New Community bakery opens in Stirling by LOVE LOCAL The Riverside Bakery, community interest company, is a social enterprise which sprouted in a loop of the Forth, in September 2014, from the combined efforts and visions of three home bakers: Theo, Nils, and Tom. Along the way, they benefited from the help and support of many, like Stirling University Students' Union and the Sunlite cafĂŠ, who gave them the use of their kitchen space and encouraged them to run workshops. The seed was sown, and the central aim of the project remained, to grow a Community-Supported Bakery by offering local, handmade breads that are leavened using natural ferments like sourdough, running workshops and cultural events, working with communities, schools or care homes, and participating in growing a truly

local and fair food culture by involving people in the running of the business itself. At the moment, the bakery runs on Thursdays and Friday from the Hillview Community Centre, and delivers bread by bike around different pick up points and the farmers' market. Since joining the project last March we’ve met and bought from some amazing local producers. What's in season and tastes best in January and February? by GREENER SCOTLAND Start the New Year off on the right foot and make the most of seasonal root vegetables by making your own soups and stews. They’re simple and cheap to throw together and make for a hearty lunch or dinner. Venison, hare and other game are also in season and can be bought from most local butchers. Make the meat go further by putting it in a casserole with plenty of veg. In February, take advantage of plump mussels and other affordable seafood. Savoy cabbage and purplesprouting broccoli join cauliflower and leeks at this time of year. Mixed fruit pancakes by LYNDON GEE INGREDIENTS:

METHOD:

1 egg, beaten 150ml (5floz) milk 100g (3oz) flour (plain, wholemeal or gluten-free) 50g (2oz) dried mixed fruit 100g (3oz) finely chopped fruit (e.g. apple or pears) Dash oil 1 teaspoon sugar 1 teaspoon mixed spice or cinnamon

1 Beat the egg into the milk, then put the flour in a bowl and gradually stir in the milk mixture until smooth, then mix in the dried and fresh fruit (pears can be used instead of apples about 100g). 2 Heat a nonstick pan and add the oil, then add a tablespoonful of the mixture. 3 Cook for 2 minutes then flip over with a spatula and cook for another minute or two on the other side.

The pancakes should be about 8 cm (3in) in diameter and only 3-4 mm (1/8in) thick. You should be able to cook 2 or 3 in a large pan at the same time. 4. Mix the sugar and spice together and sprinkle over the hot pancakes before serving.

It’s all down to wrong food combining.

The purpose of this article is to introduce you to the Art of Proper Food Combining, explain more about physiological chemistry, acid/alkaline balance and help you put together health promoting meals. Each issue we will discuss foods in season, what they should be combined with and what’s an absolute “combo-no-no”.

Digestion is governed by physiological chemistry, but we continue to feast on menus and recipes made up of a mixture of foods without thinking of the decomposition of these combinations and the poisons they are causing. The human digestive tract was not designed by nature to digest complex meals and a stomach of decomposing food will not supply the body with the calories and vitamins originally contained in the foods. There are certain physiological limitations of the digestive glands, digestive enzymes and digestive juices that should be considered in planning any meal. When we incorrectly combine food, not only is our digestion impaired, but all the food consumed will ferment and putrefy in the digestive tract leading to a number of health issues. As they say, it’s not what we eat, but what we can actually digest and assimilate that adds to our health, strength and well being. Digestion of food requires approx. 60% to 70% of our cellular energy over 24 hours or more. Different food classifications require different times for digestion. For example flesh foods require approx. 10-12 hours, while an acid fruit like an orange requires only one, and this is when they are eaten alone. Just imagine how long it would take the digestive system to try to digest different incompatible food classifications together!

Let’s start with some of our foods in season now. Broccoli, Cauliflower, Cabbage and leeks. The food classification for these foods is “Non-starchy & Green Vegetables” (digestive time: 4-5 hours). They combine perfectly with each other and should be combined with :• Mild starch Vegetables (digestive time : 4-5 hours) such as carrots, pumpkin, turnip and zucchini • Protein Starch Vegetables (digestive time: 10-12 hours) such as all legumes, wild rice, brown rice, soy and wheat • Flesh foods (digestive time : 10-12 hours): fish, meat, chicken etc • Protein Fat (digestive time: 10-12 hours) such as avocado, cheese, nuts and seeds. FVC The Place… Roasted Root Vegetable Soup by THE PLACE, FORTH VALLEY COLLEGE Ingredients

Method

 50g cooked root 2 vegetables – parsnips, celeriac, carrots, squash etc

1. Over a low heat, cook chopped onions in a pot until soft with no colour

250g cooked potatoes

2. Add garlic and ginger

2 large onions chopped

3. Then add the vegetables and potatoes, followed by the bouillon (stock)

20g freshly chopped garlic 10g freshly chopped ginger 1 litre vegetable bouillon (Stock) 100ml double cream

4. Bring to boil and boil rapidly for 5 minutes

50g crushed crackers

5. Turn down the heat, add the cream, nutmeg and cinnamon

Pinch of nutmeg

6. Season to taste

Pinch of cinnamon

7. Blend until smooth

150g crumbled cheese

8. Pour into warm bowls and sprinkle crumbled cheese and crackers over the top

NO Year Resolutions! by VICKY MCLEOD, MERIDIAN WELLBEING HYPNOTHERAPY While nearly three quarters of British adults will be resolving to stop or start doing something in 2016, research shows that 80% of them will fail to keep those New Years’ Resolutions. The reasons for these statistics vary. We all want to develop, to better ourselves, but often the goals we set are not really our own goals, they are goals we think we should do. The difficulty with setting goals in this way is that our motivation to achieve them is extrinsic – it comes from outside of us, and so it quickly loses its power. When we tell ourselves that we have to do something, we are telling ourselves that we don’t have a choice. When we feel we don’t have a choice, our subconscious mind will resist, to protect us from the coercion and keep us ‘safe’. However, when we know why we want to do something, and the pain of not achieving it is more, our motivation becomes intrinsic – from inside of us. We don’t need to remind ourselves to do it. It has become a part of us, our self-image has changed to encompass it, and it is automatic. When we want to make changes, it’s important to recognise that all behaviours, even those we want to change, serve some purpose on a deeper level. While one part of us sees the benefit of making a change, another part might wonder how we will cope without the old behaviour. Overeating might provide comfort, associated with the good feelings of sharing time with loved ones. Smoking might increase our status at work if cigarette breaks are shared with colleagues. When stressed after a long day, we might prefer the sofa to the gym. If we separate the benefits we seek from the unwanted behaviour, it’s possible to find more effective ways to fulfil them, without the need for the old behaviour. Walking with a friend might equally provide the time to unwind, reflect and recover from a stressful day, as sitting on the sofa. Starting

a new hobby or pastime, might provide similar feelings of comfort that were previously found from a chocolate biscuit, but without those negative consequences. Remind yourself every day why you choose to make the changes you desire, and if you choose not to, that you are willing to accept the consequences of your decision.

So Precious by ALISON KILGOUR, FOUNDER AND TRUSTEE OF SO PRECIOUS So Precious is a charity dedicated to supporting Neonatal, Maternity and Paediatric Care for NHS Forth Valley. The charity was founded by my Husband David and I in February 2011 after our introduction to parenting conquered a difficult start. We almost lost our first born son and it is only due to the impressive and outstanding care that our son received that we are now enjoying planning his 7th Christmas. Forever in debt to the incredible paediatricians, midwives, nurses and staff at the Neonatal Unit in Forth Valley, David and I felt a want to raise money to ensure that the neonatal services at NHS Forth Valley could deliver world class care in an environment that supports the whole family. We are a very small charity with big ambitions and bigger principles. We do not employ any staff or have any fancy and expensive overheads. Instead we are run by a team of 8 dedicated volunteers who give up their valuable time for a cause that has helped so many vulnerable babies and children.

Opening More Doors SC036384 This local charity group, formed 10 years ago in Alloa, has raised money to help fund projects for small groups and larger ones. Recently they held a successful all-day event which raised £9000 for Strathcarron Hospice. Each year they choose three different causes to support and plan to continue doing this next year. A ceilidh to be held in Alva in January and a Bridge Day at Schaw Park in Alloa in February will get 2016 off to a good start. Samaritan In today’s world, most people feel stressed and worried about many different aspects of their lives and, often, do not know to whom they can turn. It could be a young person worried about impending exams, relationships with their peers or a breakup in their family. An older person might have financial, job or drink problems, whilst a pensioner might be very depressed as a result of living alone. Many people suffer from physical or mental health illnesses and do not know with whom they can confide. Samaritans offer a confidential listening service on a 24/7 basis for anyone wishing to telephone, email, text or write a letter. Anyone is also welcome to come to the Central Scotland Samaritans office in Falkirk, during the day, and talk through their problems in complete confidence. Sometimes, the person contacting Samaritans may have harmed themselves, or even be so desperate that they are thinking about ending their lives. Samaritans will not offer advice, but give an opportunity to talk through alternative options. The organisation is always looking for new volunteers for this very worthwhile and rewarding work of listening. However, one can become involved in different ways, either as a fully trained Samaritan or on the organisational side or through fundraising. For a potential volunteer, the first step would be to attend an Information Evening to see if they would be interested in the

work. If they wished to learn more, they would have an interview, and then follow a selection process. After selection, the training is excellent, and is uniform throughout Britain. The training really prepares a volunteer for the constant variety of calls and emails that come in, as well as how to greet anyone who visits the branch in person. The volunteer will then have a mentor for the first six months of training. Branch volunteers are all extremely helpful and supportive. Although everyone gives their time freely, it still costs £25,000 annually to run the Central Scotland Branch and so different methods of fund raising are always being sought. Welcome to the world of Sparklify! by SANDRA ROSE GUNN & SIOBHAN HENCHER Here all the Little Earthlings can learn how to Sparklify and use special sparklatools to stay super healthy and ever sparklified. Sparklifying is sending positive energy in the form of magical sparkles to everyone and everything around us. In this first issue we will be learning to Sparklify Pets. Before sparklifying we must activate our sparklifiers! How to activate your sleeping sparklifiers: •

Hold out your hands, palms facing up.

• Take the middle finger of one hand and draw 7 circles in the palm of the other hand. • Do the same with the other palm. This wakes up the sleeping sparkles in a special place called the “Chakra”. • Now put your hands together like you’re getting ready to clap, but leave

a little space between your hands. • Imagine a small, golden ball of sparkles growing between your palms. • Look at your palms and imagine the ball bouncing bigger, left to right, back and forth between your palms. • Do you feel a sparkly feeling in your palms? You are ready to sparklify!!! The Sparklify Zone Column aims to bring a little of the magic from our classes which run on Thursdays at The Dunblane Centre Sparklify Zone for you to have fun with at home. We call this sparklify technique “Hand Hugs” Follow the Step by Step technique: 1 Sit quietly near your pet.

You will need: Paper plates, paper, tape, glue, paint, pens, felt shapes (or paper), googly eyes/buttons/paper & pipe cleaners or wool/string. Twigs/fruit kebab sticks/ chopsticks to provide a handle. Step 1.  Paint your paper plates… leave to dry. Step 2.  Prepare other features using buttons, material etc.. There are no rules here, get creative with your up-cycling. Step 3. Time to glue all the parts into place. Step 4. If you would like, you could tape a lollipop stick/twig to add to the fun. Celebrate the Year of Innovation, Architecture and Design 2016 in Stirling by JASON CLARK, STIRLING WALKING TOURS This is a Scottish Government initiative led by VisitScotland, providing the chance to highlight, celebrate and promote Scotland's achievements in innovation, architecture and design to our people and our visitors. To join the celebrations, Stirling Walking Tours would like to highlight a few key local landmarks. Stirling Old Town boasts perhaps the finest concentration of historic buildings in Scotland. Beautifully preserved medieval and renaissance churches and mansions below the imposing cliff-top fortress of Stirling Castle. THE ATHENAEUM Located at the top of King Street, this iconic structure was constructed to the design of architect William Stirling. It was originally used as a reading room. The foundation stone was laid in 1815 and the striking statue of William Wallace was added later in 1859 by Rev. Charles Rodgers, one of the driving forces behind the construction of the National Wallace Monument. COWANE’S HOSPITAL This wonderful building, packed full of character, is located at the top of St John’s Street opposite the imposing Church of The Holy Rude. Built between 1637 and 1649 as an Almshouse for decayed members of the guild of merchants. It has been used as a guildhall, schoolhouse, hospital and, most recently artists’ studios and coffee shop. One of the most interesting features is the statue of Auld Staney

Legend has it that each New Year’s Eve, as the Tolbooth clock chimes midnight, Cowane’s statue is possessed by the merchant’s spirit and he comes alive, dancing and chasing young women around the top of town! MAR’S WARK Located at the top of Broad Street, on the Castle Wynd, just down from Argyll's Lodging, this is the striking remains of a remarkable renaissance mansion built around 1570 by the powerful Earl of Mar, hereditary Keeper of Stirling Castle and one time Regent of Scotland during the minority of James VI. The Earls of Mar were originally the Erskine Family who were appointed by David II as hereditary keepers of Stirling Castle. The shell of a striking renaissance-style town house is all that remains of a once grand building at the top of the Old Town. The facade of Mar's Wark is decorated with stone carvings, panels, gargoyles and much of the stone would have come from the ruined Cambuskenneth Abbey. The 11th Earl of Mar supported the Jacobite cause and following the failure of the 1715 rebellion, the house was converted into barracks. During the 1745-6 rising it was damaged by cannon fire and fell into ruin. It was later repaired to house soldiers. In the 1730’s the town council made plans to convert it into a workhouse, hence the name Mar’s Wark. Fernlaw Crafts produce handmade lampshades, pictures and T-shirts in Stirling. All lampshades use Suzie’s original designs and are made by hand. The images are created by carefully cutting and layering iridescent paper. The paper is backed onto PVC which is UV stable, flame retardant and engineered for lampshade making, having passed the glow wire test carried

out by the Lighting Association. The whole shade is then covered in a layer of Japanese Washi Nambi paper and mounted onto a lampshade ringset. Plant of the month - Primrose The first sight of a primrose can never fail to warm the cockles of one’s heart, especially if the winter months have been somewhat dreary. Growing these pretty plants is relatively easy and they can be grown from seed, sown outdoors in a cold frame during winter. Once they’ve got their second or third leaves they can be put out into the garden, either at the front of a bed or in a container. They don’t grow overly tall and need planting in lightly shaded areas about 6-12 inches apart. Keep an eye out for slugs and snails as these can often affect the plants otherwise enjoy the white, yellow, red and pink colours that will bloom.
