoid the first frost, which, depending on the weather could be as early as late September. Finally, this is an ideal time to start thinking about home composting, either by buying a compost bin or building a partially enclosed and easily accessible area for a heap. All your autumn garden waste and leaves are ideal to give you a kick start.
