Roast Rump of Perthshire Lamb with Goat's Cheese & Chive Mash and Red Cabbage Serves 4 by JASON HENDERSON, KNOCK CASTLE HOTEL & SPA For the Red Cabbage


1 red cabbage, sliced 200ml port 220ml red wine 100g sugar

1. Place all the cabbage ingredients in a pan, cover it with greaseproof paper and cook over a low heat for 2-3 hours, stirring occasionally to ensure it is not sticking.

For the Mash 2kg peeled potatoes 20g goat's cheese 25g chopped chives 50ml cream 20g butter For the Lamb 6 x 170g lamb rumps 21 spears asparagus 25g butter 1 tbsp olive oil

2. Wash the potatoes until the water runs clear and simmer them in salted water until soft. Drain off the water and mash until very smooth. 3. Fold the goat’s cheese into the mashed potato with the chives, cream and butter. Season and mix well then set aside to keep warm.

4. Preheat the oven to 200°C 5. Season the lamb with salt and pepper and then place the rumps skin side down in smoking hot pan and place in the oven for 20 minutes (this will give you medium rare meat, adjust the timing to suit your taste). Leave the meat to rest for at least 10 minutes. 6. Grill the asparagus in oil, butter and salt and pepper and serve on the side.

Easter; chocolate and eggs. Friend or foe? by TIM MEADOWS, PERSONAL TRAINER OPERATING FROM THE UNIVERSITY OF STIRLING It seems like only a few weeks ago we were stuffing ourselves with delicious indulgent Christmas treats and just as we get our mind and bodies back on track with healthy eating, the Easter bunny appears laden with eggs. Can we still enjoy traditional Easter foods of chocolate and eggs without compromising our health and fitness goals? Chocolate Let's quickly look at the difference between milk chocolate and dark chocolate. The darker the chocolate the more cocoa is present. The more cocoa present the more flavonoids are in your chocolate treats. Flavonoids have numerous health benefits such as; prevent cardio vascular disease (CVD), lower bad cholesterol (LDL) & reduce inflammation of cell tissues. Cocoa was once a medical treatment in ancient times, and recent research shows that some of the health benefits are very real and dark chocolate can be a great healthy treat. In comparison, milk chocolate has a very low cocoa content and a very high milk & sugar content and therefore lacks the health benefits of cocoa and flavonoids. Simply request the Easter bunny to bring you a healthy, dark chocolate Easter egg and enjoy it in moderation. Consuming around 20g at least 70% dark chocolate every few days allows you to enjoy this


holiday with minimum guilt and stay on track with your health and fitness goals. Eggs What about normal, chocolate-free eggs? To sum up, eggs are "a fantastically nutritious food". They really are. A large free range whole egg will provide 7g of protein & 5g of healthy fats, plus a wide range of vitamins and minerals. If you recall previous articles, a protein and fats breakfast is far superior to a cereal and carbohydrate breakfast for health, fat loss & sustained energy release. The myth of eggs being bad for cholesterol is now firmly in the past as dietary cholesterol does not affect blood cholesterol, and eggs contain the good (HDL) cholesterol, so it's a win win for the humble chicken egg. However you prefer them, embrace the nutrient dense and wonderful egg into your meals and reap the benefits. My preferred options are scrambled eggs in coconut oil with spinach or poached eggs with turkey bacons and asparagus (a delicious Easter Sunday breakfast!) Give yourself a health boost AND a few treats by embracing the health benefits of what the Easter Bunny is bringing.

Mum, who welcomed her new grandchild, another layer to love, It made Grandmother’s day, She understood a Mother’s new love.

There is Easter too with the Easter bunny And the weather will be warm and sunny.

Mum got news, Cancer she has, It wasn’t Mother’s day But she was strong for the daughter she loved. So tiny and frail, she’s slipping away, I could see time with Mother fade every day. But for me, it’s Mother’s Day every day, She’s in my heart and with all the memories, we are never apart.

We know that a lot of you lovely love local readers are reliant on fuels like LPG and oil. With the recent clamour about oil prices we thought this was a good time to talk about short and long term costs of using oil fuel versus biomass fuels. Oil prices are historically unstable. This is the result of many factors from politics to supply and demand issues, not to mention the fortunes being spent on investigative forays and developing increasingly invasive measures to get the black gold out of the ground. Prior to the recent crash prices were rising 8.5% above inflation and the current low prices are not sustainable. Low oil costs mean companies will (and are already doing so) lay off workers, reduce production, cut back investments in exploration and so on. This all has a knock on effect on both availability and cost in the long term. Unfortunately this means you cannot rely on stability of supply or prices. However, biomass fuels are a different story. Trees are a much more manageable and stable commodity. Wars are not waged over sustainable forestry management or using waste wood as fuel.

Ultimately, fossil fuels are finite. The supply is going to come to an end. The governing bodies for microgeneration are bringing in sustainability criteria as we speak to ensure this remains so. You can already ensure the sustainability of biofuels by looking for the FSC (Forest Stewardship Council) stamp. This is important for two main reasons - it is vital that we maintain a healthy level of forestry for the environment and it simply makes good business and common sense. If you can ensure the fuel you rely on will be available and cost effective, well why wouldn’t you?

Biomass fuels have remained at a stable price throughout the rising popularity of biomass with prices only increasing with normal inflation. With wood fuel being easy to source and produce there will never be the same issues with big players

The heating was via an LPG boiler, one of the most expensive fuel types and the Patersons were keen to investigate options to reduce heating bills without compromising the comfort of guests. Having assessed the options Ecoliving concluded that a small district heating system, supplying each with heating and hot water from a centralised heat source was the best solution. A 50kW


ETA pellets boiler, a large buffer cylinder, pellets store, flue, Heating Interface Units (HIU) and 120m of super insulated underground pipework were installed. As part of the installation, appropriate meters were fitted for measuring heating output for the non-domestic Renewable Heating Incentive (RHI) which the installation qualifies for, being a commercial application and a district heating system. With a heat demand of over 77,000 kWh/year the anticipated RHI payments amount to £6,048 a year and in excess of £120,000 over 20 years!

March and April Sunshine and showers Evidence of Spring should finally be here with daffodils sprouting and flowering trees in bloom. April showers are inevitable, but the (hopefully) sunny days will allow you to spring clean the garden, including preparing beds and borders, sow seeds, cut back winter shrubs and generally tidy up around the garden.
