Juniper Bar and Restaurant by LOVE LOCAL MAG A Stirling chef recently opened Juniper Bar, an innovative new restaurant focusing on seasonal, locally sourced produce in Tillicoultry. Kenny Wilson has over 25 years’ experience in acclaimed restaurants including Gleneagles Hotel and the QEII. He also transformed the culinary offering in legendary Glasgow eatery The Cabin, and presented STV’s popular Square Meals cookery show, as well as appearing regularly on Radio Scotland’s Something for the Weekend. He said: “Our ethos is very simple - we believe in supporting the Scottish food industry and the local economy. Our aim is to be driven by seasonality and to buy from family-run businesses within a 30-mile radius of Tillicoultry and not from multi-national companies. There

Gluten-Free Sticky Toffee Pudding by KENNY WILSON, JUNIPER BAR & RESTAURANT, TILLICOULTRY INGREDIENTS: 225g whole Medjool dates 175g boiling water 1 tsp vanilla extract 175g gluten free selfraising flour, plus extra for greasing 1 tsp bicarbonate of soda 2 eggs 85g butter, softened, plus extra for greasing 140g demerara sugar 2 tbsp black treacle 100ml milk Cream or custard to serve (optional) For the toffee sauce 175g light muscovado sugar 50g butter, cut into pieces 225ml double cream 1 tbsp black treacle

METHOD: 1. Stone and chop the dates quite small, put them in a bowl, then pour the boiling water over. Leave for about 30 mins until cool and well-soaked, then mash a bit with a fork. Stir in the vanilla extract. Butter and flour seven mini pudding tins (each about 200ml/7fl oz) and sit them on a baking sheet. Heat oven to 180C/fan 160C/gas 4. 2. While the dates are soaking, make the puddings. Mix the flour and bicarbonate of soda together and beat the eggs in a separate bowl. Beat the butter and sugar together in a large bowl for a few mins until slightly creamy (the mixture will be grainy from the sugar). Add the eggs a little at a time, beating well between additions. Beat in the black treacle then, using a large metal spoon, gently fold in one-third of the flour, then half the milk, being careful not to overbeat. Repeat until all the flour and milk is used. Stir the soaked dates into the pudding batter. The mix may look a little curdled at this point and will be like a soft, thick batter. Spoon it evenly between the tins and bake for 20-25 mins, until risen and firm.

Stir in the black treacle, turn up the heat slightly and let the mixture bubble away for 2-3 mins until it is a rich toffee colour, stirring occasionally to make sure it doesn’t burn. Take the pan off the heat and beat in the rest of the cream. 4. Remove the puddings from the oven. Leave in the tins for a few mins, then loosen them well from the sides of the tins with a small palette knife before turning them out. 5. When ready to serve, heat oven to 180C/fan 160C/gas 4. Warm the puddings through, still covered, for 15-20 mins or until the sauce is bubbling. Serve them on their own, or with cream or custard. Top with chopped stem ginger and pistachio nuts just before baking to add a twist to this classic pudding.

3. Meanwhile, put the sugar and butter for the sauce in a medium saucepan with half the cream. Bring to the boil over a medium heat,

Tullibody Chef Caitlin cooks her way to be crowned UK Best Mini-Chef 10th March 2016: Celebrity Irish chef, Paul Rankin, has today announced budding Scottish chef, Caitlin Charity, age 6, from Tullibody in Clackmannanshire, as the UK’s top mini-chef in a national cooking competition that challenged young chefs to cook up their best sausage recipe. The leading chef, who is a regular on our television screens, launched the competition, in association with Tourism Ireland, in October 2015. The challenge encouraged children across the UK to get in to the kitchen and devise their own sausage recipe using his new Rankin Selection Irish Family Sausages. Beating stiff competition from mini-chefs across the UK, Caitlin was declared the winner after creating a hearty Rankin Selection Irish Family Sausage Hotpot recipe. Commenting on Caitlin’s recipe, Paul said, “Caitlin’s recipe was a standout classic for me and she is a very worthy winner. Caitlin’s sausage hotpot is the perfect winter warmer dish that the whole family can enjoy. It’s an incredibly easy dish to make yourself at home and is packed full of great flavours, including the taste of the traditional Irish Family Sausage.” “I launched this competition to encourage kids to get in to the kitchen and get involved in family meal times. That’s what I love about these recipes – the humble sausage is a British favourite and a great wholesome

Irish Family Sausage Hotpot Recipe by CAITLIN CHARITY, AGED 6 Ingedients:

200g Rankin Selection Irish Family Pork Sausages 2 onions 1 leek 1 turnip 4 carrots 2 large potatoes (chopped) 100g peas 1 stock cube 500 ml boiling water Sea salt Black pepper Olive Oil

1. Boil the potatoes in a large pan of lightly salted boiling water for 10 minutes or until tender. Drain and set aside. 2. Add oil to a deep casserole pan. Add the chopped onions and cook for three to four minutes. Add the sliced sausages and cook for a further five minutes, stirring occasionally. Add the carrots, leek, turnip, peas and chopped stock. Bring to the boil, cover and simmer for 15 minutes. 3. Add salt and pepper to taste. Serve hot for a delicious warming meal.

Clackmannanshire should encourage whisky enthusiasts to visit the county where mass-production of whisky and its exportation first began.

Go back in time and you will find that Clackmannanshire’s role in the whisky industry, as we know it today, was equally significant.

2015 was the Year of Food & Drink, so it was fitting that there should be an acknowledgment of Clackmannanshire’s influence on the global success of our national drink. The ruins at Kennetpans Distillery recently received funding via the Inner Forth Landscape Initiative to begin restoration work that will enable visitors to safely see where it all began.

Clackmannanshire is embarking on a mission to let the world know that whisky distilling on an industrial scale first took place there and, had it not been for the innovations of Robert & John Stein, owners of Kennetpans and Kilbagie Distilleries, whisky would have taken much longer to reach the world. The birthplace of John Jameson, founder of Jameson Irish Whiskey, Clackmannanshire can claim that one of Alloa's own created a whiskey that is the third highest selling in the world. John Jameson returned later to Clackmannanshire, which remains his last resting place, as he was buried in Alloa Old Kirkyard in 1823. With a whisky heritage that includes the Stein brothers and John Jameson, as well as the fact that Jameson married Margaret Haig, sister of the founders of Haig Whisky, it seems only natural that

Clackmannanshire is working towards having its very own Whisky Heritage Trail that will present visitors with the opportunity to visit authentic sites of historical interest that were part of the Haig, Jameson and Stein whisky revolution. Consumer Champion: Fighting for your rights by JAMES WALKER Five common customer complaints, and how companies should resolve them… If you’ve got a complaint to make to a company, what’s it likely to be about? And what sort of response can you expect? Of course, the sorts of complaints an individual company will receive depend entirely on the sort of services or goods they offer. The appropriate responses will vary hugely too. In short, the world of complaints and how to respond to them is a tricky business for companies, and every complaint is different, but there are certain categories of complaints and general customer service issues that we see more regularly than others via resolver.co.uk. Here are some of the most common, and how you can expect the best companies to respond: The compensation claim This sort of complaint tends to be linked to some sort of legislation and is likely to be part of a groundswell of other complaints in a similar vein. This could be because of a news campaign, a change in the law or a precedent-setting court case. Whatever the cause, it’s likely the best companies will hold their hands up and pay up. This is generally because, whenever there’s a large-scale compensation opportunity, solicitors and specialist claims management companies will spring up and force an industry to pay… so for them taking the path of least resistance will generally be better in the long run. The ongoing PPI saga is a classic example of this where banks, with public confidence in them at rock-bottom, were found to have consistently mis-sold payment protection insurance. Another example is flight-delay compensation, where recent court cases have caused a flood of claims against airlines.

The replacement This is one of two types of common complaints related to products – if you buy something (whether physically on the high street or online) that subsequently breaks, you are likely to be entitled to a replacement. This is one of the simplest complaints to resolve, and you should be entitled to expect a swift, efficient response from the best companies. The service failure Another very common issue – and potentially more complex to resolve – is some sort of failure on the part of a service provider paid for by a regular subscription or bill. This could be anything from a poorly installed broadband connection to a water leak, to a problem with domestic gas supply. The way to resolve an issue like this will often be specified in the small print of your terms of service and can be defined by legislation too. This makes resolution easier as there is a clear path to take. Communication is key here – the best companies will always let you know where in the process you are and will manage your expectations accordingly. The apology Surprisingly often, a simple ‘we’re sorry’ is all that we really want to hear when we make a complaint. The issue here is about respect, and about a sense that your concerns are listened to. The suggestion for improvement This is similar to the apology but, crucially, you also want to feed back on how a service or product could be improved. Again, this ought to be easy for a responsible company to deal with - as long as you feel you are being listened to and have some idea of how the customer service team will pass on your suggestions to the wider company.

Gartmorn Dam Country Park Visitors Centre by RAMBLERS SCOTLAND BRONZE ROUTE - 15 minutes Starting at the Visitor Centre head towards the overflow car park, crossing over a bridge. Just after the bridge turn left onto a tarmac path, through a strip of woodland. After about 20m, turn left onto a farm track and continue until you come to a crossroads. Turn left and head down the hill and round a sharp bend to the left. Take the grassy path to the right of the water treatment plant and follow it into the woods by the Brothie burn. Continue along the path with the burn on your right, over a manmade “waterfall” until you reach two red sandstone buildings. Climb the concrete steps to your left. At the top of the steps, turn left and then go straight on back to the Visitor Centre.

From the Visitor Centre head towards the overflow car park, past its entrance and take first path on the right. The path goes up hill through Cowpark wood. Turn right at the next junction and continue through the woods until you see a path off to the right. Turn right here. At the next path junction turn right. The path now enters a denser and darker woodland. Just before you reach a metal gate turn sharp right and continue along the path until you reach the edge of the wood. Go straight on down a farm track with fields of poultry to your right. At the bottom of the hill turn right onto the North Shore path. Carry on straight through the overflow car park and then turn left back up to the Visitor Centre. From the Visitor Centre head down to and through the overflow car

Does Hypnotherapy Actually Work? by VICKY MCLEOD, MERIDIAN WELLBEING HYPNOTHERAPY A question I'm asked often as a hypnotherapist is whether hypnotherapy actually works. Hypnosis is actually a natural state, a level of altered awareness like those we can gently go in and out of ourselves through our day. For example, when concentrating on a task, and very deeply involved in it, you’ll notice time seems to go by slightly differently. You might be surprised to discover that what feels like 20 minutes, was in fact over an hour. Similarly, if you've ever driven a very familiar route, you might have arrived at your destination to discover you couldn’t remember the journey, because you were so deeply involved in thought about something else. In hypnotherapy we are able to utilise this natural tool, by applying it in a specific and concentrated way to address areas in our life we want to change. Our subconscious mind is a bit like a database, holding our beliefs, habits, expectations and our memories - all of the things that are stored on a deeper level. Our conscious mind dips in and out of that subconscious information, and those things can influence our behaviour and choices in ways that we often don't consciously recognise. In hypnosis we can reframe erroneous, outdated information which is not serving us positively anymore. We can look at our behaviours, habits and thoughts in a different way, and suggest alternative ways of perceiving and behaving which can allow us to move forward more positively and effectively.

Do you enjoy watching your ideas “come to life”?

Guardian Soft Furnishings hold the largest fabric library in Scotland. We are an experienced and qualified design team. We can take ideas and colours and use this to make fabric and style suggestions, to create an aesthetic and practical design for our customers’ homes.

It is a huge benefit for our customers that they are buying directly from the manufacturer. The design team can have a very hands-on approach and can learn from our highly experienced manufacturing team.

How do you keep up to date with current trends and help customers create the look they envisage for they home? The Guardian Design Team are constantly trend forecasting whilst also looking at historic design and more traditional looks to build an eclectic mix of styles to suit everyone. Whilst some customers follow current trends, others have a more traditional taste…We can cater for everyone.

What advice would you give to customers who are unsure what kind of soft furnishings to choose for their home? We would always recommend if you are unsure to come in have a chat with our design team in our Stirling showroom. Customers could bring photographs, magazine cuttings or any existing furnishings, such as cushions, which we could use for inspiration.

Perfect Plants for May and June by LOVE LOCAL MAG Azalea shrubs are beautiful plants to see bloom. These plants can grow up to 60cm tall and can be found with either red, pink or white blossoms. Although these plants are native to China and Thailand, they can be found in many parts of the world. Being relatively easy plants to maintain, they are also easy to grow in most climates. The best time to plant Azaleas is either late spring or early autumn and preferably in slightly acidic soil that has been well drained.

Nothing says “Spring” more than a bright, vibrant, colourful flower and you can find all these qualities in the Pulmonaria plant. More commonly referred to as ‘Lungwort’, the Pulmonaria are wonderful as they can act as both foliage and flower. Their ever changing leaves can be found in shades of plain green, silver or with splashes of white. Their flowers also come in a variety of beautiful shades of blue, pink, white and red. They are native to Europe and thrive in British gardens and are well known for being woodland plants. Pulmonarias hate dry conditions but are relatively easy to grow and can be grown under shrubs or trees.
