Greetings, Well, the Iowa State Fair is over and that means get the car greased up because it will be a non-stop sale season ‘till next May. It’s like my harvest season. It is my hope that we have a great harvest for all of you involved. Stay in touch, and if I can help you find something give me a call. Speaking of the Iowa State fair, we all talk about the food that we eat while we’re there. Not to mention the amount of food that is eaten at the fair and on a stick no less. Most everyone knows that the state fair is best known for its corn dog on a stick, of course. I have to admit to everyone that to this day I have never eaten a corn dog at the state fair or anywhere else. There is just something about a wiener on a stick, wrapped in what looks like a pancake, and dipped in grease that has just never been appealing to me. The two things just don’t go together. I am just not sure what to think about chocolate and bacon on a stick in hot grease, either. Isn’t that like breakfast and a midnight snack with a hint of grease?? One thing that this ol’ country boy can enjoy is the beef sundae and the watermelon stand. I just wish they were centrally located between the cattle, hog, and sheep barns. My food story for the month: It all started with a text from an unknown source. I kinda put 2 and 2 together and figured out who it was. I had been hinting to a group of campers that if they could fix me a good supper that would be worthy enough to write about, it would make the September issue. The next text was, we will smoke some Spam. My reply was, “great.” I really like Spam. My wife’s grandmother use to make us Spam of some sort when we would drop in on her. I mean she had more things mixed with that stuff than you can ever imagine. And it never came out wrong. I’m not sure there is a wrong with Spam. They really thought they had me on that though. Well, the big smoked Spam night had come, and the first thing out of the smoker was one lone chunk of Spam seasoned with honey mustard seasoning. I thought to myself what the heck are these folks going to eat, I could eat that chunk by myself and wonder what else there was to eat when I got done with it but I was couth. I ate about three tablespoons of some of the best-smoked spam you will ever eat. Then things started coming together out of the smoker. First came about three racks of pork ribs seasoned with Cookie’s Flavor Enhancer, then you turn the other direction and the twice baked potatoes landed on the table topped with onions, chives, and cheese (I could have lived without the cheese), but it was an awesome tater. Then the most deadly bacon wrapped green peppers stuffed with crab meat and cream cheese hit the table, along with the green beans laced with bacon. You all know what my idea of this meal was, pure ol’ country boy.  I mean, I was in pig heaven! There was not one

thing that I did not snarf down like I hadn’t eaten for a month. This meal was deadly. But we ain’t done yet. The homemade ice cream machine started rolling and it wasn’t long and the homemade banana ice cream was in my bowl. I have never had banana ice cream and then you read earlier about mixing things that just don’t belong together, well everybody wanted me to put hot fudge on my banana ice cream and that to me just isn’t made to go together. You know, there are hot fudge sundaes and then there are banana splits, and you shouldn’t mix the two. Just let me tell you, they made me try it, and dang, that was good. What a night. If you want to know what a foundered fat steer feels like, ask me, I can now relate. A very special thanks for the greatest night at the Iowa State Fair. Those involved with the dining masterpiece were Doug, Kari, Dylan, and Sidney Spence and Ross Butler and Sandy Kinzenbaw.  Now to finish my story. They made me walk back to the fairgrounds to my truck from the campgrounds. Let me tell you after that food I needed the walk but I didn’t want it. At one point, I was questioning whether it would just be easier and faster to lay down and roll down that hill. Great night and a big Thanks to the guys and gals!! Well, summer is fast disappearing, calves are getting weaned and crops are getting threatened by large combines. It’s time to hit the road for some herd visits, and sales. How to Develop an Eye for Selecting Cattle Have you ever heard, “Boy, he or she has a real good eye for cattle,” do you wonder why some people have it and others don’t? How can we develop our eye?

Here are some tips: Whenever you are looking at cattle, select the top, whether you are in a pen of 5 or 200, always be selecting the top. Encourage your children to do this at a young age. Ask them which one they think is the best, and then ask them to give reasons. Listen to them with out interrupting. That will help them develop the ability to judge and give reasons. Let them know how you see “the top” and then give your reasons why you see them the way you do. If you are afraid that you may not know what exactly to look for,

Spend time while you are at the shows, watching different classes and encourage your children to judge the cattle with you. Compare each other’s selections with the way the judge sees them. As the cattle enter the ring, take a good look at their head. Yes, their head. They need to have a nice shaped head, smoothly leading into their neck and shoulder. This is the first thing that the judge sees when an animal enters the ring. Also, a lot can be learned just by the length of an animals head. A short blocky head means that they won’t get very big. If they have a long narrow head, this means that they will be a little harder feeding. The length of their head is in proportion to the length from the hooks to the pin bone. This will help you determine how much length the animal has and will have. Next, watch how they move, they need to have a smooth flowing movement and fill their tracks well. All four feet need to point forward and not pop in their joints. They have to be sound. Here are a few clues to look for. Look at the placement of their feet. If the animal toes out or in, this will eventually put stress on the knees and hocks and thus will become swollen and sore. If the animal is too straight they will not fill their track and the leg will not bend properly in the hip or shoulder, hock or pastern. Also, you want a decent amount of bone and joint. This will allow them to carry enough weight when they mature. You don’t want them to have huge joints like what is found in the double muscled type cattle. They tend to be coarser made. Next, take a look at their eye appeal to see if they have a smooth straight top, they are well muscled, long, deep bodied and everything blends together smoothly. Finally, listen to the judge’s reasons and compare your thoughts with the judge’s comments. This should help in making decisions on picking projects for years to come. The more you do this, the better you will get and the more successful you will be at selecting cattle. Remember to study the animal that you are showing this year and decide what you need to do, to hide it’s faults and exaggerate it’s positives. A Little Bit About a Whole Lot of Things by Evan Rayl

In April of this year, a cow with BSE was discovered in California. Chances are pretty good you never heard about it, since it received so little attention from the press. A three month investigation turned up no other cases of the disease. Scientists believe the cow (only the fourth with the sickness discovered in the United States) developed atypical BSE from a random mutation, something that happens occasionally. The 10 year old cow was discovered as a part of a random testing program that spot checks 40,000 cows each year. The lack of publicity was a far cry from the first cow with BSE discovered in Washington State back on December 23, 2003. The four days that it took the USDA to discover the cow actually came down from Canada resulted in hourly headline news reporting and allowed many other countries time to ban all U.S. Beef products. It has been in just the last year that U.S. Beef exports have climbed to levels exceeding the quarter before the “Christmas Surprise” BSE cow was reported. I doubt if cattlemen will ever forget the Holstein cow who started all this. I think we would be shocked if we knew what the total financial loss in this country was from BSE. Don’t get mad at somebody who knows more than you do. It ain’t their fault. A lawsuit filled in U.S. Disrict Court in a State of Kansas court brings together what appears to be a David and Goliath situation. The Organization for Competitive Market’s (OCM) with a relativly small membership is suing the United States Department of Agriculture (USDA), the USDA’s Agricultural Marketing Service, The Cattlemen’s Beef Board (CBB), and the CBB’s operating committee. The OCM wants better prices for ag products, more competition, and to reduce vertical integration. The USDA’s job is to regulate agriculture programs while CBB handles the checkoff for beef. The basis of the lawsuit is that the OCM wants to prevent the USDA and the CBB from awarding the vast majority of the beef checkoff funds to the National Beef Cattle Association (NCBA) to arrange beef advertising and promotion programs. I don’t know if this is still true, but in the past it was said the NBCA won 93% of the contracts awarded by CBB, perhaps because it is a fact, ten NCBA members sit on CBB’s 20 man board. Fred Stokes OCM President, says, “this suit is to prevent misuse and stop abuses of beef checkoff funds.” Further late breaking information about the case: It is Case #: 12-CV-2521RDR/KGS. There is only one actual plaintiff, he is Mike Callicrate from Kansas. The law firm handling the case for OCM has 700 lawyers and has won other large agricultural cases recently. While they won huge settlements in the other cases, in this situation they are asking for a divorce between NCBA and CBB and are handling the case probono. No doubt there will be lots

Animal scientist Jude Capper, PhD. has conducted a theoretical test to determine the value of four performance-enhancing technologies: implants, in-feed ionophores, MGA for heifers and beta agonists at the end of the finishing period. Another theoretical population received normal feedlot practices, but none of the above. Both groups were in a normal Center for Agricultural and Rural Development (CARD) at Iowa State University based situation. To make up for the 4 listed technologies the following would be necessary: Add 10 million head of cattle to U.S. Herds, twice the number currently in Iowa and Kansas combined. Boost annual slaughter rates by 2,859,000 head or 10,000 per week day, about the capacity of 4 large packing plants. Use 17 million additional acres of land and 81 million tons of feed, enough to fill the Rose Bowl 1,010 times. Use 138 billion more gallons of water, enough to supply the annual water needs of 1,36 million homes. Use more than 8 billion additional mega joules of energy use, and 18.6 million metric tons of additional greenhouse gas emissions, the equivalent of putting 3 million more cars on the road. The economic impact would add up to a 8.2 percent tax on U.S. Beef producers. Capper’s paper, titled “The environmental and economic impact of removing growth- enhancing technologies from United States beef production is scheduled for publication in the Journal of Animal Science. Few things are more satisfying than seeing your own children raise teenagers of their own. Since I reported last month about our drought not much has changed here. We’ve had a little rain, but not enough to do much good. I’ve heard corn yield reports ranging from nothing to over 200 bushel an acre (one place in Ohio). Most corn in this area will range from 15 up to 80 bushels. The soybean situation might be even worse. We will need good rain in the next three weeks to have a decent crop. By the time you read this we’ll only have a week left. If we don’t, most fields will be best made into hay because the beans are currently knee high and have a few pods, but nothing in them. Cattlemen in this area are making a lot of corn silage to get their cows through the winter. Likely, some will then seed rye, if one can find seed. My parents always talked about the summer of 1934 (just before I was born) when 40 acres of corn silage only filled a 14 foot by 40 foot silo half full. My father always said the silage was more horse weeds than it was corn plants. Don’t think there was much difference in the weather this year, but today we have much better corn hybrids. Don’t believe anyone was even raising beans back then. By the time a man realizes that maybe his father was right, he usually has a son who thinks he’s wrong. When WHO Radio Farm Broadcaster, Mark Pearson suddenly passed with a heart attack in early June at the age of 54, the agriculture community in Iowa and elsewhere was shocked to lose one of their own way too soon. The passion, knowledge, and humor he demonstrated in reporting all things involving agriculture was astounding. He could recall people’s names and details of farm events without a moments notice. His reports on Public Television about the Iowa State Fair and his show “Market to Market” were must see viewing for so many. Condolences from Secretary of Agriculture Tom Vilsack summed up what most Iowan’s thought, “Mark lived life with gusto and stands as an example for us all. Agriculture needs more people like Mark Pearson, he will be deeply missed.” My own thought is, “Nobody can fill this man’s shoes.” n

This last week I got the chance to try some authentic Mexican food. My brother’s girlfriend is of Hispanic decent and I have told her several times that I would love to try some “real” Mexican food. My brother told me it was too spicy, and one or two of the ingredients were enough to make most people squirm, but what the heck, Tyler is a wuss when it comes to spicy stuff, and I spend about 50 % of my waking moments with my arm up a cows butt, so I wasn’t going to let some diced-up pig intestines scare me. The reward was great! The dish included tortillas, fresh crumbled cheese, and lots of meat (beef also) smothered by a spicy, rich sauce that made my face turn more than a little red. In the beef business, you better not be afraid to try new things

either. In today’s world competition is great, technology is rapidly changing, and margins can be very small. Nothing brings out the need for an open mind more than a drought year like the one we’re having now. Feed and water need to be micro-managed, new feed sources should be looked at and different management practices need to be considered. I’ve heard of all kinds of feed sources being looked at, several early weaning techniques discussed, and we’ve had a lot of calls to do early ultrasounds. Without some proactive thinking, 8 dollar corn and $200/ton hay can sink a ship in a hurry. Get those open cows off the feed bill while the kill cow prices are still high and get the calves off the cows to reduce their daily requirements. Then check into some alternative feed stuffs make your winter feed go farther. Do your homework and don’t go off the deep end but never quit trying to improve your system. - Toby

Iowan's Love Their State Fair! by Evan Rayl

As Shirley and I pulled into the State Fair grounds Saturday night, for the Corn Dog Kickoff, the parking along the Grand Concourse and south of the Varied Industries Building was full, so we had to park west of the building. By the time we got to the south door, just after 6:30, a massive crowd was already inside, judging by all the cars. Almost all the building was setup for the “Kickoff” with tables for guests, displays of items for bidding, as well as, tables along the outside walls where crews were busy dispensing “State Fair” food for grazing. There were 30 items for the live auction and a huge number for the silent auction, just over 150. Many in the crowd were busy checking out the sale items, while

some were getting their pictures taken, and still others were sampling the State Fair food. We happened to find chairs at a table near where the pictures were being taken, so we did that first. Good thing, the line was the shortest we noticed all evening. Then it was on to the food. Shirley collected up a small funnel cake right away, followed by a pulled pork sandwich, a beef sundae, and an A & W Root Beer float. The last two were her favorites. She wanted a corn dog, but the double line was far too long all evening. Like many others, she brought home cotton candy for our two youngest grandsons. I waited until I found where the “pork chop on a stick” was being served. Every one of those I’ve ever eaten tasted really good. This one was no exception. Apparently, there is almost no way to grill one of them wrong. Next, I had a small beef sundae. It was simply strings of beef, gravy, and mashed potatoes, but extremely tasty. I quickly finished the beef sundae bowl before I picked up an A & W Root Beer float, my other personal State Fair favorite. In fact, I slipped over to get a second one before the evening was over. As we headed back to our table to eat the goodies from our food gathering, I spotted a chainsaw carved wooden eagle’s head I liked, so wrote down a bid of $150 for it. Later, when I went back to gather up my second Root beer float, I checked the bidding on the eagle. It was up to $245, so I hit it again with a $250 bid. On the way back with my float a few minutes later, I checked on the eagle again, and saw someone had already raised the bidding up to $275, so I decided to give up. By that time, it was 8:00 and time for the live auction to start. During introductions at the beginning of the sale, Auctioneer Al Conover suggested the sale should be dedicated to Mark Pierson, long time WHO Radio Announcer, who recently passed away. Master of Ceremonies, Bill Riley Jr. picked right up on it, and the two of them suggested many times that folks should bid for Mark. He was never part of this event, but it was one of only a few that he wasn’t! During the evening, one could buy a souvenir bandana, or “rag” for $10 and play a game. Halfway through the live auction all participants with a rag were asked to stand up. To get started one would hold the rag in their hand and choose to hold your rag up or keep it down at your side. Then the auctioneer flipped a coin--heads was rags up and tails was down. If one choose correctly, you remained standing and continued to play: when you were wrong you sat down. The game went on until one participant was left standing. I was starting to get nervous when there only six of us left standing, but then I guessed down when I should have guessed up, so I had to set down. The winner received half the amount made from the rag sales---close to $3,000. The high seller in the live auction was a Grandstand box with 12 seats to all the live concerts at the 2012 Iowa State Fair. It brought $26,000, the highest price ever for this auction. There was a tie for the second high seller at $20,000. First was a gourmet dinner and wine for 12 served in your home by chef Steve Reed plus a tour of the Barilla plant in Ames for 10. Barilla rarely gives public tours. Second was a handcrafted coffee table made by Dr. Dierenfeld. The buyer of this lot hardly allowed others to bid as he waved his bidding paddle so rapidly. At the end of the evening, the Silent Auction totaled $36,685, an average well over $200 on each offering. Of course, the chainsaw eagle brought the average up considerably, since it went somewhere around $300. I’ve been trying to buy one of the chain saw carved eagles at the State Fair for at least 15 years with no success. Others always seem to have a thicker billfold than I do. Meanwhile, many folks were out ridding the SkyGlider during the evening. When we were going back to our car to leave, it looked like it was running close to capacity. Plus, right after the auction fireworks were set off. This years total take broke the previous record for the Kickoff. Since 1997, the total for all the previous years was $2.3 million. This year’s Live Auction totaled $122,750, making a total for both the Silent and Live Auctions of $159,435. Ticket sales and the rag game would add an estimated $12,000. Measuring Cattle Feed Efficiency by Evan Rayl

In the May issue Livestock Plus, there was a report on the growing interest in feed efficiency among cattlemen as a profit determining tool, written by John Maday, Managing Editor of the Drovers CattleNetwork. It was followed, in the June-July issue Congratulations Rebecca Herzog! Mr. Weaber points out there are problems with all three feed efficiency measurement systems. Neospora Infections - Do you have carrier cows? What is Neospora? by Dr. Don Coover

Neosporosis is a fairly recently recognized coccidian parasite that is a major cause of abortion in cattle. First reported in New Mexico in a dairy herd in 1987, it is now considered a major problem and cause of abortions in dairy cattle, and can be just as big a problem in beef herds. One of the biggest problems with Neospora is that apparently healthy cows may have a chronic, lifelong infection, and this infection makes the cow several times more likely to abort a pregnancy. Just as important, cows that are infected will very likely pass the infection on to their calves, and the calves will be infected from birth. While not all cows chronically infected with Neosporosis will abort, they are, according to research, at a 3 to 7 times greater risk of abortion than Neospora negative, non-infected herd-mates. Those Neospora positive cows that do not abort have a high probability (80 to 90%) of producing calves that are congenitally infected with Neospora. It is a good idea to screen your cowherd for carrier animals, and to select against keeping Neospora positive animals. If you are involved in an ET operation, again, it is a good idea to screen your recips for Neospora infection. Remember, recips infected with Neospora will be more prone to late term abortions, and even if they do not abort, it is likely the ET calf born to them will be infected with Neospora at birth.

Why should I test my herd? Recently, we helped a producer blood test one of his herds for pregnancy status back in March of this year. Most of the cows in this herd were 90 days or more into gestation when tested. The producer took the 121 pregnant cows in the group, and moved them to a different pasture for the summer. He noticed a few cows showing estrus, and decided in late June to see how many had lost their pregnancies. He again pulled blood samples for us on all 121 cows, and we again tested all the cows for pregnancy status. Seven turned up open, a 6% pregnancy loss rate. After some discussion (ruling out other likely causes of pregnancy loss), he asked us to test the seven cows that lost the pregnancies for Neospora infection, and all 7 were seropositive, indicating they were all chronically infected. He then told us to test the other 114 cows in that group for Neospora infection, and only 6 more were seropositive, for a total of 13 Neospora positive cows out of 121 (an 11% infection rate). Seven out of 13 Neospora positive cows have aborted (or 54% of the Neospora positive cows) and none of the 108 Neospora negative cows have aborted. It is very important to note we were not able to examine any aborted fetuses to determine the cause of abortion, however, we strongly suspect Neosporosis. The above example illustrates one of the very best reasons for closely monitoring the reproductive status of your cowherd. Pregnant cows should maintain their pregnancy status, and present you with an on time, live, normal calf. A “higher than normal” pregnancy loss indicates some problem, and you and your veterinarian should investigate. Common herd health problems are animals that are persistently infected with BVD virus, and cows that are chronically infected with Neospora. In both cases, the animals appear normal, and both will cause abortion losses year after year. How do I test my herd? There are many new and emerging technologies that help producers maintain more efficient and profitable cowherds. Blood pregnancy tests are easy to use, accurate, inexpensive and convenient, and show which cows are pregnant and productive, and which cows are not. Tests for disease conditions, like persistently infected BVD and Neospora, can help producers cull those animals that will cost them money before they do further damage to their bottom line. These tests are, like the blood pregnancy test, inexpensive and convenient. Work with your veterinarian to develop a plan to monitor your herd’s reproductive health, to anticipate, detect and solve problems, and to educate yourself about what is available. So I finally got Dad to take me along to look at some calves in Eastern Iowa and Illinois! I usually hit a couple of shows in the fall, but I never seem to get time to just look at babies in the pasture, and that could be one of my favorite things to do!! Of course, my kids went along and also Joe Herr. The kids got an education and we hit some great places and saw some good cattle!!! Thank you to Deppe Brothers, Shane Ryan of Ryan Cattle Co, Bob Horsely of Horsely Brothers, Jeff Wisnefski, Lucas & Sydney of Cardinal Cattle Co., Toni Busser of Valley Creek Farm and Ross Butler of Marengo, Iowa. The kids rode on four wheelers, in the back of trucks and Taylor thought it was the best fun not having to get in a carseat when we were in the pastures. Wish we would have had a couple more days but we sure enjoyed our time with Dad/ Papa!! So the finality of the Iowa State Fair was brutal this year! Tucker was very sad to say the least. I guess I’m happy that he loves it so much!! Kinda reminds me of my good friend, Don Greiman, otherwise known as Grand Marshall or State Fair Ambassador. Don has that quality of being able to make anyone and everyone smile and feel like they belong. One of the kindest, most humble men that I have had the pleasure of knowing. Mr. Greiman has attended 47 straight years of the fair, not missing a day! To Tucker and myself that is one of the coolest things ever!!! On top of all of his honors he also has co-wrote a book “A Blue Ribbon Life” and it’s an Iowa State Fair Blue Ribbon Foundation Fundraiser! I’d bet that Don would be happy to autograph a book, too!
