It was said best by Marcus Gavius Apicius, the 1st-century Roman gourmand, “we eat first with our eyes.” While the taste of your meal is most important, the aesthetics of a meal can exponentially elevate the experience. A completed dish should feel like a work of art. Similar to an artist using an ideal amount of color to create a painting, the right amount of each ingredient is needed to have the perfect bite. For this issue, we have three separate dishes with complementary wine recommendations for your next event, family dinner or date night.

Keeping it in the family, we paired our dishes with three different varietals from Sotheby's Wine. Avocado Tomato Bruschetta with Balsamic Reduction Ingredients:

Avocado Tomato Bruschetta with a Balsamic Reduction Avocado Tomato Bruschetta with a balsamic reduction is an appetizer that never disappoints. Crusty French bread slices with a simple cherry tomato and avocado mixture joined with a bit of olive oil, salt, pepper and a little basil to top it off is appetizing enough that one might be tempted to make a meal out of it. The flavorful André Dézat & Fils Sancerre flawlessly pairs with this bruschetta to take this appetizer to new heights. This

1 fresh French baguette, thinly sliced

1/4 cup olive oil, divided (If you like garlic, use garlic olive oil just to drizzle over the baguette while they bake)

1/2 cup balsamic vinegar

2 tablespoons brown sugar, packed

2 cups cherry tomatoes, halved

1 avocado, halved, seeded, peeled, and diced

Filet Mignon with Rosemary and Butter Ingredients: •

3-4 8 ounce thick tenderloin beef filets

3-4 Tablespoons of butter

Take steaks out about 30 minutes before cooking to get to room temperature.

Pre-heat oven to 415°F.

Salt & pepper to taste; season both generously.

Preheat skillet on medium-high heat with oil.

Place steak in the hot skillet; sear first side 5 minutes.

6.

After the first sear, flip, add butter and rosemary stems, and continuously baste in the herb butter (about 5 minutes).

7.

Place skillet in the oven and bake about 4 minutes for medium rare*.

8.

Pull out and let rest for about 5 minutes.

*Depending on how you like your steak, increase time Medium rare: 130-135°, Medium: 135-145°, Medium well: 145-155°

Steakhouse-Style Garlic Mashed Potatoes Ingredients: •

6 cups beef broth

5 pounds peeled or unpeeled red potatoes

5 cloves garlic

½ cup salted butter

4 ounces cream cheese

½ cup buttermilk

1 teaspoon salt

Directions: 1.

Bring the beef broth to a boil in a large pot over high heat.

2.

Meanwhile, cut the potatoes into 1-inch cubes or chunks. Place the potatoes chunks and garlic cloves into the boiling beef broth and boil until potatoes are tender about 15 minutes.

3.

Strain the potatoes from the broth and put the cooked potatoes into a large mixing bowl.

4.

Add in the butter, cream cheese, buttermilk, and salt. Use a masher to mash the potatoes and other ingredients until everything is melted, combined, and completely mashed.

Rainbow Carrots Ingredients: •

3 bunches of rainbow carrots

1 tablespoon of olive oil

salt to taste

This light, satisfying and grain-free dessert pairs remarkably with Sotheby’s Blanc de Blancs. The bright minerality of the Champagne amplifies the baked spiced pear flavor of the cake. Adorn the center of the cake with edible flowers, berries or green sprigs to give this already beautiful treat the "WOW" factor. Grain-Free Spiced Pear Upside Down Cake Ingredients: For Topping:

3 pears, sliced and halved

Grass fed ghee

1/4 teaspoon cinnamon

1/3 cup coconut sugar

1/4 teaspoon cardamom

For Batter: •

2 cups almond flour

pinch of salt

1/2 cups tapioca flour

2 eggs at room temperature, whisked

2 Tablespoon. coconut flour

3 tablespoons grass fed ghee, melted

1/2 teaspoon baking soda

3 tablespoons maple or coconut sugar

1/4 teaspoon powdered ginger

1/2 cup almond milk

1/4 teaspoon cinnamon

2 tablespoons maple syrup

1/4 teaspoon cardamom

1 teaspoon vanilla extract

Directions: 1.

Preheat oven to 350°F. Grease a 9 inch springform cake pan then cut out a piece of parchment paper to fit the bottom of the pan.

2.

In a large saute pan, melt ghee and coconut sugar and whisk until sugar dissolves. Add pears in batches and toss until pears become slightly soft. Remove from pan to let cool.

3.

Sprinkle pears with cinnamon and cardamon and arrange in fan pattern at the bottom of the pan. Pour remaining caramel mixture on top. There will most likely be left-over pear slices.

4.

In a large bowl, combine all dry ingredients.

5.

In a separate bowl, combine all wet ingredients. Slowly pour dry ingredients into wet ingredients. Mix until well combined.

6.

Pour batter on top of pears and smooth out on top with a rubber spatula.

7.

Bake cake for 40-43 minutes. You'll know it's ready when you can poke the center with a toothpick and it comes out clean.

8.

Let cake cool outside or the oven for 10 minutes. Release springform pan place platter or cake stand on top. Gently flip cake and peel off parchment paper.

9.

Garnish with flowers, fresh fruit, powdered sugar or decorations of your choice. Serve!

LIV MAGAZINE: What is your background? Is your background reflected in your art? AMADEA BAILEY: I had quite an unusual childhood and it had a huge impact on my becoming a painter and also on the kind of work that I do. I was born in Germany, lived in Switzerland and moved to Kenya when I was five years old where I lived in a tiny village about 25 miles outside of Nairobi. I grew up very close to the elements, the large African sky and the parched red earth. I rode horses in the bush. It was a life where I experienced a sense of unbridled freedom and expansiveness. In my work as an artist my intention has always been to recreate those feelings of largesse and abandonment. When I paint I go an adventure with each new painting. I never know where I am going to end up. I don’t have a plan, but find the painting as I go along. There is always a sense of excitement and adventure and of disappearing into the unknown as I start a new work. LIV: Who are your most important artistic influences? AB: I consider myself to be an abstract expressionist. I began painting after I saw an exhibition of Monet’s late water lily paintings at the Museum of Modern Art in New York City. At the time I was an Art History major at Yale University. The show had a HUGE impact on me.

I loved the large expanses of color, the abstract shapes and the modern compositions. I went back to Yale and signed up for painting,

drawing and sculpture and have been painting ever since. At the New York Studio School I studied with George McNeil a wonderful figurative expressionist. I also love the philosophy and spirit of the American Abstract Expressionists: Rothko, De Kooning, Pollack and Kline. Their work is bold and strong and emotionally driven. That is what I relate to and aim to express in my own work. LIV: What process, materials, techniques, etc., do you use to create your artwork? Is there a connection between your message and the way you make your art? AB: I am a mixed media artist and am driven by color, texture and light. I work mostly on a large scale. I love experimenting with new materials and I often incorporate collage and fabric and mementos from my travels that have a specific meaning and significance to me. I spend many months on a painting so the surface is built up with many layers, each one an encapsulation of a particular period of time. As my work is emotionally driven my aim and desire is to express myself and my life in as authentic and real way as possible. That is what my collectors respond to.

LIV: Do you have a favorite piece or a piece you are most proud of? AB: I don’t have any favorite pieces, they are all unique in their own way, and I am proud of them all. LIV: If there was one thing you would like made known about yourself, your work, your process or your cause, what would it be? AB: I think the most important thing is to be true to oneself. Starting at 20 I had a dream to be living as a full time artist. It took many years and many twists and turns to get to that place but I am proud to say that I am living that dream now. I would urge every creative being NOT to give up. Yes it is hard and challenging and will demand everything you have. But the rewards far outweigh the rest… And the gift of knowing you are doing what you were meant to do, contributing your unique talents and gifts is priceless. LIV: What are your goals as an artist? AB: To travel as much as I can and to live abroad a few months out of the year: in Italy, France or Spain. Traveling to other countries, meeting new people, speaking different languages inspires me and feeds my art. When I travel my whole being opens up to new ways of being and seeing and relating. This is enormously important to my creative enterprise.

L I V MAGAZ INE: What is your background? Is your background reflected in your art? O CHO LIB RE: I grew up on the east coast and moved to California in 1990. I worked designing buildings and remodeling homes, but over the years my primary focus has shifted to my art. Growing up, I never thought of myself as artistic, but I started honing my architect skills in high school and that path led me to my artistic side. After college I moved to Rhode Island and started rebuilding old homes. After moving to Los Angeles in 1990, I attended grad school at UCLA for architecture. Some of the art classes there sparked my interest in painting. After doing lots of architectural watercolor renderings, I started to gravitate to abstract art more so than the realistic side of the aesthetic scope. I especially like using oil paint on panels and build using a lot of color. Sometimes I mix the paint directly on the panel and other times I create a color palette and go from there. I like using tools from my construction days, like palette knives and construction tools. I always paint from my current state of mind, and I find the art evolves while I’m in my process. L I V: Who are your most important artistic influences? O L: There are tons! I am super curious about all types of art. I enjoy works by Kandinsky, a Russian painter in the early 1900’s and one of the original abstract artists. I first saw his work at the LA County Art Museum and fell in love. Van Gogh had an interesting slant on realism, and I appreciate Richard Serra’s steel sculptures. I love Gerhard Richter paintings. He is about 85 years old now and one of the most highly compensated artists out there, but a lot of people don’t seem to know who he is.

L IV: What process, materials, techniques, etc., do you use to create your artwork? Is there a connection between your message and the way you make your art? O L: I’ve done a lot of different stuff, but mostly a lot of water or ocean related abstract pieces. I am an avid surfer and water guy, so part of my personal aim is bringing attention to the environment. Zaria Forman is a painter I admire who creates hyper-realistic glacier drawings with the goal of bringing awareness to climate change. If a person looks at my work and feels a connection with Earth, I have succeeded in my goal. But I also aim to bring joy through my pieces and in many ways, the joy of color in the art I create is a message in itself. L IV: What does this artwork mean to you? How are those ideas expressed in this artwork? O L: God, you know, sometimes I’m surprised at how the art comes out. I wasn’t always sure I had it in me. My mom is an artist and she likes realistic stuff, but she can’t quite get her head around my fascination with large colorful abstract works. And that’s fine! It’s not for everybody, but I enjoy it. A few years back on a whim I started marketing my pieces and they started selling. I love it when someone sees my stuff and likes it enough to put it on their wall. My first and only art show was last February right before COVID-19 at the Ojai Art Center. Such a fascinating and fun experience I hope to repeat when the pandemic is over! L IV: If there was one thing you would like made known about yourself, your work, your process, or your cause, what would it be? O L: I am a supporter of PACE Universal. I was a part of the Ojai Rotary Club for 5 years and heard of the cause through Deepa Willingham who runs PACE Universal. She started the organization by building schools for girls with a goal to empowering women through education in impoverished countries around the world, starting in India. Most of the women there get married young, have no education, and many girls born into poverty are sold into sex trafficking. It’s devastating. Deepa is combating this by keep these girls in school longer, which helps keep them out of these horrible situations. I help support the cause by sponsoring a student in India. Please buy my paintings so I can continue to contribute more! L IV: How do you define success? Are you there yet? O L: I am! I think I am successful whenever someone purchases one of my paintings and hangs it in their home. I’d love to one day sell a painting for $1,000,000. I spend a lot of time creating my works of art but I also spend a lot of time trying to get my art out there by word of mouth, and showcases at local bars and restaurants wherever I can.
