Southern Fried Chicken Recipe by HUGH MCARTHUR, OWNER OF GABE’S DINER AND THE LOFT

Classic comfort food at its best homemade! Serve with garlic mayo, a wedge of lemon and some buttery corn on the cobs. Serves 4 4 x Chicken Thighs 4 x Chicken Legs For Coating 2x tablespoons of Cajun spice mix zest of 1 lemon ½ teaspoon of cayenne pepper Good pinch of salt 2x cups of plain flour 3x stems of lemon thyme (leaves stripped) 2x large whisked eggs Oil for deep-frying or deep fat fryer Heat oil or fryer to approx. 180°c Heat Oven to 170°c First, combine all the coating ingredients in a large bowl and mix well. Take each piece of chicken and coat with egg then dust well with the flour mix. Try to get the coating reasonably thick but also even. Next, lay the

chicken out on a tray or large plate, cover with cling film and place in the fridge for approx. half an hour. This allows the flavour to infuse into the chicken and prevents the coating from falling off as soon as you put it in the oil. When your chicken is ready to cook, very carefully place it into the pre-heated oil, this will crisp up the coating and give your chicken a nice golden colour. Please bear in mind this WILL NOT cook the chicken all the way through and placing the chicken in the oven is essential. Once you have fried all your pieces of chicken place on an ovenproof tray and put in the oven to finish cooking. Your chicken should be ready when you put a fork in it and the juices run clear. You may wish to blot the chicken with a piece of kitchen towel to remove any excess oil, and then simply serve with your choice of accompaniments.

Gluten Free Chocolate Fondant by BY JASON HENDERSON, KNOCK CASTLE HOTEL & SPA Serves 6 Preheat the oven to 200°C (180°C fan)/390°F/Gas Mark 6. Grease 6 ramekins with butter and generously dust with cocoa, tapping out any excess. Pop your prepared ramekins in the fridge until needed Ingredients 125g dark chocolate, 125g unsalted butter 2 medium eggs, plus 2 medium egg yolks 100g caster sugar, 40g rice flour, ½ tsp. salt

Method Melt the chocolate and butter together in a heatproof bowl suspended over a pan of barely simmering water. Once completely melted, set aside to cool for 10 minutes. In the meantime, whisk together the eggs, egg yolks and sugar until pale and thick and the drips from the lifted beaters leave a slowly disappearing ribbon trail in the bowl. Sift over the rice flour and use a large metal spoon to fold it into the egg mixture. Next, pour in the cooled chocolate and butter and fold in with the salt using a large metal spoon. Be careful not to knock all the air out of the mixture. Take the ramekins out of the fridge and divide the mixture between them (they should be filled to just shy of the top). Pop them on a baking tray and bake for 12 minutes. Turn out onto plates or serve straight from the ramekins.

The new NHS Pharmacy Gluten-Free Food Service in Scotland Making it easier for patients with Coeliac Disease to obtain their staple gluten-free foods! by JONATHAN BURTON, LOCAL COMMUNITY PHARMACIST From February this year, if you are a patient in Scotland with diagnosed Coeliac Disease (or Dermatitis Herpetiformis) you will be able to use a new way of obtaining the gluten-free foods you previously received through a doctor’s prescription. From now on, if you choose to do so, you can be signed up for the new ‘glutenfree food service’ by your GP who will complete a registration form for you to hand to your local pharmacy of choice. The pharmacy will always take time to explain the ins and outs of the new service to you at this point, but I’ve jotted some details down below which may be of interest: Your registration form will detail an agreed number of ‘units’ of gluten-free food that you are able to order each month i.e. different foods (e.g. loaves of bread) are allocated different numbers of units. You can choose from a range of NHS approved products that you’d like each month, so it’s more flexible than a traditional repeat prescription.

Other useful information: • Not all gluten-free foods are included in the service, which will mainly cater for staple foods such as breads. Nonessentials such as luxury biscuits and cake mixes will usually not be available. • It’s important that you use just one pharmacy of choice to access the service as that is where you will be registered as a patient, just like you register with a doctor’s practice. • There’s loads of useful patient information on the Coeliac UK website www.coeliac.org.uk so check it out! We look forward to seeing you in the pharmacy and helping you manage your gluten-free diet.

You’ll have a special order form to note down your requirements. Hand this to the pharmacy and you will be contacted when your order is ready (usually very quickly, within a day or two, possibly a little longer for bakery fresh products). For adult patients, the pharmacist is also responsible for carrying out an annual health check for patients using the service; this is an extra opportunity to ensure you are happy with managing your gluten-free diet and to check how your symptoms are generally. This information is fed back to your GP and we would of course recommend

LOCATION, LOCATION? Once you have decided your invitation list the first big choice is the venue with options available from hire of your local hall to exclusive use of a country house hotel. Many places are licensed to hold civil ceremony weddings and some clergy will carry out a religious service at your chosen venue. Love Local asked Jason Henderson of Knock Castle Hotel in Crieff to give us his top tips. “The biggest advantage of booking a hotel is that everything is taken care of, no need for separate hall bookings, drinks licences, caterers etc. Many hotels specialise in weddings and may be able to cater for small to large groups. Look for a hotel who will give you a dedicated co-ordinator as part of the package. The co-ordinator will be your point of contact from start to finish, discuss and plan your wedding with you and be on hand to ensure that all goes well on the day. If the ceremony is to take place at the venue, your hotel should provide you with rooms in which to get ready. Check that they offer discounted accommodation to the wedding party and guests. Ask if the hotel has a portfolio of weddings it has hosted and inquire if it is possible to visit for a quick preview of the venue when set up for a wedding.

The Outfits THE BRIDE You will want to look your best on this most important day. Do some on-line and magazine research to find a style or look that you prefer. Here are some essential things to consider. If you are a shorter or petite bride be careful that your dress doesn’t overwhelm you. An empire-line dress has a flowing line that can give the impression of height or perhaps a kneelength wedding dress might suit best. If you have the classic hourglass figure you can consider a strapless dress or a low(ish!) cut neckline or an off the shoulder style might suit. A larger bride will want to show off their curves and it is usually best to stick to simple designs. The best advice is to try on different styles to see what suits you best. Of course not everyone fits into a ‘standard’ shape. The best dress design should help to flatter the bride’s figure. For example an A-line design has no seam at the waist, so avoids drawing attention where it might not be wanted! A good Bridal Salon should be able to give honest advice and most importantly will give you plenty of time to make your choice.

WEDDING FEATURE THE GROOM It’s the groom’s big day too and he has even more choice over what to wear a sharp lounge suit, the more formal morning suit or the extremely popular traditional Highland Dress. Clan Kilts gave Love Local a quick run down on the options. The look of a kilt outfit can be altered by choosing from a range of different jacket styles. Whilst the Prince Charlie is the most traditional, there are other options. The Argyll and Crail jackets are a popular alternative. For a groom who wants to make a statement and stand out, the Sheriffmuir is a very smart jacket, available to hire in black and now in light grey. You should also consider what colour of shirt and socks to wear with your outfit, although these may seem a subtle change, they can put a modern slant on a traditional outfit. A fly plaid can also add a finishing touch to the groom’s outfit. If you are wearing a rouche tie, be sure to wear a 5 button waistcoat with your jacket, wearing this tie with a 3 button waistcoat or no waistcoat at all, is a definite no no! If you are opting for shimmer, tone down the rest of your look. Embellishment is about creating a focus area – so look for a dress where the embellishment is in an area you don’t mind drawing attention to! • For boho-chic, maxi dresses are the perfect wedding occasion dress. Go for a maxi with a bright floral or digital print, or statement tribal design. • Long necklaces or bangles can often complete this look – just stick to one accent colour. FORMAL WEDDING • Knee length dresses or longer are best and suitably more formal. • Satin dresses are a nice day-to-night option. By opting for one with pleated detailing and a cinched waist you can disguise bumps that other dresses would cling to. • Lace panels and net detailing add a classic, feminine edge to any dress. Asking for certain goods you want on your list can mean avoiding having to buy them yourself. These pieces can then sit in pride of place in your house. Those who purchase them enjoy knowing it was something you wanted and you just simply enjoy using the gifts! Of course, many families and friends often have left over pieces that will do fantastically as a temporary piece for your new home – saving you on cost and effort. It is always a nice idea to mix a traditional family heirloom with a more contemporary piece to create your own individual scheme. Though, do ensure to take into account your space. Certain furniture goes with certain areas, and another piece of furniture doesn’t. Consider this when buying furniture.
