fter living in Mexico for two years I have managed to master the art of making the perfect flan. Firstly before making it, you need to learn how to pronounce it correctly. The ‘a’ in flan is said with a more open mouth, so kind of like how the doctor asks to check your throat

and say ah (or simply pronouncing your vowels in Maori A E I O U). Now you are ready to cook!

Put two tablespoons of brown sugar into a medium sized baking dish and put it onto a low heat on your oven top until the sugar has turned into liquid. Alternatively you can liquidise the sugar in a pot and add to the baking dish before pouring in the flan mixture.

15-20 minutes. The timing is crucial to remove it from the oven as you do not want to over-cook it. If you slightly move the baking dish in the oven the flan should move like jelly and it should turn out with a custard like consistency. Enjoy
