Welcome to our Festive Edition I can’t believe this is the last edition of 2015! The last 12 months have flown by, but what a year it has been. I want to say a massive thank you to all the wonderful local businesses that have advertised with Love Local Mag this year and all you wonderful readers for picking the mag up and supporting these businesses! by WILLIE LITTLE, LITTLE’S RESTAURANT IN BLAIRGOWRIE AND FISH IN CRIEFF FISH 100 grams Halibut per person 100 grams Turbot per person 1-2 Scallops per person

Ask your local fishmonger to cut the halibut and turbot into chunks, and ask for hand-dived scallops only.

FRUITS (for 4) 1 apple, sliced 1 orange 100 grams pineapple chunks Black and green grapes Orange zest Grain mustard Coriander

Whisk egg yolks over a pan of steaming water until light and fluffy, and slowly add the melted butter.

HOLLANDAISE SAUCE (for 4) 2 medium egg yolks 150 gram clarified butter White wine vinegar 1 lemon Salt, Pepper & Cayenne Pepper to taste

Reduce vinegar to a tablespoon and add lemon, salt, pepper and cayenne. Segment orange and squeeze remaining juice out of carcase. Add grain mustard.

Mix together and allow to rest. Do not chill as it is to be served warm. Shallow fry fish in olive oil and season, turning once. Remove from heat and allow to rest for a few minutes. Serve with fruits on bottom, fish on top, and glaze with hollandaise. All this can be sourced from Fish in Crieff.

Halve grapes and check for seeds, then add pineapple, orange zest and apple slices.

Christmas Scones Makes approx. 8 scones by THE CDF BAKERS AT CAFÉ DES FLEURS, DOLLAR Ingredients

Method

350 g self raising flour

1. Heat oven to 200C / gas 7

Pinch salt 1 teaspoon baking powder 85g butter - cubed 3 tablespoons Caster Sugar 175 ml milk 1 teaspoon mixed spice 1 teaspoon ground ginger 1 teaspoon cinnamon 100g mixed dried fruit soaked for 1 hour in boiling water with a generous dash of Brandy! 30g Glacé cherries quartered Beaten egg to glaze

2. Mix flour salt and baking powder then rub in butter with a knife until mixture looks like fine breadcrumbs. You could also do this in the food processor. Stir in caster sugar. 3. Drain fruit and add to dry mix with spices and cherries

together the rest of the dough and cut out more scones. 7. Brush with egg and put in oven for around 10-12 minutes - they should be golden brown. We serve these warm from the oven with Cinnamon butter or clotted cream and jam. Delicious!

4. Pour in milk and mix together lightly with your knife until it comes together into a dough. 5. Scatter some flour on the work surface tip out dough - do not roll out!! Just pat lightly into a disc shape. 6. Using a 5 cm cutter cut out as many rounds as you can - don't twist the cutter or the scones will be uneven - Place on baking tray. Bring

The Festive Food Freeze by FORTH ENVIRONMENT LINK Get Ready for Local Food run by environmental charity Forth Environment Link is looking forward to the coming festive food months celebrating our local food larder. That’s why our friends at Love Food Hate Waste have prepared great recommendations on freezing food to help us make food go further, keep your home grown food fresh for longer and most importantly to reduce food waste. It may surprise you, but you can freeze almost ALL foods, as long as they’re stored correctly. Many people find it fascinating that you can freeze items such as eggs, bread, berries, fruits, vegetables, cheese and cake. That said, there are just a couple of foods that aren’t fans of freezing: • Some dairy: soft cheeses – think cream cheese and cottage cheese, mayonnaise and sour cream • Some herbs: basil, chives and parsley turn brown in the freezer • Some vegetables with high water content: salad greens, cucumber and uncooked potatoes don’t hold up well, because the thawing causes a change in texture. Better to puree or stew these foods than freeze in their original state.

EGGCELLENT FREEZING! Do not freeze eggs in their shells as they may explode. Just break them and beat until the yolk and egg white is just about blended. Put them in an airtight container and label with the date and the number of eggs you’ve used. Whites and yolks can also be frozen separately. Store egg whites in freezer bags for use in omelettes, meringues and mousses. Beat a pinch of salt or sugar into yolks to stop them from thickening too much and freeze in an airtight container, great for Eggnog...

10 Simple tips for wrapping like a professional by WRAPISTRY BY CHERENE 1. The simple rule is, if the gift is soft put it in a gift box or gift bag, if it is in a box or some other firm outer covering wrap it in paper! 2. Always wrap on a hard surface. If you wrap on a carpet it’s harder to keep control of the paper, so it is more likely to tear. 3. Place the gift face down so that the gift wrap overlaps on the underside of the gift, and the bow and nametag is on the top. 4. Don’t forget to hide the price; however don’t cut off the tag making it difficult to return it. Try and get a gift receipt and include it in with the gift. If that's not possible pop a festive sticker over the price! 5. Scissors and sellotape are fine but, to become a better gift wrapper invest in the correct tools such as a rotary cutter, double sided tape, wrapping dots, glue gun and most importantly a craft mat so not to damage any surface that you might be cutting on! Using paper scissors to cut ribbon could blunt your scissors. 6. Recycling old Christmas paper through a paper shredder to create lining for gift boxes or gift bags. 7. Last year’s Christmas cards can be cut to create a beautiful gift tag, tag. Simply cut out the part you want to use, punch a hole and thread through ribbon, garden twine or laces. Then attach to the gift!

8. Brown paper and twine makes a beautiful, natural, timeless gift wrap. Make it extra special by adding fresh holly, a waxed seal or even some dried orange slices and Star Anise to give it that festive aroma. (Simply dry orange slices with kitchen roll then place on a low heat in oven for 8 hours.) 9. Ran out of gift wrap? Don’t worry; try recycling newspaper (be careful as the ink can sometimes come off), magazine covers, greaseproof paper or even tin foil! 10. Encourage children to wrap with you. There is always something they can do and they love to be included, but don't leave children unattended with scissors or sharp objects! This is how my love of wrapping was born: from a young age I wrapped with my mum and she always made it so special with either Christmas movies or Christmas songs playing in the background, we still do this together and now my daughter Grace joins in too! Remember a gift should never be judged on its size or cost but simply on the size of heart that gives it and any gift can be transformed into a masterpiece! Cork Christmas Tree Craft Creating you own Christmas decorations can be a fun, educational and interesting thing for all the family. This particular project is very easy, and barely warrants a tutorial as you can probably figure it out just with the final picture, however here are some tips‌ Start with some hot glue and one wine cork. Attach another cork to start forming your tree. If you have corks from red wine, make sure that you put the red ends of the corks on the same side. That way the front of your tree will all be the same color. You can also use felt tip pens to colour the other corks and make an attractive pattern.

Note, it is likely your wine corks will be different sizes and lengths, so make sure you level them out on the front so it is flat (simply press them against the table to ensure they are even.) Stay warm this winter – the coldest for 50 years! by AC GOLD Weather forecasters have predicted that this coming winter is set to be the coldest for the last 50 years, with heavy snow and temperatures expected to fall to as low as -20°C. Experts warn that the big freeze could plunge the nation into chaos earlier than normal and emergency services have been told to prepare for a devastating winter. With weather expected to be so severe, staying warm in your home becomes even more important – but could prove to be costly. (*) REDUCING HEATING BILLS Heating bills can be reduced in a number of ways: • Check that you are getting the best deal available from your energy supplier. • Stop draughts. Use a draught excluder, or fabricate your own using blankets placed at the bottom of doors and tape over draughty keyholes and window seals. • Put good quality tin foil behind radiators to ensure all heat is radiated back into your room. • Improve your loft insulation. Or consider getting cavity wall insulation. • Change your heating system to a renewable source such as a biomass boiler that saves money on fuel and qualifies for Renewable Heat Incentive (RHI) payments from the government. • Weather compensation controls added/ incorporated into your heating system (fossil fuel or renewable type heating).

12 Plants of Christmas by JILL BURT, VIALII GARDEN DESIGN As Christmas edges closer we start to think about making our houses bright and colourful over the festive period. But why not make sure your garden is full of interest too? Here are our 12 plants of Christmas to give your garden some winter cheer... 1. Mahonia Ă— media 'Charity' The spiny leaves of this shrub are attractive but it's the yellow, scented flowers that make this shrub a must for winter.

We love the bronzed colour of the buchananii and its graceful clumped shape. Mass plant for effect. 10. Corylus contorta (Contorted Hazel)

The white flowers of the niger are particularly attractive, nodding above the attractive foliage.

The contorted hazel looks wonderful all year round with its catkins in Spring and lovely crinkly foliage over Summer. But for us it looks best in winter when you can truly appreciate its magical contorted structure.

3. Hamamelis Ă— intermedia (Witch Hazel)

The witch hazel provides wonderful colours through Autumn but it's winter when you will get the beautiful, yellowy orange, fragrant flowers.

It just wouldn't be Christmas without a spot of holly would it? Plant its pal hedera helix (ivy) for the full effect!

4. Cornus alba 'Elegantissima' (Red Barked Dogwood)

Yes, the good old sprout isn't just for the dinner table. Use them to make a funky wreath for the front door!

2. Helleborus niger (Christmas Rose)

The red stems of the dogwood make a wonderfully eye-catching feature in a winter border. Mass plant for full effect. 5. Skimmia x confusa 'Kew Green' The shiny green leaves and gently scented flowers are a great addition to a winter garden. Plant alongside a female plant and she will reward you with berries too.

6. Viburnum x bodnantense 'Dawn' "Bod Dawn" is a lovely addition to the garden. A vigorous shrub with lovely pink flowers over winter. 7. Daphne bholua 'Jacqueline Postill' Another fragrant joy for the garden over winter, the daphne also has pretty flowers and foliage. 8. Sarcococca confusa (Sweet Box) The sarcococca is a beautiful evergreen shrub but make sure you plant it somewhere you can take full advantage

Lungworm

There has been a lot of discussion about Lungworm recently and we wanted to keep you updated and advised on how to keep your dog safe. Lungworm (or Angiostrongylus Vasorum) has a lifecycle which involves slugs and snails. Your dog can only become infected if it eats these (on purpose or by accident in long grass). Research into the slug and snail population of three parks in Glasgow has shown that 6 percent of the slugs and snails there were infected. It is still an uncommon disease. We do not know the percentage of slugs and snails that are infected across Stirlingshire. Once your dog has eaten an infected slug or snail the parasite travels through their body and settles in the heart. Here the adult worm produces eggs which develop into larvae. These larvae can then travel to the lungs where they are coughed up and swallowed. They can then be passed in the faeces and the slugs and snails can ingest these larvae. And the cycle continues.

Symptoms of lungworm in your dog include breathing difficulties, coughing (especially coughing up blood), tiring easily and bleeding disorders. If left untreated lungworm can be fatal. But there is no need to panic. We can easily prevent Lungworm. Lungworm can be prevented by using regular worming products which we can advise you on. Please note that not all worming products are effective against Lungworm and you will need to speak to us for guidance. Our vets, nurses and receptionists are very happy to discuss Lungworm prevention with you. If you have any concerns that your dog has any of the symptoms described above then please contact us immediately. We have a very dedicated team who run our own out of hours service in the case of an emergency.
