No matter what you decide to have for Christmas dinner, here are some ideas for Greening your Christmas menu. The average Christmas dinner is likely to have travelled around 30,000 miles before it gets to your Christmas plate. So think about having a local Christmas Lunch by checking out Stirling’s Local Food Map for suggestions on where to buy local food from. Remember, smaller food producers and farmers markets might need more time so get your orders in soon. Save money at Christmas. Every year in Scotland we throw away over 630,000 tonnes - or £1 billion worth - of food. That’s £39 a month, for the average household.... Which is a lot of money to throw in the bin, a huge amount of waste and a fairly sizeable chunk of unnecessary carbon emissions. Mi cuit of duck liver pate (serves 6) by JASON HENDERSON, KNOCK CASTLE HOTEL & SPA Ingredients for pate
1 lobe of duck liver, 1 bottle pink sparkling Pinot Grigio, 6 figs, ½ bottle of port, 6 springs of rosemary, Salt and pepper, Honey
1. Ensure duck liver is at room temperature 2. Using the back of a spoon remove as many veins as you can, season and mould back into a long, cylinder shape (approx 1 inch) 3. Wrap in a muslin cloth 4. Submerge in pink sparkling Pinot Grigio (pour a glass to reward yourself, and then use the rest for maturing). Leave in fridge for 3 days To plate up: Criss-cross the top of the figs, and push sprig of rosemary into the slit and drizzle honey in the centre and roast in oven (180C for 4 minutes) Remove liver from Pinot Grigio, remove cloth and dry. Slice as required, place on plate with roasted figs and a port reduction.

Mini Cheesecakes by JASON HENDERSON, KNOCK CASTLE HOTEL & SPA Ingredients 875g Cream Cheese, cubed 150g Egg Yolks 250g Caster Sugar 600ml Double Cream 225g Egg Whites 300g Dark Chocolate 325g White Chocolate 250g Digestive Biscuits, crushed 100g Butter Tart rings
1. Beat the cream cheese, egg yolks and 100g of caster sugar until smooth and fluffy. Gradually add the cream. Mix well. 2. Whisk the egg whites until foamy, gradually add remaining caster sugar, whisking until a stiff meringue is formed. Fold the meringue into the cream cheese mixture and set aside.

Mistletoe and wine by DOUGLAS WOOD, WOODWINTERS WINE, BRIDGE OF ALLAN Choosing the right drinks to serve on Christmas Day can be a difficult task but here are a few simple tips to help you. Champagne is always a welcome start to the day. To keep the palate perky, look for a lower dosage, or 'Brut Natur' where it is roughly 50% less sugar than normal Champagne. Gin is also enjoying something of a resurgence, try the latest tonics from Fevertree for a perfect aperitif that allows the gin to sing (not just the tonic!) When it comes to choosing a wine to accompany your main the options are endless. Wine should enhance not overpower the flavours of the meal. Having said that; beauty is in the eye of the beholder, there is no ‘right or wrong’; and trying different
wines throughout the meal is totally fine! A full-bodied, creamy white with citrus notes, like a white burgundy, or a refreshing, crisp Pinot Noir (serve slightly chilled – 10mins in the fridge will do it), both work well with turkey. An aromatic rich red, such as a Chianti or a Rioja, have enough tannin and flavour to work well with game. While a lush, fruity Malbec or Bordeaux has enough warmth and depth of flavour for roast beef. Add half a glass of wine to the gravy or accompanying sauce to help marry flavours together. Still a bit flummoxed? Visit Woodwinters in Bridge of Allan, your local wine store for expert help. The only info you need to know is your budget and what you have preferred before (even if it is only telling them red or white!)

Turkey, ham & leek pie by CAROLINE MARSON, LOVE FOOD HATE WASTE This is an ideal recipe to make use of leftover turkey from Christmas. Visit the Love Food Hate Waste Scotland website for more recipes. Ingredients 90g butter 25g flour 1 litre turkey stock Salt & pepper 1 tbsp English mustard 350g cooked leftover turkey or chicken 125g cooked ham chunks 6 chopped leeks 2 tbsp chopped parsley 1 lightly beaten egg 200g ready-make shortcrust pastry

Method 1. Preheat the oven to 220°C / 425°F / Gas Mark 7. 2. Melt the butter in a heavy based pan and add the flour off the heat. Whisk in the turkey stock and cook over a medium heat, stirring all the time until the sauce is smooth. Season well and add the mustard. 3. Place the turkey pieces, ham and leeks in the bottom of an oval pie dish, sprinkle with the fresh parsley and pour over the sauce. 4. Roll out the pastry on a lightly floured surface and cover the pie dish with the pastry. 5. Brush the top of the pastry with a little beaten egg and bake in the oven for 20-25 minutes. After this time reduce the heat to 180°C / 350°F /Gas Mark 4 and bake for a further 15 minutes. Serve with a glass of Novello 2014 wine, £8. Available from Woodwinters, Bridge of Allan.

Bodyfat Overshooting! by TIM MEADOWS, PERSONAL TRAINER OPERATING FROM THE UNIVERSITY OF STIRLING As we head into the festive period and no doubt we all try to trim up to look good for our indulgent and glamorous nights out , I felt it was important to address a phenomenon that happens on a regular basis and is the culprit of yo-yo dieting and severe kcal deficit diets – bodyfat overshooting. Firstly, appreciate your body is one clever beast. You can’t out smart your body. Secondly, we all start off with a set metabolic rate point; it’s like an internal signal that dictates how much fuel we need. Fuel is food. Food is fuel. Fuel is essential, therefore food and kcals is essential. You can increase and decrease your metabolic set point – basal metabolic rate (BMR) through weight training and diet. Case study example; Jane is a stone overweight and her diet isn’t ideal. She consumes bad snacks in forms of crisps and chocolate, her breakfast (if anything) is a cereal with low fat milk and her dinners are generally microwave meals or takeaways. However, she maintains her weight with 2000kcals, we call this “maintenance kcals”. She will neither gain nor lose weight if she consistently consumes 2000kcals. Now she goes on a “diet”, adopts a generic 1200kcal or shake plan diet. So her energy or fuel intake, food is fuel remember, is reduced from 2000kcal to 1200kcal, effectively she has cut her energy intake by 40%, yet she still has the exact same lifestyle. How does her body cope?

Jane’s body isn’t daft; it has to slow down metabolic processes to make the 1200kcals maintain her lifestyle. Less coal on the fire analogy – body goes into a slowdown and hormones from the thyroid are down regulated as she has to survive with 40% less fuel than before. Her BMR has dropped as her body struggles to adapt to the severe kcal reduction, which impacts on her maintenance kcal set point, also lowering it from 2000kcals to say 1600kcal. As with any drastic low kcal diet, it isn’t achievable long term, despite some weight loss, after a binge Jane goes back to her previous eating habits of 2000kcals. But hang on, her maintenance kcals has already been lowered, so in effect she’s over consuming 400kcals, she puts the weight she lost back on with some extra lbs and all hope is lost as Jane feels depressed & guilty all because she stopped her unachievable diet. What happens next? Jane reverts back to the 1200kcal or fad diet, but her maintenance is now at 1600kcals, so after the severe kcal diet her maintenance kcals is even lower and when she tries to eat normally again, she regains the lost weight and extra lbs. See the cycle? Who does Jane blame? Who gains from this cycle, not Jane but the dieting companies. Avoid yo-yo diets, fad diets and bodyfat overshooting. Take these simple tips to ensure you improve your diet and nutrition where long term sustainable fat loss to get lean and toned is achieved without stepping
HEALTH & WELLBEING into the cycle of “bodyfat overshooting”; • Increase your protein intake – aim for 0.8g per lb bodyweight • Ditch the word diet from your vocabulary • Ditch fat free and low fat foods – they’re a chemical storm loaded with sugar • Increase your intake of vegetables – fibre is essential for fat loss • Understand kcals are essential – it’s the food sources you need to adjust • Start any form of exercise – however weight lifting is optimal •
Be consistently good with your meals
• Preparation – a little foresight and prep will ensure you’re in control of your nutrition. Importantly, everyone is different, so don’t compare yourself to anyone else. Enjoy the festive period and enjoy your food, I know I will.

Christmas crafts for the home by REBECCA MCEWEN, CREATIVE WORKSHOPS CHRISTMAS HOLLY BALL An alternative outdoor Christmas decoration to a wreath is a Christmas Holly Ball; a simple, yet beautiful decoration to hang in your porch or above your door. You will need An oasis ball, Some ribbon, A cinnamon stick, Holly 1. Dampen your oasis ball, so it gains some weight, and there is enough water to keep the fresh holly alive. 2. Put a hole through the centre of the ball, and thread a piece of ribbon through. 3. At one end of the ribbon tie a cinnamon stick to stop the ribbon coming out, and on the other end, tie a loop, so you can hang up your ball. CHRISTMAS TREE CARD This is another simple project that uses a twig and various ribbons to create a Christmas tree design. You will need A blank card, A twig, Various colours & patterns of ribbon, Glue gun or UHU, Scissors, Black/Gold pen 1. Begin by cutting your twig to the size of your card. 2. Depending on the size of your card, cut as many lengths or ribbon you think you will need, and tie them around the twig. (My card was small, so I cut 5 lengths of ribbon.) 3. Once you have tied the ribbon around the twig, glue the ribbon tied twig onto the card. 4. Once it is stable, cut the ribbon to different widths to create the shape of a Christmas tree, with the bottom ribbon being the widest, and the top ribbon being the narrowest.
