4. Sodium Nitrite (Sodium Nitrate) - Nitrates are used in curing and preserving foods, mainly meat and fish. The process of curing involves the use of salt, sugar, or some form of dehydration. In each case, the goal is to make the food unattractive to the bacteria that cause food spoilage. This controls bacteria because the are tiny organisms that require moisture, oxygen and food in order to survive. Take away any one of these things and they die.

Are Nitrates and Nitrites carcinogenic? The debate rages on, but here are a few facts on this topic. Roughly 25 years ago, some researchers raised the possibility that nitrites could be linked to cancer in laboratory rats. This suggestion received a lot of media attention. What received less media attention, was when it turned out that they were wrong. Indeed, the National Academy of Sciences, the American Cancer Society and the National Research Council all agree that there’s no cancer risk from consuming sodium nitrite.

Sulfites (Sulfur Dioxide, Sodium bisulfite) - Sulphites, also known as sulfites, are naturally occurring compounds that are used as preservatives in foods such as dried fruits and vegetables, sausages, some deli meats, and condiments. Sulphites are used as food preservatives to maintain food color, prolong shelf life, prevent microorganism growth, as an additives in certain medications and to bleach food starches.

There are many people that can ingest sulfites without any adverse reaction. However, some people, including asthmatics and those with aspirin allergies, may have severe reactions to sulfites, including swelling of the throat, hives, or even death. Other symptoms include headaches, irritable bowel syndrome (IBS), behavioral disturbances, rashes, drops in blood pressure and loss of consciousness. Sulfites have also been linked to the destruction of vitamin B-1 in the body.

7. Ultra Pasteurization - This term refers to a type of high-temperature processing that gives milk and dairy products an extended shelf life of up to 50 days. This process may damage the fragile components of milk, for instance flattening milk proteins so that enzymes can no longer help break them down.
