At Cranelli’s Italian Restaurant,

J
immy and Lasinda Crane, owners of Cranelli’s Italian Restaurant, have built their lives around the restaurant industry. Jimmy started at a local Italian restaurant in Lakewood as a teenager and later became a chef at a Sicilian restaurant in Littleton; he built his career by moving to the Front of the restaurant with local restaurants – Bahama Breeze, P.F. Chang’s and Brio Tuscan Grille. Lasinda started her career in the restaurant industry as a server and later in management at Outback Steakhouse in Highlands Ranch; she continued on this path but at 2 local coffee shops, Peaberry Coffee and Nordstrom Ebar. After 30+ years in the industry, Jimmy and Lasinda decided to chase their dream of opening their own restaurant. After searching for a location for months, Lasinda saw a Craigslist ad for a restaurant for sale in a Lone Tree apartment complex and knew it was the perfect location upon site. The Crane family – including Lasinda’s dad who did most construction on what you see in there today -- spent five weeks cleaning and renovating the space. During the hustle and bustle of the holiday season, the Crane’s opened their doors the day after Christmas and invited the community to become part of their family. Cranelli’s, which bills its food and atmosphere as ‘Italian Simplicity with a Rustic Touch’ and is known for its garlic knots
and Lasagna made fresh daily, celebrated its 5th anniversary with a private wine dinner in February. The restaurant employs nearly 50 people and provides lunch and dinner service as well as catering. “It has been a roller coaster ride, but It’s awesome when your dreams come true,” Lasinda said. The restaurant’s popularity is a result of its focus on customer service, consistency, comforting food, its dedication to the community, and perhaps most importantly, its customers. “We wouldn’t be who we are right now without them,” said Lasinda.

Reduce heat to low and add heavy cream. Season with salt and pepper, to taste. 5. Add spinach and tomatoes to sauce; let spinach wilt. Stir in Parmesan cheese and Italian seasoning; simmer about 3 minutes.

Hike to a Gorgeous Mountain Lake When John Denver sang about “the serenity of a clear blue mountain lake,” he wasn’t kidding. Slap on boots and experience one for yourself. Easy hikes include Dream Lake in Rocky Mountain National Park and Maroon Lake near Aspen. More difficult hikes include Lakes of the Clouds in San Isabel National Forest and Gore Lake in White River National Forest.

Drive Above 14,000 Feet Colorado has more peaks above 14,000 feet than any other state, and the only two in the nation you can drive up in any old vehicle on a paved road. Mount Evans west of Denver and Pikes Peak west of Colorado Springs will let you enjoy the stunning beauty above the clouds without all the work of walking.

1. Preheat oven to 375°F. Mix flour, baking soda and salt in medium bowl. Set aside. Beat butter and sugar in large bowl with electric mixer on medium speed until light and fluffy. Add eggs, food color and peppermint extract; mix well. Gradually beat in flour mixture on low speed until well mixed. Stir in chocolate chips.
