Mackerel with Broad Bean Salsa BY CHRIS BRANT (HEAD CHEF, ARDEONAIG HOTEL & RESTAURANT AND KITCHEN NOBLE OF BRITAIN) Preparation Time: 1hr Cooking Time: 6 mins Feeds: 4 people With the preparation done in advance, this dish is ideal for dinner parties, as the final assembly can be finished in a very short space of time. INGREDIENTS: 4 Fresh Mackerel Fillets (1 per person) 100g Cure (see below) 1 Finely Diced Shallot 300g Broad Beans, Peeled 1 tsp Chopped Coriander ¼ Zest of Lemon 100g Finely Diced Sweet Chorizo 3 tbsp Quality Rapeseed Oil Optional: Japanese Mustard Leaves and Flowers (We have used leaves and flowers from the kitchen garden, but this dish works equally well with pea shoots, rocket or spinach) CURE INGREDIENTS: 65g caster Sugar

METHOD: 1. Place the mackerel on a tray and cover completely with the salt and sugar, cure for 45 mins to 1 hour. 2. Blanch the broad beans for 2 mins and peel. 3. Add the chorizo to 2 tbsp of rapeseed oil and simmer on a low heat for 20 mins to infuse the oil. Then set aside to cool. 4. Mix the shallots, coriander, lemon zest and lightly crushed broad beans with 1 tbsp of rapeseed oil. 5. Wash, dry and then pan-fry the mackerel for 2½ to 3 mins, skin side down. Remove from the heat and then turn over to allow the residual heat from the pan to cook the remaining part of the fish. 6. Dress the leaves lightly in rapeseed oil and arrange on the plate. TIPS: 1. Ask your fishmonger to ‘pin bone’ the mackerel. 2. This cure works well on other oily fish. 3. Also try cooking the mackerel on a barbecue, or under the grill.

Celebrate Scottish Scran this Autumn… by NIKKI REID, LOCAL FOOD BLOGGER “COUTHIECANTIE” September and October showcase sensational seasonal produce from Scotland such as rustic looking root veg from our weather-battered land, wild sea bass and sea trout from our fierce, bountiful waters and due to the opening of shooting season we have a wide array of game birds to treat our palate such as duck, partridge, pheasant and woodcock. So, why don’t you celebrate the feast supplied by our natural larder, as well as our hard working farmers, game keepers and local food producers, by hosting your very own Harvest Supper? Here are a few ideas to get you started… Appetisers are always a great way to welcome guests. Rustle up miniature Arbroath Smokie fishcakes or really indulge your family and friends with fresh langoustines served with a roasted garlic and lemon butter? Find a wonderful selection of the freshest fish from Willie Little at Fish in Crieff or Boquhan Estate market every Thursday morning! To start, kick off your supper with Pumpkin and Roast Pepper Soup made from beautifully ripe pumpkins from Arnprior Pumpkins. If ‘crafting’ rather than soup making is more your thing, you can pick your very own pumpkin from their pumpkin patch in time for Halloween too – get creative with nature! For the main event opt for the unrivalled taste of Falleninch Farm beef. Choose from a wide range of cuts and either slow roast a full joint or slap a prime steak onto a hot griddle. Add a nip of Scotch, or blend with melted dark chocolate and condensed milk, to really celebrate in style! Get Ready for Local Food, run by the environmental charity Forth Environment Link, aims to support a strong and connected local food system in Stirlingshire. We are working with Stirling communities to offer skills to build a stronger local food system along the themes of growing, cooking, and wasting less food. We are also increasing local food accessibility, by connecting and supporting local food businesses - the fabulous farmers, chefs, and bakers of Stirlingshire! How to cook the perfect steak Great steaks are often a treat for the dinner table due to their expensive reputation and apparent difficulty to cook. No longer! As well as keen prices on Falleninch Farm steaks, we also have top tips on how to cook them to perfection.

FAT - Using tongs, press any fatty edges on to the hot pan until browned before placing the steak flat. This seals in the natural juices and helps the steak to be tender. Then put it flat-side down into the hot pan.

THE PERFECT STEAK RECIPE - 1 rib-eye or sirloin steak • Coarse sea salt and freshly ground black pepper • 25g butter • 1 garlic clove, skin-on and crushed • 1 sprig of thyme

Cook for 90 seconds on each side, pressing down with a spatula, until both sides are browned. Add the butter, garlic and thyme and use them to baste the steak, turning every minute until it's done to your liking: a 4cm steak should take about 6 minutes for medium-rare, but always do it by eye.

PREPARATION - Remove steaks from fridge 2 hours before cooking and allow to come to room temperature. Heat a heavy-based griddle pan or frying pan over a mediumhigh heat. DRYING - Pat steaks dry with kitchen towel. This will prevent a boiled-meat flavour and help to form a crust. SEASONING - Spread a thin layer of salt and pepper on a plate. Put the steak on the plate, and turn to coat lightly.

RESTING Take out of the pan and leave somewhere warm to rest for 5–10 minutes, then serve.

Fiona established the Kip centre in Stirling over 12 years ago and is respected and trusted by many Stirling parents who are looking for some extra support for their children. Along with her team of tutors - all of whom are fully qualified teachers – her aim is to help children feel more confident about their learning so they can maximise their potential. Kip tutoring is tailored to individual student’s learning needs and the relaxed, friendly atmosphere of the Kip centre - located on the Stirling University campus - provides an ideal environment for learning.

“There can be many reasons why a child would benefit from a bit of extra help outside school” says Fiona. She stresses that tutoring at Kip does not replace students’ schoolwork but seeks to complement and enhance it; she explains, “we are very lucky to enjoy a relationship of mutual respect with many of our students’ schools because we all share the common aim of wishing to see children achieve their potential”. Woodland Experiences Santa’s Woodland Experience was inspired by a visit to Christmas Tree Farms throughout America 15 years ago. I saw on a small family farm, a woodland house, where the whole family could walk and meet Santa together. Having grandchildren has stimulated me to try and recreate that experience in my woodland, in Balfron (half an hour from Stirling). We have taken the idea a little further to include a trip on the farmer’s tractor and trailer through the woodland to find Santa’s house. We started in July last year with a target of trying to attract 200 local children to come with their families, we were overwhelmed with the response, people travelled up to 3 hours from all points in Scotland to visit. Such was the demand for places, we had to open in the evenings as well, which was hugely popular, resulting in just under 2000 children and their families attending!

For 2015 we have created our online booking system, which we hope will make the booking process a little quicker and easier for people. Also in addition to our Christmas shop that we had last year, there will be hot food available and a small play area for children for before or after their experience. Everyone was so taken by our lighting at night last year that we have decided to launch a new experience for 2015. With the help of award winning NL Productions we will create “ALIVE”, our Woodland Lights Experience (more information on this in the next issue). Tickets on sale now…..

Oral Hygiene in Dogs and Cats Your pet’s oral hygiene is an important part of good health. Gum disease caused by the build-up of plaque and tartar has become the number one health problem for dogs. It is estimated 70% of dogs will show signs of oral disease by the age of three. Too much plaque can cause tooth decay and bacterial infections which can lead to liver, heart or kidney failure. With your help, your pets can have healthy teeth and gums and these serious conditions can be prevented. Signs of Dental Disease: Bad breath – often the first sign of dental problems, Bleeding gums, inflamed red or swollen gums, missing or broken teeth, lack of interest in food, lethargy, disinterest in playing DIET - Good dental health begins with the correct diet. Feeding your pet dry food rather than wet food helps to remove plaque and encourages adequate chewing and gum stimulation. Some pet food manufacturers produce food which helps plaque removal.

TOOTH BRUSHING - This is the gold standard of dental care. Finger brushes or specifically designed canine/feline brushes are available to use with a special toothpaste. To begin with start with short frequent sessions. Initially just use the toothbrush and wet it with water until your pet becomes comfortable with the procedure. Once this is accepted toothpaste can be used. Tooth brushing is an excellent way to keep your pet’s teeth and gums healthy and keep their breath smelling fresher! For it to be effective it needs to be done on a daily basis. CHEWS - There are many dental chews available on the market to help with dog’s dental hygiene. Some of these are high in calorific content so beware of weight gain! Most importantly, don’t forget yearly dental checks with your vet! Love Dollar by LOVE LOCAL Dollar is a small, tranquil village nestled under the Ochil Hills in Clackmannanshire with the River Devon to its South. The major attraction in Dollar is the 500-year-old Castle Campbell, lowland seat of the Duke of Argyll, where Mary, Queen of Scots, once lived in the 16th century. The Castle is now managed by Historic Scotland and is open to visitors. Dollar is now mainly residential; however, for a long time it was known for its industries. Attempts were made to mine lead and copper in Dollar Glen from the 18th century and possibly earlier, but these were of no economic significance. Coal mining in the area began around the same time. In common with the other Hillfoots Villages, the textiles industry played an important part in the town's development. The Harviestoun Brewery was established west of Dollar in 1985, before its move to Alva. Despite the tranquility, Dollar has plenty to offer for a day trip, or longer! Dollar Museum, opened in 1988, has doubled in size and improved its facilities with the help of the Heritage Lottery Fund. The museum contains an interesting collection of local items, and much information about the former Devon Valley Railway, which closed to passengers in 1964.

Dollar also offers plenty of sports facilities, including an 18-hole golf course (notable for its steep inclines and lack of bunkers), a tennis club, squash club, bowling club and a cricket club. The Ochil Hills also provide opportunity for mountain biking. Dollar's Bridge Street is also a hub of independent businesses. Notable businesses include Robertson’s Fine Art, Dollar Delicatessen, Brian Devlin Butchers, The Flower Room (recently taken over by a very talented 23 year old), and Bridge Street Kitchen (booking advised, as this is a very popular restaurant.) Dollar is a haven for coffee lovers, you can relax and enjoy a coffee in Café De Fleurs, where it would be rude not to have one of their homemade scones, but be quick, as they sell out early, then visit CounterRoast’s Micro-Roastery situated on the outskirts of Dollar, for some delicious hand roasted coffee beans (also available for purchase at Dollar’s Delicatessen.) Dollar Glen Circuit The exploration of the gorges of the Dollar Glen has been popular since Victorian times. Castle Campbell dates from the early 15th century when it was known as Castle Glume although it later became a stronghold of the Earls of Argyll who changed the name to Castle Campbell. Now managed by Historic Scotland it is open all year. The walk to the castle is a vigorous ascent by a spectacular series of paths, bridges and walkways. There is also a road, accessible by car, to the castle for the less energetic. TERRAIN Narrow path above steep gorge, railings in places, steps and steep sections. WALK DESCRIPTION STAGE 1 - From the centre of Dollar take the riverside path next to the museum leading to a park with picnic benches and viewpoint to the golf course. Enter the woodland and keep left to cross a bridge. From here the path climbs steadily up a series of steps. STAGE 2 - As the gradient eases, the path runs alongside the edge of the wood, when you will reach a viewpoint with a bench, detour left to view Castle Campbell.

heading straight up the ridge. The path follows the gorge of the Burn of Sorrows and soon reaches a junction. Turn right to cross the bridge at a double waterfall and follow the spectacular path on the far side. After a gate the path descends to the road just above Castle Campbell. STAGE 5 - Take the path on the left after the castle gate. This descends a series of concrete steps to the glen floor. Cross a bridge and follow the water downstream. After a long flight of steps, you can detour a short way ahead to the meeting of the two burns at a viewpoint. Keep right at any other junctions to reach John Knox's Pulpit; a stone viewpoint jutting out over the water where he is said to have preached in the 16th century. STAGE 6 - Keep following the clear path downhill, passing an old icehouse on the right and soon reaching the bridge crossed earlier. Stay on this side of the water to re-enter the park and return to the road at Dollar.

STAGE 3 - Continue along the descending path, and continue upstream, crossing a bridge before climbing a slope. Part way up take the path on the left which soon leads down to a bridge. Cross here and follow the path which then climbs steeply up zig zags. STAGE 4 - At the top there is a good view of the Castle. Follow the narrow path around to the left, rather than the wider path

Household tips SPARKLING DISHES: White vinegar is an inexpensive way to keep your dishes sparkling. Just pour white vinegar in the compartment of your dishwasher instead of a liquid rinse product. DUVET SETS Make sure that your duvet and pillow case sets stay together when they’ve been ironed. Simply fold the duvet cover and pillowcase neatly, then insert into one of the pillow cases to keep them all together. GRANITE TOPS If you get stains on your lovely granite worktops then grab a lemon, chop it in half and sprinkle with table salt. Rub gently. Top Tips on Buying Carpet You don’t buy a carpet everyday, but you do walk on it everyday, so it is worth ensuring you buy something that is right for you. Here are our top tips to make that all important decision easier for you. WOOL OR SYNTHETIC CARPET? Carpets will be made from wool or synthetic fibres, or a combination of the two. Wool is the most expensive option, a high quality wool carpet will be soft, retain its pile well and will last longer than alternatives. More affordable than wool, are man-made fibres including polyester, acrylic and polypropylene which are durable and highly stain-resistant – a good choice for kids' bedrooms. THINK ABOUT A ROOM'S FOOTFALL When choosing a carpet, think about how much footfall that area will have. A bedroom carpet, for example will have far less wear and tear than a stair carpet, which will need a much heavier duty carpet. WHAT IS THE CARPET PILE? The pile simply describes the style of carpet. Long pile carpets like Shag and Saxony have a wonderfully soft, luxurious feel underfoot, while carpets with shorter pile, such as twist and loop, tend to wear better and are easier to care for.

Homegrown Herbs Whether you’re looking for a sprig of fresh mint, a handful of rosemary, or some chopped chives what could be better than being able to choose and harvest them right outside your own back door? Planting near the kitchen, in the back garden or even in a window box, makes it easy to pick a few fresh leaves when you are cooking. Herbs can make an attractive, fragrant and tasty addition to your borders, or you may prefer to opt for a permanent herb bed, although you’ll need to give consideration to containing the growth of some of the more vigorous varieties. This can be done by dividing the bed, or by using pots sunk into the ground. Herbs comprise both annual plants that germinate, grow, flower and die within the year, and perennials that will grow on from one year to the next. The more hardy perennial types such as thyme, rosemary and mint may be happy outside all year round. One of the advantages of using containers is that tender varieties can be moved under cover during the worst of the winter and even tender annuals like basil can have their season extended by lifting plants to pot up and keep on the kitchen windowsill as autumn approaches. Most types of herb can be raised from seed, but for a quicker start visit a garden centre for plants that are ready to go. Herb gardens will continually evolve. Look upon it as just the start of a collection that will grow with time.
