Send us your fish stories Here on the South Shore, we are proud of our waterfront restaurants and cafes. And they are a top choice when entertaining out-of-town guests. We have one friend, a world traveler and avid fisherman, who listened carefully to the specials of the day at a local restaurant and then asked, “What do you have that is locally caught?” Then he ordered the bluefish. It’s actually a good policy that helps support the local fishing industry. The memory came back recently when we saw the photo below of world-renowned chef Matthew Birkenmeier now at Horizons at the Ritz Carlton in Rose Hall, Jamaica. Often called in to celebrity events such as the Governors Ball dinner for the Oscars, he displayed a bit of showmanship himself, sharing the photo with diners willing to feast on the mahi mahi he had just caught. Can’t get any fresher than that! Now that the waterfront season is starting up, we would love to feature photos of our local chefs with their catches and any recipes or fish stories they would like to share. Please send them to lmedit@optimum. net with the subject line “fish stories.”

As a privately owned funeral home, we have a local, community focus and not a “big business”, corporate approach to what we do. The “bottom line” doesn’t drive us. Service and satisfaction of each family that calls us for help is what we’re about. At the same time, we have the resources, experience and networking ability to assist families wherever and whenever death occurs, regardless of the complications.

Some of life’s events are so important that, if we had a choice, we would want family or friend to help us with them. For most of us, something as personal and as important as a funeral, is one of those events. Since our beginnings in 1900, four generations of the Kearns family and our well qualified dedicated staff have been building relationships with families that often go back three and four generations. It’s facts like this that confirm for us the value of a local family owned and managed funeral home.

family moved to Massapequa Park, but Dr. Caso continued to be our family doctor for many more years. Our son Jimmy was 20 years old and a college student when on March 2, 1978, he was suddenly stricken with a severe headache. The pain became intense and my first thought was to call Dr. Caso. When I did, the doctor told me to call 911 immediately, which I did. Shortly after he arrived at the hospital Jimmy died, as a result of a cerebral hemorrhage caused by a ruptured brain aneurism. As you can see, my family depended on Dr. Caso and he was always there for us. His kindness, patience and knowledge were incomparable, and I will always remember him fondly. I wish him well in all his present and future endeavors and pray that God will grant him many more healthy, happy years to enjoy life with his family. Ann T. O’Connor

Caso put the arm in a cast. When Nancy was 4, she was bitten at the corner of her lip by a neighbor’s dog. It happened on a Sunday afternoon, but I called Dr. Caso. The answering service took my message and within minutes, the doctor called me back. He was attending an art exhibit in which one of his daughters had an entry, but he met us at his office and stitched Nancy’s wound. Our fourth child, Patrick, was delivered by Dr. Caso in February of 1965. Because of problems caused by my RH negative blood factor, Dr. Caso advised me before the delivery that it was likely that the baby would have to be transfused immediately after he was born. Since I was prepared, the transfusion was much less frightening. It was reassuring to know that Dr. Caso could be called upon at any time should something go wrong during Patrick’s first few weeks at home. When Patrick was 8 months old our

To Merrick Life: I can’t tell you how delighted I was to read Adrienne Garfinkel’s guest editorial concerning Dr. George Caso. In October of 1956 my husband and I, together with our one-year-old daughter Alice, moved from Queens to Merrick. One of the first things I did was to ask some of my new neighbors to recommend a family doctor. I also called the rectory of Curé of Ars Church, my new parish, to ask the same question. Almost every person I asked said that Dr. George Caso was undoubtedly the man I should see. My daughter was the first member of our family to be given a checkup by Dr. Caso, and, when I became pregnant again that December, I began my monthly visits to his office. He delivered our second child, a boy named after my husband, James B. O’Connor. After that I took both children to see Dr. Caso for checkups on a regular basis and my husband and I did the same. If we had any health questions

between visits, we never hesitated to call Dr. Caso for advice. While I was expecting my third child in 1959, I had a case of the flu and Dr. Caso, despite very bad weather, made a house call to treat me. Nancy was delivered by Dr. Caso on December 20. I remember telling him on my last pre-natal visit that I hoped that the baby would arrive before Christmas Day, so that I could be home with my other two children for the holiday. He said that he’d like that too, since he wanted to be home with his own children. I have many memories of waiting in Dr. Caso’s busy office with one or all three of my children. The doctor’s sister, Margaret, was always there to help out and often, when she could leave her own little ones, Virginia Caso was there too. When she was 4 years old, my Alice fell off her training-wheeled bicycle and hurt her arm. About 10 o’clock that night she woke up crying with pain and asked to see Dr. Caso so that he could make it better. I called him and he said that I should bring her to his office. Alice had a hairline fracture and Dr.

A belated thank you to Dr. George Caso

Public as the Derby, it is one of the nation’s leading sporting events and holds its own in terms of merit, drama and excitement. The 144th running of the Belmont will take place Saturday, June 9, at Belmont Park, Elmont. Since its inception in 1867 at Jerome Park, the Belmont Stakes has produced 11 Triple Crown champions, starting with Sir Barton in 1919 and including such famous equines as Gallant Fox, Omaha, War Admiral, Whirlaway, Count Fleet, Assault, Citation and Seattle Slew. No spectator can forget Secretariat’s amazing 31-length victory in the 1973 Belmont, when announcer Chuck Anderson shouted, “Secretariat is alone! He is moving like a tremendous machine!” Jockey Ron Turcotte looked back over his shoulder to locate the rest of the field and later said, “It seemed they were a mile away.” The last Triple Crown champion was Affirmed, who dueled Alydar in the 1978 Belmont Stakes to win by a head in a breathtaking finish. Affirmed was named Horse of the Year and went on to win the 1979 Jockey Club Gold Cup. Since then the Crown has remained elusive, beckoning each year to a new crop of three-yearolds. The Belmont has broken as many hearts as the lights of Broadway. After winning the Kentucky Derby and the Preakness Stakes, no less than 19 horses faltered in the final race, such as Charismatic in 1999, who suffered an injury three strides before the wire and finished third. The Crown cracked for Funny Cide (2003) and Smarty Jones (2004), and in 2005 Big Brown disappointed fans by mysteriously finishing last after much media fanfare. When two different horses win the Derby and the Preakness, the Belmont loses some of its suspense and anticipation. It nevertheless tests stamina and endurance, being the longest of the three races at a mile-and-ahalf. Many Belmont winners have gone on to win major summer races at Saratoga and compete in the Breeders’Cup in the fall. The people who thought 2010 Belmont Stakes winner Drosselmeyer had exhausted his 15 minutes of fame were in for a surprise when he won the 2011 Breeders’ Cup Classic as a long shot. Promising two-year-olds from the 2011 Breeders’ Cup races might show up at this year’s Belmont Stakes, such as Breeders’ Cup juvenile winner Hansen and runner-up Union Rags, who was beaten by a nose. Union Rags is trained by Michael Matz, a former Olympic rider who also trained 2006 Kentucky Derby winner Barbaro. Some of the hopefuls may be seen in the Wood Memorial on Saturday, April 7, at Aqueduct Race Track. In last year’s Belmont, what looked like a contest between Kentucky Derby winner Animal Kingdom and Preakness winner Shackleford turned into a surprise upset when a 24-1 long shot, Ruler On Ice, won on a muddy track. “This is the true test of champions,” said winning rider Jose Valdivia Jr. The Belmont Stakes has a long, colorful history as the oldest of the three Triple

Crown races and the fourth oldest race in North America. It moved from Jerome Park to Morris Park and, finally, to Belmont Park after its 1905 opening. In 1920 the great Man O’ War faced only one rival, Donnaconda, and won easily at odds of 1-25. The race was first run counterclockwise in 1921. A 65-1 long shot, Sherluck, beat the hot 1961 favorite, Carry Back, and President Dwight D. Eisenhower presented the trophy to winning jockey Braulio Baeza. When Pass Catcher won in 1971, Venezuelan fans of their idol, Canonero II, didn’t let his fourth-place finish stop their celebration. In 1993 Julie Krone became the first female rider to win a Triple Crown race when she took Colonial Affair to the Belmont Stakes winner’s circle. She called it a “National Velvet” moment. The Belmont Stakes is preceded by local events, including parades and street festivals in nearby Garden City and Floral Park, and special activities at Belmont Park. A longtime favorite was the World of Horses, which featured exhibitions by Long Island riders and included the Spirit of Long Island drill team. “For 13 years, the World of Horses was a unique experience in sharing local equestrian disciplines with racing fans,” said committee Chairlady Betsy Gulotta of North Merrick. “The Belmont Stakes is special, and exhibiting our horses at Belmont Park was an honor.”

ASSAULT won the Belmont in 1940.

Making it to the final of four competitive rounds, Mr. Mincher showcased his original and artfully decorated culinary masterpieces in a custom-built display shaped like two coffins – in keeping with the designated horror show theme. And while the judges agreed that, based on the quality, taste, originality and appearance of the cupcakes, he and the other finalist were “on a level playing field,” Mr. Mincher took second place. “Being on the show was a great experience,” he said. “It was fun, and despite the time pressure of every round, I didn’t really feel stressed,” he reflected. “This is what I do and I thought, I’m going to have fun doing it.” About Andrew Mincher and Sugar Rush Bakery Mr. Mincher, his future father-in-law Steve Hendershot and future brother-inlaw Greg Hendershot purchased

Transitioning to its new name, Sugar Rush Bakery, the sweet shoppe now features some of the old standards that made Dimonda’s a neighborhood mainstay, as well as many popular new taste sensations created by Mr. Mincher and his team. He learned the art and science of baking from his brother Ray Mincher, who has been a professional baker all his life. Mr. Mincher’s recent participation in “Cupcake Wars,” and achievement of Finalist status, was an exciting way for the new Sugar Rush Bakery to celebrate its one year anniversary under new ownership.

Watching “Cupcake Wars” on the Food Network recently, Merrick resident and co-owner of a Massapequa Park bakery, Andrew Mincher and his fiancée, Nicole Hendershot, realized that Andrew would be a great contender for the show. “I love to bake, and I love to create new things,” says Mr. Mincher. So together with his cake decorator Jamilynn Lacaruba, he and Ms. Hendershot created an entertaining and creative “cupcake video” and submitted it to the show’s producers for consideration. Much to their delight, the phone call came: Mr. Mincher was invited to participate as a contestant on the national program, “Cupcake Wars.” The episode, which was filmed in California, premiered on February 26 and aired again on March 6, featured a “Horror Show” theme, and the bakers were asked to created cupcakes in homage to the gory movie genre. Using the prescribed, surprise ingredients, Mr. Mincher and Ms. Lacaruba created artfully decorated cupcakes, such as Banana Rum Cupcakes

The event, hosted by Kennedy senior Jeremy Arndt, was a night for the students of Kennedy to show off their musical talents. There were 17 total performances and each one was just as good as the next. Many fine performers showcased their

talents in front of a full crowd in the chorus room. The students included Brandon Schneider, Jeremy Arndt, Jeme Casco, Katie Tenenbaum, Eric Fegan, Bea Brown, Alex Haefling, Scott Fessler, Michael Wolfson, Sydney Tepper, Shaun Cohen, Fischer Taranto, Corey Caggino, Molly Wasser, Dan Janis, Luke Massaro, Matt Zeltman, Cory Azmon, Austin Koenigstein, Skyler Rudolfsky, Amy Leeds and Matt Lefkowitz.

But these weren’t the only people to preform. The faculty and staff got their chance to shine. Ms. Pincus, Ms. Flynn and Dr. Pratt took the stage and held their own as they played alongside the students. The songs and types of music that were played varied. There was a mix of everything from The Grateful Dead and Coldplay to Taylor Swift. Many other artists were represented and represented

well by the performers. Corey Caggino and Matt Lefkowitz even performed their own songs, which were superb. It was a fun and entertaining night, and a lot of good music was played. These students, faculty and staff showed off their artistic ability and they did it in style. Eric Homburger is a Kennedy High School senior and an intern at Merrick Life.
